CHOP Steakhouse Wine List The CHOP Steakhouse wine list features one of the most comprehensive collections of American wine in Tokyo, along with limited, hard-to-find cuvées from all over the world. The list’s hallmarks are wines that reflect the personality of the winemaker while expressing the terroir of where the vines are grown. In our search for wine made organically, biodynamically or naturally, with minimal intervention in the cellar and fermented with wild or ambient yeast (instead of cultured ones), we aim to highlight the abilities of the vigneron, the unique flavors of native grape varieties and local winemaking traditions. Organic wine is made from grapes grown in accordance with the principles of organic farming, which typically excludes the use of artificial fertilizers, pesticides, fungicides and herbicides. Biodynamics is a form of holistic farming that uses manure and compost to improve soil quality and the interaction of the vines with their environment. The father of the movement is widely regarded as Rudolf Steiner, who gave a series of agricultural lectures on the fundamentals of biodynamics in 1924. Natural wine is made with minimal chemical and technological intervention in the grape-growing process and produced without adding or removing anything during winemaking.
