They are typically Sangiovese (the main grape of Tuscany) with the addition of Cabernet Sauvignon, a French Import not allowed in the Chianti blend. However, a Super-Tuscan can be pretty much anything. It can take the form of a mono-varietal (e.g. Isole e Olena’s 100% Sangiovese “Cepparello” or Ornel- laia’s 100% Merlot “Massetto) or any blend of varietals (e.g. Antinori’s blends of Sangiovese and Cabernet “Tignanello” and Solaia). In the end, a Super-Tuscan is the true expression of a winemaker, not bound to any rigid tradition. Denomination: Chianti DOCG Grape varietal: Sangiovese 100% Soil: silt 50%, clay 35%, sand 15% Vinifcation and aging: After destemming the grapes underwent maceration for approximately 10 days in stainless steel tanks. During this phase, the wine completed alcoholic fermentation at a temperature not exceeding 25°C. The wine was then racked, and subsequently fnished malolactic fermentation by the end of winter.The wine was aged in steel, which allowed it to be bottled in spring Tasting notes: Ruby red in color the wine has a full and intense fragrance with hints of red fruit which bring to mind cherries and raspberries. On the palate the wine is smooth and well-balanced. The fnish is characterized by gentle tannins and the persistent favor of the grapes which make is so delicious and easy to drink. It is meant to be drunk young in order to appreciate its freshness and its bouquet. Serving suggestions: An excellent accompaniment for pasta, both white and red meat, and cheese. Serving temperature: 18° C Store at a constant temperature of circa 17C° away from light.

    OUR SUB-REGIONS CHIANTI AND CHIANTI CLASSICO DOCG OVERVIEW In 1716, the grand duke of Tuscany made a proclamation defining the zone of production for the best wines in his domain. The primary wine region he described was Chianti, at that time made in four towns south of his home base in Florence. Chianti was a well-respected wine long before that, and it has remained one of Italy's most recognizable labels for more than three centuries. But that's not to say it hasn't undergone some changes. If Grand Duke Cosimo III were to return today, he would recognize his Chianti as what is now Chianti Classico DOCG, a denomination comprising parts of nine communes but based primarily on the four towns he had named. But he would be surprised to see how big Chianti has grown, with a large swath of territory all around Chianti Classico that makes up Chianti DOCG. Chances are, too, that Cosimo would be pleasantly surprised at how much better the wines are these days. Chianti and Chianti Classico are two separate but forever-linked denominations that make similar wines. The wines were traditionally a blend of several grape varieties, both red and white. Nowadays, almost all are still blends, but they lean more heavily on Sangiovese than they once did, and white grapes are not a significant ingredient (Chianti DOCG still allows up to 10% white varieties). Chianti Classico is the original zone and has some of the best terroir (which is why it was the original zone). The area is relatively large, 30 miles long between the southern suburbs of Florence and the northern reaches of Siena and 1012 miles wide.
