Denomination: Chianti DOCG Grape varietal: Sangiovese 100% Soil: silt 50%, clay 35%, sand 15% Vinifcation and aging: After destemming the grapes underwent maceration for approximately 10 days in stainless steel tanks. During this phase, the wine completed alcoholic fermentation at a temperature not exceeding 25°C. The wine was then racked, and subsequently fnished malolactic fermentation by the end of winter.The wine was aged in steel, which allowed it to be bottled in spring Tasting notes: Ruby red in color the wine has a full and intense fragrance with hints of red fruit which bring to mind cherries and raspberries. On the palate the wine is smooth and well-balanced. The fnish is characterized by gentle tannins and the persistent favor of the grapes which make is so delicious and easy to drink. It is meant to be drunk young in order to appreciate its freshness and its bouquet. Serving suggestions: An excellent accompaniment for pasta, both white and red meat, and cheese. Serving temperature: 18° C Store at a constant temperature of circa 17C° away from light. On La Boncia land, the Etruscans (VI century B.C.) were already producing great wine, which they exported all over the known world. Today we dedicate our Chianti to this land, wonderful mother that produced great wines back then, produces them today and will produce them forever. Ligurian Wines Hemmed in between the Alps and Appenines which protect it from northern winds and the sea which ensures its mild climate, Liguria has few areas of level ground and has many short stream-like rivers. The patient, strenuous efforts made over many centuries have created a unique landscape with small plots of land maintained by dry-stone walling which were once cultivated with olive groves, lemon and orange orchards and vineyards, now largely replaced by greenhouses used for growing flowers and vegetables. The surviving vineyards, scattered far and wide, still produce numerous local wines even outside the most traditional areas and the zones considered most suitable for producing D.O.C. wines. One of the distinctive features of grape-growing and winemaking in Liguria is the part- time nature of the work by people who own small pieces of land split into small plots. Wineries would not be profitable so they are rare and almost inexistent. There are, however, remarkable cases of minute vineyards tended by passionately keen growers who, eager to achieve greater market success, have improved methods of cultivation and techniques to create high quality wines. The fragmented nature of the land under cultivation, the paucity of grapes (Ligurian wine represents 0.5% of Italian wine production) due to the nature of the terrain, the dry climate with occasional spells of drought, and arguably the individualistic character of Ligurians, have led to a vast range of products (85 types of wine have been identified) which stem from the excessive variety of grape varieties (about one hundred).

Italy’s country report Traditions and habits Alcoholic beverages have always been an integral part of the Italian conviviality and hospitality. In order to have a fair overview of the social aspect of alcohol it is important to keep into account the historical, cultural, economical and social issues related to it. The Italian culture, especially the southern one, typical of the Mediterranean populations, have always shown a positive attitude toward alcohol and this is proven by the large number of traditions, proverbs and myths. In some regions small amounts of wine, for example, are given to children as it is supposed to “make good blood”. It is true that small amounts of alcohol provide energy, stimulate appetite, reduce thrombosis risk and increase HDL (good cholesterol) thus protecting our cardiovascular system. Most of our celebrations begin and end with a toast, and alcoholic beverages are often wrongly considered as energetic, stimulating and warming from the cold weather. In the past, some spirits such as “grappa” (schnaps) was considered a prevention against malaria, and some people still believe that alcohol is a good support when undertaking heavy labour. These attitudes, however, have caused an underestimation of the risks of a wrong alcohol consumption or abuse in our country. In Italy, as in all the Mediterranean countries, wine is the most popular alcoholic drink and, in the Mediterranean diet, it is considered as a “food” to take with your meals. Until recent times ago farmers would start their day with a glass of red wine as a source of energy for the hard labour in the fields.

Tuscan Wine Dinner Heating Instructions & Recommended Pairings When unpacking the food, put everything but the Tuscan prosciutto, focaccia croutons, and pistachio crumbs in the refrigerator. Please also start chilling the two white wines. We recommend putting the Ribollita, Duck Ragu and Wild Boar out on the counter about an hour before cooking to bring them to room temperature. Winter Panzanella with Radicchio & Crispy Tuscan Prosciutto Suggested pairing: Ribellante Toss the panzanella with the focaccia croutons and vinaigrette. Season with salt and pepper, if desired. Garnish with crispy prosciutto. Ribollita Tuscan Soup with Cannellini Beans, Focaccia & Tomatoes Suggested pairing: Malvasia Place soup in a sauce pot/pan and warm over medium heat. Stir occasionally until the mixture comes to a simmer. Alternatively, heat in the microwave until hot. Finish with a drizzle of olive oil and sprinkle of parmesan. Pappardelle with Braised Duck Ragu, Rosemary & Parmesan Suggested pairing: Gabbriccio Bring a large pot of water to a raging boil on high heat. Add a generous amount of salt. Taste the water; it should taste seasoned. Meanwhile, warm sauce over medium heat in a saucepan. Separate the pappardelle pasta pieces, shaking off any extra semolina, and gently drop the pasta into the boiling water. Stir pasta with tongs so that it does not stick to the bottom. Boil for 2 minutes, or until al dente. Strain pasta, then add to saucepan. Stir in the parmesan and add a drizzle of olive oil. Use tongs to plate the pasta. Braised Wild Boar with Red Wine & Root Vegetables Suggested pairing: Cancellaia Keep braised wild boar and root vegetables covered with the provided lid and warm in a 350 degree oven for 35-40 minutes, or until it reaches an internal temperature of 160 degrees.

As one of the world's top industrial nations, Italy offers a unique marriage of past and present, tradition blended with modern technology -- as exemplified by the Banfi winery and vineyard estate in Montalcino. Italy is 760 miles long and approximately 100 miles wide (150 at its widest point), an area of 116,303 square miles -- the combined area of Georgia and Florida. It is subdivided into 20 regions, and inhabited by more than 60 million people. Italy's climate is temperate, as it is surrounded on three sides by the sea, and protected from icy northern winds by the majestic sweep of alpine ranges. Winters are fairly mild, and summers are pleasant and enjoyable. NORTHWESTERN ITALY The northwest sector of Italy includes the greater part of the arc of the Alps and Apennines, from which the land slopes toward the Po River. The area is divided into five regions: Valle d'Aosta, Piedmont, Liguria, Lombardy and Emilia-Romagna. Like the topography, soil and climate, the types of wine produced in these areas vary considerably from one region to another.
