Historically Makassar has always been a dominant trading centre of eastern Indonesia, with a prominent spice trade and fishing industry, in particular that of trepang, or sea cucumber. Makassar has several traditional foods. The most famous is Coto Makassar, which is a stew made from a mixture of nuts and spices with various beef parts. Konro ribs, a beef rib in soup, is also popular traditional food in Makassar. Both Coto Makassar and Konro are usually eaten with Burasa, which is thick rice with coconut milk and toasted coconut.
