GRAPE VARIETY 100% pinot noir de Bourgogne TERROIR & FARMING It comes from pinot noir vines planted on clay-limestone soils. Many years ago, we chose to take the ambitious high road of ecological transition involving a reduction in the use of chemical products, the recovery of biodiversity, the preservation of the soil’s potential and the management of resources, particularly water. In 2019, our wine-estates has achieved HVE3 certification, a High Environmental Value farming certificate. We are now converting in organic practices under Ecorcert. WINEMAKING We choose to harvest the grapes at night in order to help to concentrate the aromas, the flavors and to control the oxidation of fruits. A cold pre-fermented maceration of 72 hours at 6°C takes place and encourages the extraction of colours and tannins. Afterwards, the wine ferments during 18 days from 18°C to 25° C. The « pigeage » and « remontage » (pumping-over) are carried out twice daily in order to extract the colour, tannins and intense aromas... A portion of the wine is aged in stainless steel tanks and the other portion in oak barrels (from the local forests of Tronçais and Bertranges) for 9 months where it undergoes its malolactic fermentation. And great alternatives to Chardonnay do abound. The popularity of Sauvignon Blanc has surged over the past decade. While produced in many countries, it’s most famous and dis- tinctive if it comes from France or New Zea- land. The two countries’ styles are quite dif- ferent, but neither is aged in oak. In general, the greatest Sauvignon Blanc comes from a region near the French town of Sancerre (by which the wine is known) along the Loire River. Sancerre wines vary by producer but often are medium-bodied, crisp, and dry. They have slightly herbal, grassy, mineral, and gooseberry aromas and are quite acidic. When I see that nowadays there is never enough Fontsainte Gris de Gris to last until the next vintage, I remember back to the days when I could barely find customers for twenty-five cases a year. “Rosé? God no, not for me.” That was the attitude we had to overcome. Here the Sauvignon Blanc is grown on a mixture of soils, 60% is Clay-Limestone while 40% is planted on pure Limestone. All of these parcels are tended, harvested and vinified separately and the utmost care and respect for the environment is used in the growing process. Wine Making After being harvested, the grapes are sent to the winery. The pneumatic presses are filled with grapes and nitrogen to limit the oxidation of the grapes. After cold settling (8 °), minimum 48 hours, the musts ferment in thermo-regulated tanks. The fermentation time is about 40 days. The wines are raised on fine lees during the winter and then harvested in April. Bottling in April and May. This adds richness and complexity to the wine. Tasting Notes The white Sancerre has a gold color, a very expressive nose of citrus fruits. It will fill you with its mineral expressions, its finesse and its freshness. Finally, your palate will be filled with fruity, citrus flavors, while preserving a typical roundness of its very marked soil. I accompanies Seafood but also raw vegetables, salads, cold cuts and cheese. As an aperitif, it can be accompanied by terrine, fowl or even a round of Chavignol cheese as is the tradition in Sancerre.     DOMAINE PAUL CHERRIER Sancerre Domaine Paul Cherrier is located in the tiny, picturesque village of Verdigny, just northwest of the town of Sancerre. Current proprietor and vigneron, Stéphane Cherrier farms a scaterring of hilltop parcels planted on rocky Kimmeridgian limestone – that ancient ocean bed that underpins the Grand Cru vineyards of Chablis, the hillsides of the Pays d’Aube, and the (predominantly western) portion of Sancerre. This terroir produces wines of incredible length, purity, and minerality. The amount of clay in the soils varies by parcel and elevation, providing Stéphane with richer, fruitier Sauvignon Blanc as well as fruit that is more linear and mineral. Stéphane currently farms 13 hectares. Ten of those are planted to Sauvignon Blanc and three are planted to Pinot Noir. For the first few ORIGIN years of his career, he had been selling off most of his wine to be bottled France under the name of more famous winemakers. Now he is steadily growing his own label, Domaine Paul Cherrier, selecting the best tanks and vats to APPELLATION be bottled at the estate. There is virtually no manipulation to the wines and Sancerre Stéphane strongly prefers Sauvignon that is aged in tank and large barrels over that aged in barrique. Although he is used to heavy hitting on the SOIL Kimmeridgian limestone, clay limestone rugby field (one of his real passions), his wines are delicate, defined, and very precise. We are proud to represent this young star-in-the-making.
