DOMAINE VACHERON Sancerre Blanc 'Les Romains' Wine Facts DOMAINE VACHERON Sancerre Blanc ‘Les Romains’ The Vacherons without question are Sancerre’s leading winemaking clan. From the family’s pioneering work in identifying and exploring the region’s top terroirs to their leading position in biodynamic viticulture, there are few if any artisans today in Sancerre as exacting or as respected. The estate’s peerless older vines, planted and cultivated by generations of family members, are cared for fastidiously. Yet it is the their single- vineyard wines, like ‘Les Romains’—terroir-based selections recalling the painstaking work of Burgundian monks in the Côte d’Or—that have shown the world the heights and complexity that Sancerre can reach. A full south-facing vineyard. ‘Les Romains’ was one of the domaine’s first ‘single-vineyard’ bottlings (the first vintage was 1997). AGE OF VINES: 40+ years WINEMAKING: Hand-harvested. Fermented on indigenous yeasts and aged in older French barrique. Bottled unfined and unfiltered. TASTING IMPRESSIONS: Aromas of crisp pears, lemon zest, wildflowers. Stone fruit and citrus, with a finish that echoes the terroir’s smoke and sea- salt notes. Complex and very age-worthy.     NOTICE EXPLICATIVE INTRODUCTION La région représentée sur la feuille Léré au 1/50 000 est presque entièrement située dans le département du Cher, quelques communes seulement, au Nord de la carte, étant rattachées au Loiret. Elle fait partie du Sud du Bassin parisien, entre la Sologne au NW et la vallée de la Loire à l'Est et se divise en plusieurs secteurs morphologiquement contrastés : — A l'Est, la plaine alluviale de la Loire avec les coteaux qui la dominent. Cette zone limitée à l'Ouest par la faille de Sancerre est une partie du fossé d'effondrement de la Loire. — Au delà de cet accident nord-sud, le compartiment occidental offre à l'étude une série de dépôts s'enfonçant régulièrement en direction du Nord-Ouest. a — Le Jurassique supérieur des collines du Sancerrois découpé par des vallons aux pentes accusées. Les marnes du Kimméridgien comprises entre deux niveaux calcaires y constituent un talus nette­ ment individualisé au milieu de plateaux secs et caillouteux. C'est le domaine du plant de Sauvignon qui produit les vins de Sancerre. b — Au delà, en direction de Vailly, le Crétacé inférieur argilo- sableux correspond à un paysage bocager plus humide : c'est la continuation de la Puisaye. c — Cette zone faiblement ondulée est couronnée par le ressaut de la craie cénomanienne puis par celui, beaucoup plus accusé, de l'Argile à silex. Cette formation correspond, à l'Ouest de la feuille, à une ligne continue de hauteurs peu fertiles et presque entièrement boisées. - 2 - A part la Loire qui ne fait que l'effleurer, la feuille Léré est traversée par divers cours d'eau.

Florent Bourgeois’ tiny estate of 24 acres is based in Saint-Satur, the closest village of the appellation to the Loire River. Also called the port of Sancerre it benefits from the microclimate of the river providing optimum ripeness potential. The 4 only growers based in this single south-facing hillside are blessed with a unique Terroir rich in Flint. Long considered too hard to grow vines, this tiny portion of the Terroir of Sancerre (12%) is now a fascination for most of the growers, who, when they have the chance to own a parcel on this soil, don’t hesitate to bottle it separately to make their top cuvée. The thick stony layer on top of the vine has the ability to store the heat of the day and deliver it back throughout the night, this element, combined with the microclimate from the river, provide the very best maturity potential. If you want to know what minerality the flint bring to the wine just do what the prehistorical folks were doing, hit two rocks against eachother and you’ll smell this characteristic gun powder smell that the wine deliver.     Domaine francois millet sancerre loire Story Bernard and Pierre Millet created the Domaine in the 1930’s. Initially, the estate consisted of a farm with vineyards, crops and animals such as cows and goats. Bernard and Pierre realized the soils were perfectly adapted to vine- growing and decided to start making wine. François and Monique (2nd generation) took over the estate in 1980 and continued the e!orts of Pierre and Bernard by extending the estate to 21 hectares of vines planted with Sauvignon Blanc and Pinot Noir. A few years ago, their son Nicolas joined the family estate. To protect the environment, the soils are worked sustainably to control weeds and reveal the potential of their terroirs. Grape variety 100% Sauvignon Blanc Terroir Calcareous terroir from the Oxfordian era (165M years ago), very stony. The soils are made of clay and limestone with important clay rates. There are some mounds of pebbles that are fossils dating back 150M years . This terroir is called « white land », which stands for the white color of the soil when it drys out after the rain. Average age of the vines of : 10-45 years old Winemaking Manual harvest early in the day. Use of a pneumatic press to preserve the quality. The must flows by gravity in stainless steel tank with low temperature (8°C) to be settled. Alcoholic fermentation at controlled temperature starting at 12°C and finishing at 20°C in stainless steel vats. The wine is then aged on its lees during 4 to 6 months in these vats to preserve oxydation.

GRAPE VARIETY 100% pinot noir de Bourgogne TERROIR & FARMING It comes from pinot noir vines planted on clay-limestone soils. Many years ago, we chose to take the ambitious high road of ecological transition involving a reduction in the use of chemical products, the recovery of biodiversity, the preservation of the soil’s potential and the management of resources, particularly water. In 2019, our wine-estates has achieved HVE3 certification, a High Environmental Value farming certificate. We are now converting in organic practices under Ecorcert. WINEMAKING We choose to harvest the grapes at night in order to help to concentrate the aromas, the flavors and to control the oxidation of fruits. A cold pre-fermented maceration of 72 hours at 6°C takes place and encourages the extraction of colours and tannins. Afterwards, the wine ferments during 18 days from 18°C to 25° C. The « pigeage » and « remontage » (pumping-over) are carried out twice daily in order to extract the colour, tannins and intense aromas... A portion of the wine is aged in stainless steel tanks and the other portion in oak barrels (from the local forests of Tronçais and Bertranges) for 9 months where it undergoes its malolactic fermentation. While produced in many countries, it’s most famous and dis- tinctive if it comes from France or New Zea- land. The two countries’ styles are quite dif- ferent, but neither is aged in oak. In general, the greatest Sauvignon Blanc comes from a region near the French town of Sancerre (by which the wine is known) along the Loire River. Sancerre wines vary by producer but often are medium-bodied, crisp, and dry. They have slightly herbal, grassy, mineral, and gooseberry aromas and are quite acidic.
