Domaine francois millet

Story

Bernard and Pierre Millet created the Domaine in the 1930’s. Initially, the estate consisted of a farm with vineyards, crops and animals such as cows and goats. Bernard and Pierre realized the soils were perfectly adapted to vine- growing and decided to start making wine. François and Monique (2nd generation) took over the estate in 1980 and continued the e!orts of Pierre and Bernard by extending the estate to 21 hectares of vines planted with and Pinot Noir. A few years ago, their son Nicolas joined the family estate. To protect the environment, the soils are worked sustainably to control weeds and reveal the potential of their terroirs.

Terroir

Calcareous terroir from the Oxfordian era (165M years ago), very

stony. The soils are made of clay and limestone with important clay rates. There are some mounds of pebbles that are fossils dating back 150M years . This terroir is called « white land », which stands for the white color of the soil when it drys out after the rain. Average age of the vines of : 10-45 years old

Winemaking

Manual harvest early in the day. Use of a pneumatic press to

preserve the quality. The must flows by gravity in stainless steel tank with low temperature (8°C) to be settled. Alcoholic fermentation at controlled temperature starting at 12°C and finishing at 20°C in stainless steel vats. The wine is then aged on its lees during 4 to 6 months in these vats to preserve oxydation. Filtration with keiselghur

and bottling in the cellar 2 months before release.

Ta s t i n g notes

Color : pale yellow gold.

Bouquet : Intense and complex. Mineral and light flint notes with ripe fruit aromas like plum, peach and citrus fruit. Ta s t e : Supple and round wine with nice mineral finish.
