Caprese Stuffed Avocado 1/2 cup grape or cherry tomatoes, halved 4 oz. baby mozzarella balls 2 tablespoons basil pesto homemade or store bought 1 teaspoon minced garlic 1/4 cup olive oil Salt and pepper to season 2 ripe avocados peeled, seeded and halved Fresh basil leaves to serve (optional) 2 tablespoons balsamic glaze reduction to drizzle 2 tablespoons fresh basil chopped Instructions 1. Combine tomatoes, mozzarella balls, pesto, garlic, olive oil, salt and pepper in a bowl. Toss well to evenly combine all of the flavors. 2. Arrange prepared avocado halves onto a plate with fresh basil leaves. 3. Spoon the Caprese filling into each avocado halve and drizzle with balsamic glaze. Top with chopped fresh basil. Kerstetter; Long jump – Angelina NATIONAL HISTORY BEE Feliciano; Boys 4x800; 1600 – Quenton Long; 310 High Hurdles – Carson Brubaker; 3200 – Quenton Long; Boys Mifflinburg Middle School was 4x400; High Jump – Ben Chambers. represented well on Friday, April 20, in Moorestown, New Jersey at the Baseball: Regional Finals of the ACE National The Wildcat Boys demolished Midd-West with a 17-1 History Bee. Wednesday April 18 till Saturday April 21st. Members in attendance included Kellen Beck, Harrison Abram, Josh Hauck, Ethan Dreese, and Bryant Groff. Win or lose, they represented us well with their hard work and outstanding behavior. Result highlights include: Junior Solar Sprint, 5th Place, with the team of Kellen, Harrison, Josh, and Ethan; Flight, 6th Place, Josh Hauck; Technology Bowl, 8th Place, with the team of Kellen, Harrison, and Josh. 4 Mifflinburg Area School District April 23, 2018 SPRING INTO FITNESS CHALLENGE RESULTS The Spring Into Fitness Challenge results have been tallied, and the High School finished in 1st Place with a total of 42,174 minutes! That’s a lot of exercise! Congratulations to all 35 completers throughout the District who achieved the target goal of 900 minutes of exercise. All completers will be receiving a Wildcat Hand Towel. The 11 completers from the High School will be receiving a luncheon from D.C. Coffee. Some noteworthy statistics from the Challenge included an average total of 4,000 minutes exercised per completer from the Intermediate School. The Intermediate School also had an average of 533 minutes of exercise completed per staff member who participated. The Administrative Building had the highest percentage of completers at 27.3%. A random drawing of all completers of the challenge throughout the District was conducted with the following staff members receiving a prize: Ralph Moyer, Lori Rodichok, Sarah Effross, Brittany Earlston, Olesya Siewers, Karen Musser, Tanya Middle School Students of the Month were: Taylor Grenoble, Beth Faunce, Emil Fredrick, Noah Rodichok and Hannah Opdyke!
