Shrimp – Tomato – Avocado Salad Ingredients

 2 tablespoons avocado oil or coconut oil  1 pound peeled and deveined raw medium shrimp, patted dry  Salt and freshly ground black pepper  3 cloves garlic, minced (about 1 Tbsp.)  1 teaspoon lemon zest, plus 2 Tbsp. fresh lemon juice  1 teaspoon Dijon mustard  1/2 teaspoon raw honey  3 tablespoons extra-virgin olive oil  2 cups cherry tomatoes (about 12 oz.), halved  1/2 English cucumber (about 5 oz.), chopped  2 tablespoons chopped fresh fat-leaf parsley  2 teaspoons chopped fresh tarragon  1 teaspoon fresh thyme leaves  1 medium ripe avocado, chopped  12-16 whole Bibb lettuce leaves How to Make It

Step 1 Heat avocado oil in a large skillet over medium heat. Add shrimp; sprinkle with salt and pepper. Sauté for 2 minutes. Add garlic and cook, tossing, until shrimp are opaque and light pink and no gray tone remains, 1 to 3 minutes. Transfer shrimp mixture to a medium bowl.

Step 2 Whisk lemon zest, lemon juice, mustard, and honey in a large bowl. Add olive oil in a slow, steady stream, whisking constantly. Whisk in ½ teaspoon salt and ¼ teaspoon pepper. Fold tomatoes, cucumber, and herbs into dressing, then fold in avocado and shrimp.

Step 3 Divide lettuce among 4 plates. Spoon shrimp mixture evenly over lettuce. Sprinkle with pepper.

The first annual STEM Night was held April 25, 2018, and it was a success! Approximately 100 K-5 students participated in the STEM activities offered by various Mifflinburg teachers, SUN Tech Faculty and Bucknell students.

Teachers who created activities were Emil Stenger, David Sunderland, and Jennifer Haines from the High School, Melissa Roberts, Mario Tombasco, and Lucas Southerton from the Middle School, and Heather Heggenstaller and Katrina Mitchell from the Elementary School. Thanks to all who made this event possible!

PACK YOUR BAGS, THEY’RE HEADED TO STATES! Congratulations to Mifflinburg's State SkillsUSA winners: 1st place, Esthetics - Sydney Davis; 1st place, Job Skill Open - Cinnamon Digan; 1st place, Welding - Noah Romig! First place winners will go on to the SkillsUSA National Competition in Louisville, KY, June 25 - 29.

Track and Field Recap Congratulations to Noah Mifflinburg dominated over Montoursville with the girls Romig of SUN Area winning, 91 – 59 and the boys winning 88-62. Jillian Miller Technical Institute who won the 400 and Audrey MacPherson won the 1600 and participated in a recent 3200. Eric Zimmerman took first in the 100 and 200. contest sponsored by the At the Lock Haven Invitational, Mifflinburg Boys, Caleb American Welding Society Reimer, Eric Zimmerman, Chris Day and Tyler which was held at Penn Bailey won the 4x400 relay and Quenton Long, Wyatt College. Noah took 2nd Ebersole, Chris Day and Tyler Bailey won the 4x800 relay. Place in the contest. Jillian Miller placed second in the 800.

Highlights from the Courts

The Mifflinburg Boys’ Tennis Team defeated Milton, 3-2. In singles, Nolan Beck won his matches, 6-1 and 6-0, and Tom Lichtel won his matches, 6-4 and 6-2. In doubles, Ben Haines and McClenason Wagner defeated Milton with a three set win, 6-7 (7-5), 6-4 and 6-4. Mifflinburg took a win against Jersey Shore on the court last week, 3-2. Nolan Beck (6-2, 6-1), Brahm Buoy (6-1, 7-5) and Tom Lichtel (6-2, 6-3) were victorious in all of their matches which helped pull off this win!

The Mifflinburg team defeated Central Columbia with a 15-3 victory in only six innings. Camryn Murray hit a two-run homer in the fifth inning and had 3 RBIs. Heidi McNalley was 2-for-4 with a double and two RBIs and Libby Whittaker was 2-for-4 with a double and a RBI. Libby Whittaker was also the Winning Pitcher of the game. The Softball team also took a win to start the Williamsport Softball Tournament over Upper Dauphin, 10- 6. Vanessa Martin was the Winning Pitcher of the game. Martin was also 2-for-3 and had a triple. Libby Whittaker scored three runs and had two walks. Jaden Keister was 3-for-4 with two RBIs, and Vanessa Boop was 3-for-4 with three runs scored and three RBIs. Mifflinburg Girls took the win over Williamsport, 8-5, in the Williamsport Softball Tournament. Mifflinburg was the only team to go 2-0 in the Tournament. Vanessa Martin was 2-for-5 with two runs and 2 RBIs. Vanessa Boop was 2-for-3 with a RBI, and Hailey Foresman was 2- for-4 with a run and a RBI. Congratulations girls!

GETTING TO KNOW YOU. . . WITH MS. RHODA BENNETT

I had the wonderful opportunity to sit down for an interview with this adorable little lady who has worked for the Mifflinburg Area School District for forty-eight years! She started out in the Dish Room at the old Elementary School, then moved up to Baker, and then she got the Head Cook position, and has been in that role ever since. Throughout Ms. Bennett’s years in the District, she has seen so many things and has had interaction with so many students and staff, but what she liked best about working here. . . the kids (she referred to them as her sweetie pies) and the many good, working women. She also indicated that Lois Roth is one of her best bosses ever. Together, we did some math and estimated that during her tenure, she has prepared over 3 million meals for students and staff! Ms. Bennett is planning to retire at the end of this school year which is a loss to the students and staff of the MASD. Read excerpts from my interview with her below including some of her most memorable moments, and see how she will be spending her free time after retirement.

JJ: Do you have a favorite meal to prepare? RB: “The favorite meal that the kids like is the potato bowl. The favorite meal that I like to prepare is the turkey dinner with stuffing and mashed potatoes and gravy.”

JJ: What is your favorite meal to eat? RB: “My favorite meal to eat is the Liver and Onions at the Turnpike Restaurant. My favorite meal at the school is definitely the turkey dinner with stuffing, mashed potatoes and gravy.”

JJ: How do you feel when kids complain about the food options or a meal you have prepared? RB: “I tell them that I don’t make the menu. You have to learn to eat everything.”

JJ: What were some of your biggest challenges while working here? RB: “The ordering. I order the bread, milk, produce. . . all the groceries. It could be stressful because you always wanted to make sure that you have enough food available and don’t run out.”

JJ: With an increase in food allergies in children these days, how has that changed the way you did your job with needing to prepare certain meals free of certain allergens for different children? RB: “I would track the different kids and write it all down. I didn’t want any kids to get sick. Some can’t have any dairy, milk or cheese, and some can’t have peanut butter. It was always a worry. We also would have to wash and sanitize certain tables where children with peanut allergies would sit. We even used to puree foods for certain children.”

JJ: What do you like to do outside of work, and what are plans for your retirement? RB: “Flower planting in my yard. I do volunteer work at my church and plan to do some community projects.

Lastly, I asked Ms. Bennett what some of her most memorable moments have been while she has been employed here at the School District. She giggled, and definitely had a few entertaining stories to share. The first was back when Dr. Natter was the Superintendent. She said that she had baked a cake, and Dr. Natter came into the kitchen and cut a big piece out of the middle of her cake. She said she was shocked, but Dr. Natter was the big boss, so she let it go.

Next, she told me a story about a time that Mr. Tom Caruso came down to the school and ate lunch with the kids. She said he told the table of kids he was sitting with, “. . .everyone, pick up your fork. Now, do what I am doing (which was putting a bunch of green beans on his fork), and put it to your mouths. Now, try them (as he ate a big forkful of green beans). She said the kids all followed him and ate the green beans.

And one of her fondest memorable moments while working here was the year that Mr. Church was named Teacher of the Year! She indicated that he is so wonderful with the kids, she adores him, and he is one of her favorites!
