Ingredients • 1 pound boneless skinless chicken breasts, chopped • 1 each medium green, sweet red and yellow peppers, chopped • 1 medium onion, chopped • 2 tablespoons olive oil • 4 cups chicken broth • 2 cups frozen corn • 1 cup uncooked brown rice • 1 can (10 ounces) green enchilada sauce • 1 can (4 ounces) chopped green chilies • 1/4 teaspoon salt • 1 cup shredded Mexican cheese blend • 1 cup sour cream • Tortilla chips and minced fresh chives, optional Directions 1. In a Dutch oven over medium-high heat, cook and stir the chicken, peppers and onion in oil until vegetables are crisp-tender. Stir in the water, corn, rice, enchilada sauce, chilies and salt. Bring to a boil. Reduce heat; cover and simmer until rice is tender, 35-40 minutes. 2. Remove from the heat. Stir in cheese and sour cream until cheese is melted. The Mifflinburg Area School District’s Health & Wellness Committee is hosting a soup recipe contest! This contest is open to both staff and students. The time to submit your recipe begins today and ends on Friday, January 31, 2020. The winner and their winning recipe will be featured in an upcoming Good News Bulletin, and the winning recipe will be featured in an upcoming school lunch. To participate: Please email your recipe to [email protected]. The specifications to participate require the following: name of individual submitting the recipe, name of the recipe including the ingredients list, instructions for preparation, grade level if you are a student, and a picture of the completed soup recipe. The winning recipe will be required to meet the Federal School Lunch nutrition standards. Your recipe should be lower in fat and sodium and higher in nutrition incorporating vegetables into your soup. Soups may include chicken or ground beef. No cream soup submissions will be considered. Keep up the good work! the good work! 2019 Fall Into Fitness Challenge Stats The Daily Item Names Once again, congratulations to Team Run Track Minds for being the Girls’ Soccer All-Stars winners of this year’s Fall Into Fitness Challenge. The members of that team will be enjoying a Panera luncheon this Friday, January 10, 2020. Congratulations to Peyton This was the first time using a team approach for the challenge, and it was Yocum for being named to met with great team comradery and some of the highest exercise minutes we’ve seen submitted over the years! Gift cards were awarded to 16 the First Team All-Stars for completers, and each week a prize was awarded to a randomly selected completer from that week. In total, we had 80 participants and 16 teams Girls’ Soccer! Delaney competing which is our highest number of participants to date!     The Pennsylvania Basic Education/Higher Education Science and Technology Partnership 2011-2012 Annual Service Report Executive Summary The year 2011 brought financial hardship for Science In Motion (SIM) in its role as the premier high school science education outreach program for the Commonwealth. Once again, Pennsylvania’s current economic status resulted in budget reductions and funding delays, which forced many of the SIM Consortium sites to reduce service areas or delay service to schools for several months. Despite the Commonwealth’s economic hardships, Science In Motion sustained bipartisan support by members of the Pennsylvania General Assembly. Faced with an overall 10% cut to an award that had been cut by 63% the previous fiscal year, Science In Motion was still able to provide hands-on inquiry-based experiences to the schools we serve. All Science In Motion sites eventually opened and resumed service to their schools, despite the financial challenges. As a whole, the average number of months of operation for SIM sites was 8.3 this school year; however the majority were open less than 8 months. Our science education specialists (mobile educators) from the twelve colleges and universities presented over 3,078 hands-on laboratory experiences to 312 different schools. The program also provided an additional 8,256 drop-off laboratory kits for short term loan and offered 28 days of professional development workshop opportunities for teachers. Overall, Science In Motion provided 713 different teachers with 1,050 different labs creating 208,328 student experiences during the 2011- 2012 school year. What is Science In Motion? Most Pennsylvania high schools cannot afford the modern, well-maintained equipment that it takes to prepare students for today’s hi-tech careers in science, engineering and other technical fields.
