Soba Bowls Serves 1-2 depending on how hungry you are! Prep time: 10-15 minutes Cook time: 10 minutes

INGREDIENTS: Shrimp and Marinade:  1/4 C or coconut amnios  2 TBSP seasoned rice vinegar  2 tsp brown sugar  2 TBSP olive oil  1 tsp sesame oil  3 cloves garlic, minced or grated  1 TBSP grated ginger  1 lb 16-20 count shrimp, peeled and deveined (tail on or off based on preference)  1 TBSP canola oil or other high-smoke point cooking oil  3 green onions, cleaned and sliced on the bias

Soba Noodle Bowl:  Soba (about 1 inch in diameter bunch – 1 cup cooked)  1 Large Carrot, peeled and spiralized or julienned  1 Medium Crown of Broccoli (cut into florets)  2 Green Onions (Sliced)  1/2 of an Avocado (sliced)  Sesame seeds for

For the Sauce:  2 tablespoons of Tamari (Soy Sauce or Coconut Liquid Aminos can be substituted)  1/2 teaspoon of Sriracha Sauce (Optional)  1/2 teaspoon of Toasted Sesame Oil  1/2 teaspoon of Dijon Mustard (or spicy mustard)  1/2 tablespoon of Pure Maple Grade A Syrup (Honey or Agave Nectar and be substituted)  1/2 tablespoon of Tahini  1 clove of Garlic (minced fine)  1/3 inch of Ginger (minced fine/about 1/2 teaspoon)

Shrimp Soba Noodle Bowls DIRECTIONS:

1. Marinate the shrimp: In a medium bowl, whisk together the soy sauce, seasoned rice vinegar, and brown sugar until the sugar has dissolved. Then whisk in the olive oil, sesame oil, minced garlic, and grated ginger. Place the shrimp in the bowl with the marinade. Toss to coat with the marinade and chill until ready to cook. 2. Put a medium pan of water on to boil. 3. Produce Prep: Julienne or spiralize carrot. Peel and prep broccoli, cutting into even florets. Cut green onion on bias. Slice avocado. 4. Heat large, non-stick skillet. Toast sesame seeds and set aside. 5. Once water has come to a boil, add carrots and broccoli. Blanch vegetables for 2-3 minutes; remove with slotted spoon and set aside. Add Soba noodles and cook for 4 minutes, or until done. 6. Stir-fry shrimp and green onions: Heat cooking oil in a large non-stick sauté pan or wok (can use seasoned cast iron) on high heat. When the oil is shimmering hot, almost smoking, use a slotted spoon to move the shrimp from the marinade into the hot pan. (Watch out, it will splatter.) Stir- fry for a minute. 7. Add half of the sliced green onions. Continue to stir fry, turning the individual shrimp over if necessary, until the shrimp are pink and just cooked through. No more than 2 minutes max total cooking time, a minute on each side. Remove shrimp from heat and set aside. 8. Assemble your bowl: arrange soba noodles, avocado, carrot, broccoli, and shrimp in medium-large sized bowl. Pour sauce over top, and sprinkle green onions and toasted sesame seeds. Enjoy!
