If you don’t think of seafood when you think of Ireland, you don’t know Ireland! These two favorite recipes, from County Donegal, are sure to make your St. Patrick’s Day special. We splurge on good Irish butter for both, and suggest you do too. Creamy Mussel Soup Scallops with Mushrooms 2 cups dry white wine 2 pounds unpeeled russet potatoes 8 tablespoons chopped shallots 1 cup whole milk, 2 egg yolks, and 1 clove garlic, smashed 3 tablespoons butter 8 parsley sprigs, 1 bay leaf, and 1/2 12 sea scallops teaspoon fresh thyme leaves Dry white wine, and water Pinch of saffron 11/4 cups half and half 1/4 teaspoon ground white pepper 2 tablespoons butter 8-10 pounds mussels, scrubbed 3/4 cup chopped shallots 5 tablespoons butter 2 cups sliced mushrooms 1/2 cup flour 3 tablespoons flour 31/2 cups whole milk Sea salt and ground white pepper Heavy cream 3/4 cup grated aged cheddar cheese Sea salt 2 tablespoons chopped fresh parsley Croutons and chopped fresh Boil the potatoes in well-salted water parsley for garnish until easily pierced with a knife.
