Large industrial manufacturers, high-end or large bakery chains, retail outlets and luxury hotels make fancy baked products to satisfy demand for high quality mostly from middle to high income urban families and well educated young generation. This presents ample opportunities for a wide range of U.S. baking ingredients including wheat, dairy products, dried fruit, nuts, fruit puree, fillings and even colorings. However, limited knowledge, lack of new recipes and low awareness, together with higher prices compared to Chinese ingredients, challenge penetration of U.S. ingredients. Partnerships with the Chinese industry mutually benefits both the Chinese industry and U.S. exports, and marketing efforts need to greater integrate education and training, technical assistance, recipe development and in-store promotion to encourage use. The restaurant will feature Chifa favorites–the cuisine known throughout Peru, melding Chinese style and native ingredients–with his personal and creative take on Chinese classics and this South American style. José is no stranger to weaving cultures together in a dynamic dining experience, he is well known for his interpretation of Chinese and Mexican food, culture and traditions at his award-winning restaurant China Poblano at The Cosmopolitan of Las Vegas. At this new location, José and his talented culinary team will create authentic, yet innovative dishes inspired by their research and development trips to Asia and most recently to Peru, that have helped them master the various skills and techniques of this rising world cuisine. Highlighting the rich flavors, bold colors, diverse textures and unique aromas, the menu will apply time-honored Chinese techniques to Peruvian ingredients. The history of Chinese cuisine in China stretches back for thousands of years and has changed from period to period and in each region according to climate, imperial fashions, and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese people due both to imperial expansion and from the trade with nearby regions in pre-modern times, and from Europe and the New World in the modern period. In addition, dairy is rarely—if ever—used in any recipes in the style. The "Eight Culinary Cuisines" of China[1] are Anhui, Cantonese, Fujian, Hunan, Jiangsu, Shandong, Sichuan, and Zhejiang cuisines.[2] The staple foods of Chinese cooking include rice, noodles, vegetables, and sauces and seasonings.

  • Impact of Processing Conditions on the Milk Clotting Activity of Crude Protease Extracted from Chinese Ginger
2011 International Conference on Food Engineering and Biotechnology IPCBEE vol.9 (2011) © (2011)IACSIT Press, Singapoore Impact of Processing Conditions on the Milk Clotting Activity of Crude Protease Extracted from Chinese Ginger + Malik Muhammad Hashim 1, Muhammad Farooq Iqbal 2, Chen Xiaohong 1and Dong Mingsheng 1 1 College of Food Science and Technology, Nanjing Agricultural University, Nanjing 210095, China 2 Faculty of Veterinary and Animal Sciences, Arid Agricultural University, Rawalpindi, Pakistan Abstract. The impact of three processing parameters namely homogenization time, pH of buffer, and amount of buffer, involved in the liquid extraction of proteinases from ginger rhizomes, was investigated on milk coagulating activity by response surface methodology. An empirical quadratic model was applied to experimental data pertaining to the average enzymatic activity and equation describing the optimal conditions was obtained. The maximum milk clotting activity (274 U/mL) was obtained by homogenizing the ginger rhizomes in 76 mL of extraction buffer with a pH of 7.0 for 2.4 min. No significant (p > 0.05) difference was observed between the experimental and predicted values. These results are useful in the optimization of extraction procedures, which are of significant relevance to the production of standardized plant coagulants suitable for the cheese industry. Keywords: Ginger protease, Plant coagulant, Response surface methodology 1. Introduction Proteolytic enzymes or proteases are very important industrial enzymes, accounting for nearly 60% of the total worldwide enzyme production [1]. Plant-derived proteases such as papain, bromelain, ficin, and calotropins have potential application in food and biotechnological industries due to their broad substrate specificity, high stability in extreme conditions, good solubility and activity over a wide range of pH and temperature.
