Our list stems from the emotions wines transmitted to us during trips, tastings, and meetings with producers. We think that grapes and wines should represent the territory they come from. The producers’ ethics, often small producers, must resonate with our own ethics and values. Ideally, we would want our list to be able to satisfy all - or almost all - tastes and pockets, while never disregarding quality. We think it’s definitely possible to drink well while spending less. Thanks to these wines, we would love to take you on a journey through the places they are produced in, as to share with you the mastery and the history behind each and every one of them. You will find a focus on wines coming from the region of Apulia. That’s because they tell the story at the foundation of our Restaurant’s cuisine and so we think it’s worth giving them the space they deserve. This is a wine made with certified organically grown grapes using a small amount (100 ppm) of added sulfites as a preservative. Biodynamic Biodynamic farming uses a holistic approach to agriculture which focuses on supporting the health of the entire ecosystem of the vineyards considering the soil beneath them a living organism. Crops are often planted, pruned and harvested according to lunar cycles. Certified biodynamic wines may contain sulfites up to 100 ppm. Sustainable Winemakers may use all or some organic farming practices, but do not adhere to a specific philosophy certification. Winemakers may, because of extreme weather or other environmental factors, use non-organic treatment to help a particularly difficult vintage. At minimum, winemakers using sustainable farming practices, hold the idea of respecting the environment at the forefront of their process. Hints of green apple, notes of elderflower, citrus notes that makes it more appealing 125 Ferrari Brut - TRENTO $68 100% Chardonnay. 24 months in bottle with selected yeast. Fine and persistent perlage. Fresh and intense, with a broad fruity notes of apples and wild flowers, underpinned by a delicate bread crust flavor 5 BOLLICINE ROSÈ / ROSÈ SPARKLING WINE 160 Lambrusco Grasparossa di Castelvetro Amabile Centenario 2017, Cleto Chiarli $50 100% Lambrusco Grasparossa. Ruby-red froth, very fruity, its smoothness makes it a pleasant choice. Captivating. 165 "Trentasei" Lambrusco di Modena DOC, Brut Metodo Classico 2012, Cantine della Volta - EMILIA ROMAGNA $65 6 months in steel tanks, 36 months in bottle on selected yeasts. Red ruby color, with notes of sour cherry, raspberry and rose. Unique texture. Modernity and past merge in this Gem while you'll fall in love with it. 175 For England Brut Rosé 2011, Contratto - PIEMONTE $85 100% Pinot Noir. 32 months on lees in bottle, nicely dry, red fruits and a color that just hits at rosé. Lovely acidity, complexity. 155 Champagne Canard Duchêne Brut Leonie Rosè, CHAMPAGNE $98 45% Chardonnay, 35% P. Noir, 20% P.Meunier. If one word alone could describe this wine, it would be elegance. Full, fresh and flavorsome. Fleshy and lingers. SUD TIROLO - ALTO ADIGE 200 Muller Thurgau GRAUN 2014 Sud Tirolo Alto Adige - Cantina Kurtatsch $58 100% Muller Thurgau. It is both spicy and lively. Acidity is harmoniously interwoven with fruitiness, yellow peaches, honey. 308 Pinot Grigio Unterebner 2018 - Cantina Tramin $70 100% Pinot Grigio, 15 months of maturation, wood, steel and bottle. Notes of pear and hay, toasted bread and melted butter. Rounded and dense taste, vanilla, mineral and long -asting finish. 202 Manna 2015 – Franz Haas, SUD TIROLO A.A. $84 Riesling, Chardonnay, Gewürztraminer, Kerner, Sauvignon. Stainless steel aged for 10 months and further 6 months in bottle. Notes of eldelflower, pistachios and rose petals. Complex , elegant with mineral structure. 211 Gewürztraminer Brenntal Riserva DOC 2014 - Kellerei Kurtatsch $95 318 Gewürztraminer Brenntal Riserva DOC 2015 - Kellerei Kurtatsch $90 100% Gewürtztraminer. A complex interplay of minerals that emerges as a hearty, juicy finish with the increasing maturity of the wine. Maturation on fine less for 12 months in stainless steel and for 6 months in large oak casks TRENTINO 212 Riesling Renano Praecipuus 2017 DOC – Roeno, TRENTINO $59 Riesling 100% Typical peach and petrol notes on the nose. The perfect balance of acidity and mineral flavors combined with the softness of sugar make this wine unique. Harmonious and elegant. 215 Sauvignon Blanc 2019 Trentino – Lavis $54 Sage, eldelflower on the nose, lime, green apple, passion fruit peach on the palate, vibrant and lively. FRIULI 219 Ribolla Gialla 2018 - Primosic $55 Ribolla Gialla 100%, dry, slight citrus, pleasant acidity, and gently mineral. Young Ribolla Gialla is reminiscent of freshly cut hay, Golden Delicious apples, and developing to acacia flowers. 225 Klin Riserva 2011 Collio - Primosic $120 226 Klin Riserva 2015 Collio – Primosic $98 Sauvignon blanc, Friulano, Chardonnay, Ribolla gialla, 24 months wood aging, then bottled without sterile filtration. The wine is aged in bottle for a further 12 months. Golden yellow, complex and elegant on the nose, exotic fruits and spices. Full bodied with balanced acidity and in harmony with refined and toasted undertones. Pair with happiness. VENETO 240 Soave Classico 2019 DOC - Suavia $54 100% Garganega. Fresh aromas of apple, pear and almond balance clean minerality. Crisp and refreshing. 245 Lugana Riserva Sergio Zenato DOC 2014 - Zenato $72 100% Trebbiano di Lugana. Fermented and aged in barrels and 12 months in bottle before being put on the market. The color is clear gold, elegant hints of flowers, citrus and exotic fruit, good depth and balance, with persistent aromatic sensations. LIGURIA 250 Pigato 2017 - Durin $55 100% Pigato. Elegant nose with delicate aromatic herbs such as camomile, crisp, fresh and balanced. 255 Fosso di Corsano Vermentino Superiore dei Colli di Luni 2019 - Terenzuola $58 100% Vermentino, fresh and intense with hints of spearmint and exotic fruits, well balanced, powerful with long finish. 7 PIEMONTE 265 Roero Arneis DOC Bric Varomaldo 2019 - Generaj $56 100% Arneis, it starts crisp and intense hints of peaches, mint and anise. Mineral mouth and persistend almond finish. 260 Gavi 2020 DOCG del Comune di Gavi – Tenuta San Giacomo $58 100% Cortese, floral with hints of acacia, round dry and crispy flavor with balanced acidity. TOSCANA 270 Terre di Tufi 2017, Teruzzi & Puthod $54 Vernaccia di San Gimignano, Chardonnay and Sauvignon, intense white wine at once full bodied and velvety. 271 Toscana Trebianco di S. Lucia 2019, Castello dei Rampolla $110 Trebbiano, Chardonnay, Traminer, Sauvignon Blanc. Trebianco Can be defined as an “orange” wine. Those undaunted by the colour will discover a surprising, complex fruitiness. With no added sulphites. The Trebbiano, Chardonnay, Traminer, Sauvignon Blanc and Malvasia grapes are left to ferment, with their skins, for about 10 days in clayvers – a process, which allows all the sun’s energy to be released into the wine. Its full body makes it similar, in some ways, to a red wine. 6 months in clay vessels 3 months in bottle. LAZIO 280 Ferentano Lazio IGT 2015 - Falesco $60 100% Roscetto, ancient indigenous grapes. The nose is rich of aromatic sensations ranging from banana to pineapple, aromas which range from the herbaceous to vanilla. The flavors are rich, soft and full with a superior, long and lingering finish. 3 months ageing in barriques MARCHE 285 Pecorino Villa Angela 2020 Offida DOCG, Velenosi $56 100% Pecorino, straw yellow, lots of exotic fruits on the nose, pineapple, passion fruit, mango and white peach, saline.
