FROM THE ECC CHEF

The holiday season has ended. With that being said, I would like to take a moment to thank all of you for your patronage, and support of our club in 2019! As we ring in a new year at the club, it’s time to transition from everyone’s favorite “Burger Night,” only to be replaced by another fan favorite, “Flatbread Pizza Night.” Guests will be able to create the flatbread pizza of one’s dreams, with a variety of toppings. Saying goodbye to “Lobster Night” will be just as tough to move on from. The wonderful thing is, my team and I get to be creative every Friday night with the return of “Seafood Feature Friday”. Which means every Friday night, a variety of seafood will be featured in the freshest, and creative way.

January’s chill attaches a desire to eat more robust foods that will warm the soul. They may include Beef Stew, Osso Bucco, or even a Chicken Fricassee. I’ve always enjoyed the heartier stews and ragouts with crunch French Bread and a nice full-bodied Cabernet. One of the great advantages of preparing braised items is that you only use one pot. All of your seasonings, meats and vegetables are prepared and served and quickly cleaned up. These dishes are perfect for entertainment guests. They allow you the freedom of preparing the food at your convenience (even a day or two in advance), and reheating as needed. Here’s a great dinner that’s very simple to prepare. Old Fashioned Beef Stew!

INGREDIENTS

3 lb. Beef, cubed 1 inch, boneless 3 oz. Salad Oil 1-14 oz Whole Tomatoes, chopped 64 oz. Water, approximately 1# Carrots, 1/2 inch dice 1# Celery, 1/2 inch dice 1# Onion, 1/2 inch dice 2# Potatoes, 3/4 inch dice 2 cups Pearl Onions 1-14 oz. Whole Tomatoes, chopped 1 cup Peas, frozen 1 can Corn, niblets

PROCEDURE

In a hot saucepot, add the oil and sear the cubed meat until evenly browned. Add the tomatoes and water and slowly simmer until the meat is tender, approximately 1 hour.

Add the carrots, celery, and onions and continue the simmer until tender. Next add the potatoes. Rinse the pearl onions and add along with the second tomatoes, peas and corn. Simmer until the vegetables are tender. Season with salt and pepper.

Golf Guest Policy Revision

Amended reciprocal agreement- This rule is in affect for ALL clubs that have reciprocal agreements with ECC (Sleepy, Guyan, and Parkersburg). A member of the reciprocal club can play ECC up to 4 times per calendar year (Jan.1-Dec 31) under the terms of the reciprocal agreement. The member of the reciprocal club will bill charges back to their home club. A member of a reciprocal club can also play as a guest of an ECC member up to another 4 times per calendar year for a total of 8 times. (i.e. If the member of the reciprocal club plays 2 times pursuant to the reciprocal agreement, that individual can play up to 6 more times as a guest of an ECC member.) The total rounds played (up to 4 under a reciprocal agreement and no more than 8 total) does not include WVGA events, Member/Guest, or outside golf outings. Individual Golf Lessons

My individual golf lessons contain everything any age or level golfer would need to improve their game. Whether you are a new beginner golfer trying to hit the ball for the first time or a well-versed experienced golfer just trying to minimize that fade or draw, I will provide the right individual golf lesson for both. As difficult as this game is, with the right type of coaching it can be much easier to understand and play. Grip, Alignment, Posture, and repetition are the basic fundamentals we will focus on during each lesson to help our bodies build muscle memory. Individual lessons are constructed based on how people, at their different level of ability, learn. Unlike many other teaching professionals, not all lessons are the same. A mixture of providing just enough information, and implementing the right number of changes, make up the overall delivery of individual lesson critical. During our private one on one individual golf lessons we will utilize the Edgewood Golf Simulator machine featuring Flight Scope launch monitor technology.

FROM THE SUPERINTENDENT

Happy New Year from the golf maintenance staff. The next couple of months will allow us to work inside on equipment. We will be sharpening, changing oil, replacing bearings and any other repairs needed. We will also be working on some unfinished bunker maintenance and trimming of some large oak trees when the weather permits.

We are looking forward to the 2020 golf season!

SQUASH LEAGUE

As a reminder, League Play resumes January For anyone that has been through the club over the 14th. The Schedule was sent out via email in past week you can see that the project is moving PDF format. Please notify Keith of any along nicely! The singles courts will be sanded scheduling conflicts! Saturday January 4th and lines painted early in the week. The Doubles court will be sanded on Monday SAVE THE DATE January 13th and lines painted the same day. This should keep us on track to have all three courts March 21st is the Finals and Banquet Dinner open for play on Tuesday January 14th! WV OPEN 2020

This year the WV Open will see local play begin on Monday February 24th, and the tournament will be open and promoted to out of town players. Out of town entrants will be expected to be available for play Friday afternoon and the tournament will run through Sunday March 1st at 1pm. A tournament information flyer and sign up will be distributed in the coming weeks, stay tuned!
