We continue to experience above average usage on the golf course, our a la Carte food and beverage services continue to exceed previous years sales, and we are starting to see members increasing their usage of the fitness facility, squash courts, tennis courts, and pool. I would like to invite all ECC members and families to the Labor Day pool event, and the Ladies Brunch Quiche Making event with Chef on the terrace. Make your reservation today for both events, as space is limited. Fresh fish... it’s not difficult to work with, so don’t be intimidated. Most people we know don’t want the hassle of selecting, filleting, or preparing fresh fish at home. I think once you get comfortable with some basic tips of handling it you’ll enjoy having it more often. When selecting your fresh fish you must first buy from a reputable supplier. Look for a fish that has clear eyes, ruby red gills, and no strong fishy scent in the stomach cavity. Its flesh should be firm to the touch and not mushy. I check for a sweet, mild scent from the flesh and it should be bright and glossy. If you’re not comfortable with handling a knife to fillet the fish your supplier will gladly do this for you. There are many various ways of preparing fish such as poaching, grilling, sautéing, and broiling. Which style you choose would depend on the type and cut of fish you have selected. This is a great time of year for outside grilling fish. To do this, select a firm, thick-cut fish such as salmon, swordfish, or tuna. A light marinade will enhance the flavor as well as help prevent your fish sticking on the grill. Start with a clean, hot grill. Brush your racks well to remove any residue from its last use. I like to take an old, clean cloth and drizzle it with vegetable oil. Just prior to placing your fish on the grill, generously spray the fillet with vegetable spray and next rub the grill rack with the oiled cloth. Depending on the thickness of the fish a good rule of thumb would be to cook the fish about 3-4 minutes per side. It’s important not to handle the fish too much while it’s on the grill. Simply turn it once. The more you handle or prod the item the more likely it will tear or fall apart. Be careful not to overcook your fish. This will create a drier, less palatable result. That’s all there is to it! Garnish your fish with a nice fruit salsa or herbal butter and you’re ready for a delicious dinner. Chef Dennis O. Receive a 20% discount on all food and beverages served at the Club after 5pm in the main clubhouse. Your task is to choose the right line and speed to make your straight putt go in the hole. So before you ever become a great putter you first need to learn to swing your putter to roll your ball without any side spin across a flat green on a straight line. After you learn to hit a straight putt you have to apply the following 5 steps to sink every putt. Of course the challenge is to improve your skill in applying the following 5 steps to become a great putter. To swing your putter correctly, rock the large muscles in your shoulders and back with locked elbows and wrists so that only your shoulders swing your putter straight through the point of impact and up your target line. To avoid pulling or pushing your putt, keep your head looking down until the ball is out of your sight. You have to practice this simple motion constantly to trust the straight roll of your putt up your target line. 1/ Read the Break: Stand on the low point of the green below your ball and appreciate the distance and speed that you need to putt. 2/ Feel It: Feel the amount of power you need to use to putt at least 12-18 inches past the hole. 3/ Choose Your Straight Target Line: In #1 you saw the break or double break. Choose your best estimate for the target line to direct your putt. Line up your body and putter to aim at a point on that straight line to start your STRAIGHT putt. 4/ Third Eye on the side of your head: Load a mental image in your brain by staring at the point that you want to reach as you extend your Straight Target Line to the distance of your putt.
