FROM THE SOMMELIER
for over thirty years i have worked as a sommelier and my professional career has taken me through various regions in France, and major wine countries in Europe like Italy, Spain, and Greece.
I am a member of the American Sommelier Association, Philadelphia Chapter 2000- 2002 and Member of the Union de la Sommellerie Francaise from 1990-1994 in Paris.
I lived in some of the most amazing cities, like Paris and London, where I worked in prestigious Michelin Star restaurants and was introduced to Mr. Olivier Poussier who would later become the world’s best Sommelier 2000 in Montreal, Canada. He influenced my career to become an international Sommelier.
I have been in the United States for over 20 years, working with nationally and world renowned chefs like Jean-Louis Palladin (Watergate Hotel Washington DC, Chef Robert Wiedmaier (Marcel’s Restaurant Washington DC), Chef Georges Perrier (Le Bec fin and Table 31 in Philadelphia), and Chef Martin Hamann (Four Seasons Hotel, Fountain in Philadelphia). In addition, I had the opportunity to meet with Mr. Robert Parker Jr. from the Wine Advocate Magazine for private tasting and discussion on several occasions.
The world of wine changes each and every day and, for the last thirty years, while deepening my love for the wines of Europe and North-America, I have also passionately embraced the study of wines from all around the world including areas like Argentina, Chile, New- Zealand, Australia, and South-Africa.
I love sharing my passion and my enthusiasm for wine. I am driven by the search for the right food and wine pairings and delight in working on food themes, bringing wine to life, focusing on the varietals, the appellations, the wine making methods, and above all, I enjoy the people who craft the wine. Warmth and friendship, clarity and simplicity, are all inherently part of my daily routine.
I have been fortunate in pursuing a career in a fascinating field which offers daily opportunities to pursue the two goals I set for myself: continually strive to be a high-level professional and spread the love for wine and gastronomy.

THE SOMMELIER its functions
The sommelier, used for restoration of the service of wine and other beverages, is a human service. This definition succinct, recognized by all diluted too often in the various applications of the business. The most important for the client is or his knowledge of the vineyards, nor its practice of tasting, or its management of the cellar, or its proper application of the regulation, or its awards and won competitions, but all simply that much too often forget: the SATISFACTION OF THE CLIENT.
This man or woman is at the service of the customers of the restaurant. Its mission, in agreement with his leadership, is to offer a choice of wines suitable for the dishes chosen by the client, to be used in optimum conditions of quality, consumption and compliance with the rules of service temperature. To control the overall competence, sommelier must acquire a certain number of expertise and whether. This knowledge will build the bedrock of the culture of sommelier and will transform as a man or woman of service effective and appreciated by its customers. The U.D.S.F. (Union de la Sommellerie Française) allowed a renewal of the trade, profession for young people and young girls, who find there multiple trades, open to the world of wine, or each can speak following its sensitivities, passion and his own experience.

The Cain Vineyard site is truly spectacular, cradled in a bowl overlooking St. Helena from the top of the Spring Mountain District. In 1980, Joyce and Jerry Cain purchased part of the McCormick Ranch, a homestead dating back to the 1840’s. The Cains were in search of a unique mountain property where they could realize their dream of planting the five classical Bordeaux varietals from which to draw one ideally structured wine, which would result as a blend of all five varieties. Jim and Nancy Meadlock joined the Cains in 1986, and in 1991 they purchased full ownership. The first Cain Five, the 1985 vintage was released in 1989. Cain produces four wines: Cain Five, Cain Cuvee, Cain Musque and Cain Concept.

25 LA SPINETTA
The Rivetti family story began in the 1890s when Giovanni Rivetti, grandfather to brothers Carlo, Bruno and Giorgio, left Piedmont for Argentina. Like many Italians at that time, he dreamed of returning rich and a powerful man, and perhaps even one day having the opportunity to make a great wine in his homeland. Though Giovanni never did, his son, Giuseppe (nicknamed “Pin”), fulfilled the dream. Pin married Lidia, purchased vineyards, and began to make wine. In 1977 the family took up residence at LA SPINETTA (meaning “top of the hill”) in Castagnole Lanze, located in the heart of the area well-known for Moscato d’Asti, a rather light and simple dessert wine at the time. The Rivetti’s believed, however, that Moscato had the potential for greatness and set out to prove it by producing the region’s first single-vineyard Moscato wines, Bricco Quaglia and Biancospino.
Over time, the family’s vision became even grander, and in 1985 LA SPINETTA made its first red wine, Barbera Cà di Pian, with many great reds to follow. In 1989 the Rivetti brothers named their red blend (Nebbiolo/Barbera) “Pin” in honor of their father. The first Barbaresco, Gallina, was produced in 1995 followed by Barbarescos Starderi, Barbera d’Alba Gallina in 1996 and and Barbaresco Valeirano in 1997. Barbera d’Asti Superiore entered the lineup in 1998.
In 2000 the family’s ambition of adding a Barolo to the winery production became a reality. The Rivetti’s acquired vineyards in Grinzane Cavour where a state of the art cellar, LA SPINETTA Campè, was also constructed.
In 2001 LA SPINETTA expanded beyond the borders of Piedmont, acquiring 65 hectares (160 acres) of vineyards in Tuscany, between Pisa and Volterra, where three different 100% Sangiovese wines are produced. For LA SPINETTA Sangiovese is the true ambassador of the Tuscan terrain. From 2004 to 2012 the indigenous Tuscan portfolio was completed with the production of a Colorino, a Vermentino, a Prugnolo Gentile, a Chianti and a Rosé wine made from Sangiovese and Prugnolo Gentile.
In 2011 LA SPINETTA yet adds another winery to the existing three and purchases Italy’s oldest Metodo Classico sparkling wine producer, CONTRATTO, in Canelli, Piedmont. The exquisite bubbles of CONTRATTO as well as the Vermouths and Bitter make LA SPINETTA’s already large wine portfolio complete.

Founded in 1731 in Beaune by Michel Bouchard, Bouchard Père & Fils, is one of the oldest wine estates in Burgundy, perpetuating tradition for nearly 3 centuries and 9 generations.
In 1775, Joseph Bouchard acquired his first vineyards in Volnay in the famous “Les Caillerets” climat and started to develop the family’s vineyard holdings.
During the French Revolution, property belonging to the clergy and nobility was confiscated and put up for sale. Joseph’s son, Antoine Philibert Joseph Bouchard, seized the opportunity to extend the family’s vineyard holdings in Beaune including the famous “Beaune Grèves, Vigne de l’Enfant Jésus.”
This desire to build up an exceptional estate in Côte d’Or endured through the generations and acquisitions in the best Villages were added throughout the 19th century and again in the early 20th century.
Over time, by acquiring various terroirs with great care and patience, Bouchard Père & Fils has built up a vast domaine in Côte-d’Or. Today the estate boasts 130 hectares of vines, of which 12 are classed Grand Cru and 74 classed as Premier Cru.

Chateau Montelena’s history is one of the deepest and most storied in the Napa Valley and California. Founded just north of Calistoga by a senator and San Francisco entrepreneur in 1882 at the turn of the century, it was one of the largest wineries in the state. Prohibition put an end to Montelena’s winemaking, and the next major era began in 1968, when Jim Barrett purchased the estate. Jim fell in love with this exceptional property, blessed with a complex mix of soils, slopes and biodiversity of wildlife and fauna. He had a dream of creating wine at the level of the great First Growths of Bordeaux, and set about replanting the vineyard, outfitting the winery with modern equipment, and studying the processes necessary for farming and winemaking at the highest quality level.
In 1976 Chateau Montelena put California at the forefront of the wine world. That year a who’s-who of the French wine and food establishment gathered for a grand tasting at the Inter-Continental Hotel in Paris. Four white Burgundies were tasted against six California Chardonnays. When the scores were tallied, the French Judges were convinced that the top-ranking white wine was one of their own. In fact, it was Chateau Montelena’s 1973 Chardonnay, rated above all other wines. This seminal event has been memorialized in the book “The Judgment of Paris,” by George Taber, as well as in the 2008 feature film Bottle Shock.
Today Chateau Montelena’s distinct 19th century stone structure stands as a quality icon in Napa Valley, consistently producing some of the finest wines in California. Master Winemaker Bo Barrett, Jim’s son, now runs the estate with the help of Winemaker Matt Crafton and Vineyard Manager Dave Vella.
