Deo Received : 10.04.2018; Accepted : 13.04.2018 See end of the Paper for Abstract : ‘Brittle’ is commonly known as Chikki-it’s an indigenous sweet snack, mostly liked by authors’ affiliation all age groups, also possesses nutritional importance in it. In present study utilization of sesame Correspondence to : (Sesamum indicum) is carried out in Chikki to evaluate the acceptance of consumers towards S1 Snehal D. Pande to S4 samples i.e. S1 as Raw sesame and Jaggery, S2 as Roasted sesame and Jaggery, S3 as Raw MIT College of Food sesame and Sugar while S4 as Roasted sesame and Sugar. Sample S1, S2, S3 and S4 were subjected Technology, Aurangabad to proximate analysis, Textural Analysis, organoleptic evaluation and statistical analysis (ANOVA). (M.S.) Organoleptic properties revealed that raw sesame and sugar sample (S4) is acceptable permutation of Chikki followed by roasted sesame and jaggery sample (S2). Jamila Haider 1 and Frederik J. W. van Oudenhoven ABSTRACT. Food is the only art form that is also a basic need. It requires knowledge and labor for cultivation and cooking and offers a space where tastes, hospitality, and other cultural values are expressed and created. As a daily practice in agricultural societies, food is a holistic concept that incorporates ideas of health, spirituality, community, technology, and trade, and connects the most marginalized with the most powerful. Conventional international development aid is dominated by a limited number of relatively narrow ideas informed by scientific processes: progress, economic growth, market development, and agricultural production. Such ideas are often at odds with endogenous ideas about development and often work against biological and cultural diversity. Here, we reflect on our experiences documenting the food culture of the Pamiri people of Afghanistan and Tajikistan. We trace the trajectory of ideas about development, local and foreign, and explore how at different stages in those trajectories, the qualities of food can help promote local perspectives, challenge dominant power relationships, and challenge scientific practices to incorporate these perspectives better. -

An attempt was made to enrich its nutritional quality by developing a multigrain Madurai, Tamil Nadu, India Nutri-chikki with millets, pulse, oil seeds and seeds of pumpkin and flax and also assessed the nutritional and storage stability. The standardized multigrain Nutri-chikki was organoleptically evaluated using a L Karpagapandi sensorial affective hedonic scale. The results indicates that multigrain Nutri-chikki comprises of protein Assistant Professor (FSN), 14.78 g, fat 16.6 g, fiber 4.1 g and minerals like iron 9.67 mg, calcium 269.9 mg, potassium 839.75 mg, Department of Family Resource phosphorus 565.1 mg, magnesium 462.92 mg which is nutritionally superior to groundnut chikki and it Management, Community showed acceptable sensory score of 8.3 for overall characteristics against groundnut chikki (7.8). The Science College and Research chikkis stored at TP2 and TP3 had an acceptable sensory score at the end of storage period (20 days) at Institute, Tamil Nadu room temperature.
