Wines Introduction WINES INTRODUCTION CENTRAL AND EASTERN EUROPE Wines from these areas – except perhaps Austria and Germany – have been much maligned in recent history. In fact, some of these regions have a history of winemaking that stretches back 8,000 years. The quality of the wine from these regions can be compared to those of the ‘old world’, yet consumer habits in the UK say differently. Our ethos at Kol is to champion products that are grown and made respectfully and are of high quality – something that the regions can provide in abundance. These are perhaps, the ‘new classics’. The story of their winery is an interesting one which dates back to the early 20th century. When the estate started, its primary agricultural crop was tobacco, with wine being made on the side to sell locally but also beloved by the art scene in Prague. Due to two world wars and then the communism that ensued in the region, the estate had been held by the authorities. It wasn’t until 1997 that control of the estate was passed back into the hands of its rightful owners for wine making to continue. We are lucky in that Nic from Modal Wines and the Slobodne Four have made us four wines (a white, skin contact, rosé and red) that come in litre bottles and are perfect wines for the table. THE REGIONS SLOVENIA Wine making in Slovenia is distinctly creative and elegant: producers use everything from acacia to mulberry for their barrels, fermenting varietals commonly found across the border in Italy into imaginative new wines.. SLOVAKIA Slovakian wines come from six wine-making regions to the south of the country, and minimum intervention producers are coming to the fore. Winery Slobodne Vinárstvo in Zemianske Sady, to the west of the country, makes our house wines. AUSTRIA Small and beautiful: perhaps the best way to describe Austria’s winemaking countryside. The majority of the vineyards have long grown white grapes such as Grüner Veltliner, favouring crisp, elegant white wines, while fruit- forward red wine’s history is a little more recent.. GERMANY German wine is predominantly produced in the west of the country, from vineyards located along the banks of the Rhine. Elegant, aromatic Riesling is usually the star of the show, but other varietals are beginning to emerge. Perhaps the most distinctive characteristic of German wines is their high acidity, caused both by reduced ripeness in the northerly climate. GEORGIA The oldest wine region in the world, Georgian wines are traditionally fermented in qvevri – large terracotta vessels buried underground – and the country is known for its skin-contact orange wines. Indigenous grapes number in the hundreds, with key varietals including Rkatsiteli, Mtsvane, Kisi, and Saperavi. CROATIA Croatian winemaking has a history dating back to the Ancient Greek settlers, with vineyards exposed to the Mediterranean sun and cooled by its sea breezes. Posip for characterful white wines and Plavac Mali for robust reds are the most common Croatian varietals. CZECH REPUBLIC Terroir-focused, low intervention wines can be found in Moravia in the Czech Republic. Some whites offer spice and an earthy minerality, while wines made from Ryzlink Rýnský can be floral in style. Reds are light in style, from grapes such as Modrý Portugal and Frankovka. SWITZERLAND The winemaking zones of mountainous Switzerland are diverse in their approaches to production and style, with red Pinot Noir and white Chasselas being the two most common. • In Association With
In association with... Welcome to the 2019 Real Wine Fair! The Real Wine Fair is an independent festival of natural growers and winemakers, comprising those who work organically and/or biodynamically and with few or zero interventions in the winery. That said, real wine is relative rather than an absolute or precise term and embodies a certain spirit of endeavour in the vineyard and the winery. We understand that each grower has a highly specific approach; we should celebrate those differences. Real wines tend to be made in small quantities by artisan or independent producers who work without chemicals (which means no artificial fertilisers, pesticides or herbicides) in low yielding vineyards and then vinify without artificial yeasts or enzymes, or recourse to acidification or other adjustments. Many are made with only tiny amounts of added sulphur and some with none at all. ‘Nowt taken out and nowt put in’, as the saying goes. The motivation is to rediscover the true flavour of wine by capturing the sense of place (terroir) and the very nature of the vintage. These wines are individual, hand-crafted, thrilling and unpredictable. They remind us that wine can be a living thing rather than a denatured product and that less intervention means more real flavour. This booklet contains details of hundreds of wines from many countries around the world presented by growers and winemakers who have stories to tell. We hope you enjoy these wines as much as we do. And if you want to buy a bottle or several, or order something you have tasted at the fair there is a pop-up shop by the entrance of the main hall! And wine is only part of the Fair.

  • Levan Wine Menu 24.10.20
Wine List In honour of our favourite disco DJ Larry Levan, in this list we’ve put together a selection of our favourite wines. Hopefully they’ll take you somewhere near seventh heaven and back again, or at least mountain high and river deep. These wines have been made with care and love, the majority by low intervention, organic or biodynamic winemakers who care as much about the environment as what’s in your glass. Welcome to the party!
