Bottle 55 CHAMPAGNE & SPARKLING Devaux Grande Reserve Brut N.V. bottle 55 | glass 10 This is sublime and expressive Champagne, aged on its lees for at least three years (twice the minimum dictated by Champagne law), which contributes to its complexity of flavor. Devaux Cuvee Rose Brut N.V. bottle | 60 Extremely elegant with subtle red and black fruit flavors and great freshness in the mouth. Billecart-Salmon Brut Reserve N.V. | 75 Without doubt one of the finest Grande Marque Champagnes and one of the few remaining family owned Champagne Houses. Elegant and fresh with distinct, precise intensity and refined aromas of apples and ripe pears with a delicate texture in the mouth and persistent, plentiful mousse. Ayala Blanc de Blancs 'Cote des Blancs' 2013 | 100 Made in exceptional years only, this pure Chardonnay shows remarkable minerality with notes of lemon, white fruits, yellow plums and frangipane & low dosage with very fine bubbles. Vignerons de Terres Secrètes, Crémant de Bourgogne | bottle 32 | glass 7 Made from Chardonnay grapes grown on Burgundy’s limestone terroir using the champagne method. A neat, fresh palate with floral aromas. Vigneau-Chevreau, Vouvray Petillant Brut N.V. (biodynamic/organic) bottle 38 | glass 8 'Champagne method' sparkling wine from Chenin Blanc with very fine bubbles, green apple, pear and citrus fruit aromas and a long, dry finish. WHITE Domaine Font Mars, Picpoul de Pinet 2019 (organic), France | bottle 26 | glass 6.5 A super refreshing wine packed full of complex fruit flavours, youthful citrus fruit flavours, green apple, touches of honey and a moreish acidity. Quinta De Azevedo, Vinho Verde 'Reserva' 2019, Portugal | bottle 26 | glass 6.5 A fresh & vibrant wine from such an undervalued region. Well ripened fruit with underlying richness. Excellent pairing with shellfish. Spy Valley, 'E Block' Sauvignon Blanc 2018, New Zealand | bottle 34 | glass 8.5 Maturation on lees gives this wine structure and a soft mid palate with abundant stone fruit, melon & pink guava flavours. Dreissigacker, Riesling 2019 (Organic), Germany | bottle 34 | glass 8.5 From the resurgent Rheinhessen, this wine shows green reflexes with a fruity, elegant nose, rich and medium-bodied, with aromas of ripe fruits. The palate is elegant, well-balanced & full of yellow fruit character. Domaine Mittnacht, Cuvee Gyotaku 2018 (Biodynamic), France | bottle 34 A blend of Riesling, Pinot Gris, Muscat and Gewürztraminer, this wine is aromatic, dry and fresh to complement fish. Biodynamic, using wild yeasts and minimal interventions. Hubert Brochard, Pouilly-Fumé 'Classique' 2018, France | bottle 36 Typical ‘fume’ stony aromas punctuated by beautiful minerality. Expresses all that’s best in a Loire sauvignon blanc. WHITE (cont.) Unico Zelo, Orange Wine 'Esoterico' 2018 (Vegan), Australia | bottle 36 An eclectic blend of Muscat d’Alessandria, Riesling and Bianco d’Alessano left on their skins for eight days, giving a delicious cloudy orange wine. It has a textured, waxy mouthfeel of ginger, orange and citrus, and ripe tannins. Gerovassiliou, Malagousia Epanomi, Ktima 2019, Greece | bottle 40 Wonderfully aromatic wine produced from Malagousia grapes, saved from extinction due to the efforts of Vangelis Gerovassiliou. Medium-bodied with excellent structure, aromas of lemon peel, pear, mango and a hint of herbs on the finish. Nathalie & Gilles Fevre, Chablis AOC 2018/19 (Sustainable), France | bottle 40 Made from old vines this wine shows elegant softness but remains sharp, crystalline and clean with the classic mineral finish that you expect from Chablis. Pazo de Senorans, Albarino 2019 Val Do Salnes', Spain | bottle 40 A superb quality, pure Albariño with bright fruit flavours of peach, yellow apple, dried tropical fruits and a toasted almond note on the finish thanks to a longer aging on its lees. Domaine Rolly Gassmann, Riesling 2019 (Organic/ Biodynamic), France | bottle 44 A seriously fine, dry Riesling with an expressive nose, vibrant notes of white and yellow flowers, and a delicate toasty note. The palate is concentrated and complex with well-balanced acidity and a long, saline finish. Kmetija Stekar, Sivi Pinot Gris 2019 (Organic/ Natural), Slovenia | bottle 46 Continues the legacy of fine, biodynamic winemaking with lots freshness in a mineral and juicy way. Produced with very short maceration on the skins which gives the juice a temptingly rich orange colour. Flavours of dry apricot, freshly picked peach and pink grapefruit with good acidity freshness. WHITE (cont.) Chateau de Tracy, Pouilly-Fume 2018 (Organic), France | bottle 55 Family owned estate since the 15th century producing classically styled, elegant wines using an organic approach. Complex nose of blackcurrants and subtle hints of tarragon, followed by lemon and exotic fruits all underpinned by gorgeous minerality. Les Hauts de Smith, Blanc 2018, France | bottle 65 The second wine of Château Smith Haut Lafitte produced with identical technique to that of the Great Wine. Medium to full-bodied, aged in 50% new oak, the palate is laden with mouthwatering tropical fruit & a pleasantly oily texture. V & F Jouard, Chassagne-Montrachet 'Vieilles-Vignes' 2018, France | bottle 80 This is made from the oldest (50+ years ) vines in three of the domaine’s best plots. As fine as most producers’ premier crus with splendid, honeyed fruit allied to crisp acidity. Vincent Girardin, Meursault 'Les Narvaux' 2017, France | bottle 90 A wine with great mineral character. The notes are mainly focused toward flint and citrus. The mouth is lively and full of complexity with incredible length. ROSE Chateau Paradis, Terre des Anges Coteaux d'Aix en Provence Rose, 2019, France | bottle 36 The blend of Syrah, Mourvèdre and Vermentino is unusual for Provence rosé, but it makes for a pale pink wine that combines crushed stone, floral notes, red berries, citrus notes and a silky feel on the finish. This is clearly one of the best rosés to come out of the appellation. RED Carignan Vieilles-Vignes, Mont Rocher 2018, France | bottle 24 | 175ml 6 This is a delicious and juicy medium-bodied wine that offers a taste of real France. The palate is full and structured, yet elegant with a fine mineral acidity. RED (cont.) Bodegas y Vinedos Alnardo, 'Psi' 2017, Spain | bottle 46 With Psi, Peter Sisseck seeks to capture the very essence of the Ribera del Duero. The resulting Tempranillo is a well-concentrated red with a real sense of place. It offers floral notes and hints of both citrus and spice, all underscored by hot stone minerals, ripe tannins and persistent finish. Chateau De Fonbel, Grand Cru Saint-Emilion 2016, France | bottle 50 Easily as good as many St Emilion’s double the price. Pure nose of plums and smoky black fruit leads seamlessly into a finely textured palate of concentrated blackberries and peppery spice. Franz Haas, Pinot Nero 2017/18, Italy | bottle 50 The nose opens with notes of black cherries, raspberries, marzipan, cloves and cinnamon, ending with light earthy aromas. Bruno Rocca, Barbaresco (Nebbiolo) 2016 (Organic) Italy | bottle 90 This stunning Barbaresco reveals impeccable balance, ongoing intensity and elegance. This is a very elegant and buttoned-up expression of Nebbiolo from one of the most talented producers in Barbaresco. Benjamin Leroux, Vosne Romanee 2017 (Organic) France | bottle 110 A beautifully crafted Pinot Noir made by one of Burgundy's rising star winemakers. Glorious and rich, a textbook Vosne with seductive ripe fruit, pretty floral notes, deep ripe berry fruit and layers of complexity Conti Costanti, Brunello di Montalcino 2015, Italy | bottle 120 Voted by Decanter as "Wine of the Vintage", this seductive wine is already expressive but still youthful.

In association with... Welcome to the 2019 Real Wine Fair! The Real Wine Fair is an independent festival of natural growers and winemakers, comprising those who work organically and/or biodynamically and with few or zero interventions in the winery. That said, real wine is relative rather than an absolute or precise term and embodies a certain spirit of endeavour in the vineyard and the winery. We understand that each grower has a highly specific approach; we should celebrate those differences. Real wines tend to be made in small quantities by artisan or independent producers who work without chemicals (which means no artificial fertilisers, pesticides or herbicides) in low yielding vineyards and then vinify without artificial yeasts or enzymes, or recourse to acidification or other adjustments. Many are made with only tiny amounts of added sulphur and some with none at all. ‘Nowt taken out and nowt put in’, as the saying goes. The motivation is to rediscover the true flavour of wine by capturing the sense of place (terroir) and the very nature of the vintage. These wines are individual, hand-crafted, thrilling and unpredictable. They remind us that wine can be a living thing rather than a denatured product and that less intervention means more real flavour. This booklet contains details of hundreds of wines from many countries around the world presented by growers and winemakers who have stories to tell. We hope you enjoy these wines as much as we do. And if you want to buy a bottle or several, or order something you have tasted at the fair there is a pop-up shop by the entrance of the main hall! And wine is only part of the Fair.

Wine List In honour of our favourite disco DJ Larry Levan, in this list we’ve put together a selection of our favourite wines. Hopefully they’ll take you somewhere near seventh heaven and back again, or at least mountain high and river deep. These wines have been made with care and love, the majority by low intervention, organic or biodynamic winemakers who care as much about the environment as what’s in your glass. Welcome to the party! • Wines Introduction
WINES INTRODUCTION CENTRAL AND EASTERN EUROPE Wines from these areas – except perhaps Austria and Germany – have been much maligned in recent history. In fact, some of these regions have a history of winemaking that stretches back 8,000 years. The quality of the wine from these regions can be compared to those of the ‘old world’, yet consumer habits in the UK say differently. Our ethos at Kol is to champion products that are grown and made respectfully and are of high quality – something that the regions can provide in abundance. These are perhaps, the ‘new classics’.
