The palate is concentrated and complex with well-balanced acidity and a long, saline finish.

Kmetija Stekar, Sivi Pinot Gris 2019 (Organic/ Natural), Slovenia | bottle 46 Continues the legacy of fine, biodynamic winemaking with lots freshness in a mineral and juicy way. Produced with very short maceration on the skins which gives the juice a temptingly rich orange colour. Flavours of dry apricot, freshly picked peach and pink grapefruit with good acidity freshness.

V & F Jouard, Chassagne-Montrachet 'Vieilles-Vignes' 2018, France | bottle 80 This is made from the oldest (50+ years ) vines in three of the domaine’s best plots. As fine as most producers’ premier crus with splendid, honeyed fruit allied to crisp acidity.

Vincent Girardin, Meursault 'Les Narvaux' 2017, France | bottle 90 A wine with great mineral character. The notes are mainly focused toward flint and citrus. The mouth is lively and full of complexity with incredible length.

Chateau Paradis, Terre des Anges Coteaux d'Aix en Provence Rose, 2019, France | bottle 36 The blend of Syrah, Mourvèdre and Vermentino is unusual for Provence rosé, but it makes for a pale pink wine that combines crushed stone, floral notes, red berries, citrus notes and a silky feel on the finish. This is clearly one of the best rosés to come out of the appellation.

Domaine De La Soumade, Cotes du Rhone AOC 2018 (Organic), France | bottle 32 A blend of Grenache and Syrah made using a strict organic regime by the Rhône icon, Andre Romero. Concentrated, exuberant wine with appealing aromas of violets and tar. Silky texture, with lifted, ripe red and black fruits and a twist of ripe tannin on the finish.

Yealands, Pinot Noir Single Vineyards 'Black Label' 2018/19, New Zealand |​ b​ ottle 38 Aromas of dark cherry, violets and spice with a whole-berry carbonic note. The palate is full and structured, yet elegant with a fine mineral acidity.

From the cool, eastern slope of the Hemel-en Aarde Ridge, the cool Atlantic influence creates wines
