There is a gentle pressing and 10 months on the lees giving the resulting wine in the glass a lovely light yellow with green reflections together with a fine nose of floral & mineral notes. A good weight in the mouth from the time on the lees gives richness; a perfect wine for seafood & Asian dishes as well as goat cheese, and lighter hard as well as blue cheese. Green apple, pear and tarragon are present, with hints of honeysuckle. Clean and bright with vivid minerality and sparkling acidity. Perfect with Scallops, shellfish and creamy cheeses, aswell as Beaufort and Comte on the younger side. POUILLY-FUME, Domaine de Bel Air, Pouilly-sur-Loire, France £16.75 Grape : 100% Sauvignon Blanc This wine is pale lemon yellow in colour. The nose is intense and complex with aromas of white peach, pear, mango and a touch of minerality. On the palate, this wine is supple and delicate, with well-balanced sweetness and a long, intense finish. Domaine de Bel Air has 14 hectares of Sauvignon Blanc vineyards on different soils: Kimmeridgian limestone, clay-chalk (argilo-calcaire) and sandy chalk. The finished wine is a blend of parcels planted on three different soil types, giving a wine with added complexity and depth. The vineyards are south-facing and benefit from a favourable microclimate thanks to their very close proximity to the River Loire, which moderates the cold temperatures of the region, encouraging greater ripeness and flavour development. The wine has a pale yellow hue with expressive, elegant aromas of citrus, gooseberry complemented by floral & limestone notes giving a rounded taste. The finish is crisp with a lovely salty edge. Perfect for goat cheeses & crumbly fresh cheeses. MENETOU-SALON 2019, Domaine Jean Teiller, Menetou-Salon, Loire £17.25 Grape: 100% Sauvignon Blanc The atypically ripe, juicy style of Loire Sauvignon Blanc is almost certainly influenced by the year that Patricia Teiller and husband Olivier Luneau (who now run the estate) spent winemaking in New Zealand. Certified organic. This highly-regarded white Menetou-Salon wine has a bountiful tropical fruit bouquet and sensuous, silk-textured palate with appealing citrus notes and an elegant, dry finish. Their philosophy is simple "Cautious modernization with the utmost respect for tradition." CHABLIS, DOMAINE COLETTE GROS, Chablis, Burgundy £18.50 Grapes: 100% ChardonnayC The Gautheron family has been cultivating vines in Chablis for five generations. This estate is situated at the northern most part of the region close to the Champagne area and makes classic Chablis with a clear light gold colour, with hints of emerald green. In the mouth the wine is dry as apple-parings and steely with perhaps just a delicate hint of violets and mint. Well balanced with lively acidity, & notes of hazelnut & creamy biscuits. In Refrontolo, a UNESCO Wold Heritage site, the production of the Marzemino Passito has a tradition that dates back to 1400. Perfect with chocolate and as a meditation wine. TECHNICAL SHEET NAME OF THE WINE: Refrontolo Passito Colli di Conegliano DOCG. GRAPES: 100 % Marzemino. HISTORICAL NOTES: in Refrontolo the production of this wine has a tradition that dates back to 1400. This wine was drunk by mothers after the birth of their sons, because of its recovering features. The Marzemino Passito from Refrontolo impressed also Mozart, who even mentioned it in his opera Don Giovanni in this way: "that excellent Marzemino". In fact he received this wine from Mr. Da Ponte from Vittorio Veneto (a town near Refrontolo), who was Mozart's copyist. PRODUCTION AREA: Colvendrame estate, which is on the hills between Conegliano and Valdobbiadene, a UNESCO Wold Heritage site. Colvendrame is the name of the hill where this vineyard is; the exposition to the sun and the climate are excellent for grape vine growing. ALTITUDE: 200-350 m. SOIL: with a good balance of all the components. It is rich in tufa which characterises the wine. CLIMATE: mild and windy, with wide changes of temperature between day and night, ideal for the preservation of the aroma and the acidity of the grapes. Prosecco is the ultimate in affordable luxury, but there is more to Prosecco than brunch bubbles! 1 How is Prosecco made? While it’s often compared to Champagne, Prosecco is made using a different process where the bubbles are created in a pressurized tank rather than an individual bottle (the latter is the production method used in Champagne). The process goes by several names including Tank Method or Charmat Method, but Italians refer to it as the Martinotti Method. Italian Federico Martinotti developed and patented this sparkling wine method in 1895, but that design was improved upon by Frenchman Eugène Charmat in 1907, and the Charmat name stuck. Are all Proseccos sparkling? The vast majority of Prosecco is spumante (fully sparkling), but a tiny slice of production is made as a frizzante (a fizzy style with about 1-2.5 bars of pressure) and a tranquillo(still) version. The benefits of using the tank method are that it preserves the youthful fruity flavors (perfect for the aromatic Glera grape) whereas the traditional method used in Champagne and Franciacorta (frahn cha COR tah) produces more of a savory yeasty character in the wines.
