E) Specification: Conegliano Valdobbiadene-Prosecco is a yellow-colored wine more or less intense straw-yellow, brilliant, with a vinous, fresh aroma harmonious, pleasantly fruity, with characteristic aroma with foam persistent in the sparkling versions. One or more of the following grape varieties may be included up to a maximum of 15%: Verdiso, Bianchetta trevigiana, Perera and Glera lunga. Sparkling Congeliano Valdobbiadene wines are obtained from grapes consisting of one or more of the following vine varieties: Pinot bianco, Pinot nero, Pinot grigio and Chardonnay. The name Conegliano Valdobbiadene Prosecco is reserved for wines which meet the conditions and requirements established in this production specification, for the following types: − Conegliano Valdobbiadene – Prosecco − Conegliano Valdobbiadene – Prosecco frizzante (semisparkling); − Conegliano Valdobbiadene – Prosecco spumante (sparkling), followed by the term superior; The term Superiore di Cartizze is reserved for the sparkling Conegliano Valdobbiadene Prosecco wine obtained in the traditional subarea within the limits and on the conditions established in the Production Specification. GI Journal No. 145 7 April 30, 2021 F) Description: Conegliano Valdobbiadene Prosecco is a distinctive wine which is obtained from grapes originating from vineyards in the designated area of origin and consisting of the Glera vine variety. The name Conegliano Valdobbiadene Prosecco is reserved for wines which meet the conditions and requirements established in this production specification, for the following types: − Conegliano Valdobbiadene – Prosecco − Conegliano Valdobbiadene – Prosecco frizzante (semisparkling); − Conegliano Valdobbiadene – Prosecco spumante (sparkling), followed by the term superior; Conegliano Valdobbiadene Prosecco: colour: more or less intense pale straw yellow; bouquet: winy, characteristic with light fruity fragrance; flavour: flavoursome and pleasantly bitterish; minimum total alcoholic strength by volume: 10.50% vol; minimum total acidity: 5.0 g/l; minimum sugar-free extract: 14.0 g/l; Conegliano Valdobbiadene Prosecco frizzante: colour: more or less intense pale straw yellow, bright, with obvious development of bubbles. bouquet: pleasant and characteristically fruity; flavour: fresh, well-balanced, agreeably effervescent, fruity; minimum total alcoholic strength by volume: 10.50% vol; minimum total acidity: 5.0 g/l; minimum sugar-free extract: 14.0 g/l. A slight haziness is possible in the type traditionally produced by fermentation in the bottle. In this case it is compulsory to put the indication “in-bottle secondary fermentation” on the label. The characteristics of the bouquet and flavour for said wine and the total minimum acidity are as follows: bouquet: pleasant and characteristically fruity with possible hints of bread crust and yeast; flavour: fresh, well-balanced, agreeably effervescent, fruity with possible hints of bread crust and yeast; minimum total acidity: 4.0 g/l; Conegliano Valdobbiadene – Prosecco spumante superiore: colour: more or less intense pale straw yellow bright with persistent perlage; bouquet: pleasant and characteristically fruity; flavour: fresh, well-balanced, pleasantly fruity, characteristic minimum total alcoholic strength by volume: 11.00% vol; minimum total acidity: 5.0 g/l minimum sugar-free extract: 14.0 g/l; Conegliano Valdobbiadene Superiore di Cartizze or Valdobbiadene Superiore di Cartizze: colour: more or less intense pale straw yellow, bright, with persistent perlage; bouquet: pleasant and characteristically fruity; flavour: fresh, well-balanced, pleasantly fruity, characteristic; minimum total alcoholic strength by volume: 11.50% vol; minimum total acidity: 5.0 g/l; minimum sugar-free extract: 14.0 g/l. GI Journal No. 145 8 April 30, 2021 G) Geographical area of Production and Map as shown in page no: Production of “Conegliano Valdobbiadene Prosecco” must take place within the area comprising of the hilly territory of the municipalities of Conegliano, San Vendemiano, Colle Umberto, Vittorio Veneto, Tarzo, Cison di Valmarino, San Pietro di Feletto, Refrontolo, Susegana, Pieve di Soligo, Farra di Soligo, Follina, Miane, Vidor and Valdobbiadene. The aforesaid production area lies within the geographical co-ordinates as provided below: Directions Latitude Longitude North 45°58'44.50"N 12°13'49.82"E East 45°57'1.39"N 12°20'59.44"E South 45°49'59.15"N 12°13'29.87"E West 45°53'52.83"N 11°57'9.57"E H) Proof of Origin (Historical records): The story began in Conegliano Valdobbiadene, a hilly area in North-East Italy, 50 km from Venice and around 100 km from the Dolomites. Here, for over three centuries, people have grown the grapes that produce Conegliano Valdobbiadene Prosecco. The production area covers 15 communes and represents the heart of the world of Prosecco. Vine-growing has been widespread in the Conegliano Valdobbiadene zone since ancient times. In the 6th century, Saint Venanzio Fortunato, Bishop of Poitiers (530-607), described Conegliano Valdobbiadene, his place of origin, as "Quo Vineta Vernatur, Sub Monte Jugo Calvo, Quo Viror Umbrosus Tegit Sicca Metalla", meaning, “an area where vines bud below the high mountains, and in which the lush greenery protects the more barren zones”. It is said that, in 1574, when King Henry III of Poland passed through on his way to Paris to be crowned King of France, the community of Conegliano made the white wine from its hills pour
