It lets us easily pour from our best bottles, while leaving the cork where it's been since it was first sealed in the winery. When the Coravin System is put in place on top of the bottle, a thin, hollow needle is inserted through the cork to extract the wine; at the same time an odourless and tasteless gas by the name of argon is inserted into the bottle to replace the space created by the extracted wine. No removal of foil or cork is required in order to access the wine.
