O e history of wine in Spain is so old that no one really knows who rst brought vines to the area. By the time the Phoenicians arrived some 3,000 years ago and founded what are now the cities of Cadiz and Jerez, viticulture was well established and Spanish wines became widely traded throughout the Mediterranean and North Africa. Since then, Spanish Wine Culture evolved over the years under the inuence of dirent traditions and cultures. A look at a map suggests just how much climatic diversity there is lin Spain's many wine regions, from the soggy green vineyards of Galicia on the north Atlantic coast to the baked Mediterranean south east. MANZANILLA Fino sherry produced around Sanlúcar de Barrameda, thicker layer of or with more coastal aromas than a Fino. FINO Dry, pale white sherry wine biologically aged, entirely under a layer of or. AMONTILLADO Started with biological ageing, matured further in an oxidative way, darker colour and richer avour than Fino. PALO CORTADO Aromatic renement of Amontillado combined with the structure and body ofan Oloroso, very delicate Oloroso. OLOROSO Aged in an oxidative way after being fortied to 17 or 18 degrees, shows nutty aromas and toasted hints. MEDIUM / PALE CREAM / CREAM Sweetened sherries, usually produced by blending a dry Sherry with naturally sweet Pedro Ximénez or Moscatel wines. MOSCATEL Similar to Pedro Ximénez, but made with Moscatel de Alejandría that shows oral aromas with honeyed, raisiny palate. PEDRO XIMÉNEZ Intensely sweet wines made with grapes that are dried in the sun, aromas of candied gs, chocolate and spices. THE SOLERA SYSTEM e Solera System is used in the production of all types of sherry. It is a complex system of maturation using a large number of casks and fractional blending. e number of tiers between the solera and the last criadera depends on the style of wine but generally oxidatively aged sherry has less ‘criaderas’. It is only possible to give an approximate, average age of the wine as it is a blend of many vintages. e Solera system is mainly used to ensure continuity and consistency as well as to continuously refresh the micro nutrients for the ‘Flor’ to ourish. FLOR ‘Flor’ is the veil or thin layer of indigenous yeast cells that forms on top of sherry wines that protects the wine from air contact. ey only grow naturally in the specic climate of Southern Spain. e ‘Flor’ is basically what dierentiate the sherry wine into two main components, biological aging (under ‘Flor’) and oxidative aging (without ‘Flor’). EL VENENCIADOR One of the oldest, most traditional of the many trades to be found in the Jerez Region is that of ‘the Venenciador’. Ever since sherry rst began to be traded it has always been necessary to establish quality and price by taking samples for tasting. It is said that ‘e Venenciador’ is the human face of Sherry in and outside of the Bodega. e venencia is the instrument which gives its name to the trade of the venenciador. It allows to extract a small quantity of totally clear wine from the wooden butt and pour it into the tasting glass from a height to help the wine to aerate and open up when it strikes the glass, thus enabling the tasters to fully appreciate its characteristics. Sanlúcar de Barrameda Jerez de la Frontera El Puerto De Santa Maria Atlantic Ocean SHERRY Sherry is a fortied wine made from white grapes that are grown near the Sherry Triangle which comprised of cities of Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María in Andalusia, Spain. Sherry, and the numerous styles in which it is made, represents the coming-together of four key factors: climate, soil, grape varieties and winemaking techniques. In this sun baked corner of South-west Spain, the climate is strongly inuenced by both the cooling eects of the Atlantic Ocean and the warmth that originates in the eastern plains. ree particular grape variety thrives in this conditions, Palomino Fino grown in ‘Albariza’ Soil which reect light and retain moisture, Pedro Ximénez grown in Barros soil that is highly fertile and Moscatel de Alejandria found in the Arena soil. Sherry is produced in a variety of styles made primarily from the Palomino grape, ranging from light versions similar to white table wines, such as Manzanilla and Fino, to darker and heavier versions that have been allowed to oxidize as they age in barrel, such as Amontillado and Oloroso. Sweet dessert wines are also made from Pedro Ximénez or Moscatel grapes, and are sometimes blended with Palomino-based Sherries.
