La Comarca de Calatayud posee una gran riqueza patrimonial, con su Mudéjar declarado Patrimonio de la Humanidad por la UNESCO, y con recursos naturales únicos como el Monasterio de Piedra. Calatayud Wine Route HISTORY AND CULTURE Calatayud, the second main city in the region of Zaragoza, is one of Spain’s highest altitude wine producing areas. Some of its vineyards are over one-hundred years old and endure extreme natural conditions which are ideal for the production of top-quality, highly acclaimed wines. The region of Calatayud boasts a superb historical heritage—the fine instances of Mudejar art found throughout the area were declared a World Heritage by UNESCO—, and unique natural spots such as the Monasterio de Piedra. 6 EL VINO Viñedo extremo. Vinos de altura. El cultivo de la vid en la zona se remonta al siglo II a. C., confirmado con el hallazgo de un lagar en el pueblo Celtíbero de Segeda. La primera referencia escrita sobre la gran calidad de los vinos de la Comarca se remonta al siglo I y su autor es Marco Valerio Marcial, historiador que nació en la ciudad romana de Bílbilis. Bílbilis Augusta fue una ciudad floreciente en su época y en sus cercanías los árabes fundaron la actual Calatayud. Los romanos desarrollaron la vid, los musulmanes la abandonaron y los cristianos volvieron a destacar su importancia durante la reconquista. A finales del siglo XII los monjes del Cister promovieron la plantación de la vid en esta zona y fundaron el Monasterio de Piedra. En la década de los años 60 los viticultores se unen y crean las cooperativas. Posteriormente viendo la calidad de los vinos elaborados, los bodegueros solicitaron la creación de esta Denominación de Origen hasta su ratificación a finales de los 80. Cepas con más de 100 años, la altitud a la que se encentran la mayoría de los viñedos, así como una climatología extrema, dan forma al eslogan de la D.O. Calatayud, Viñedos Extremo, Vinos de Altura. 5 THE WINE Extreme vineyards. High end wines. Vine growing in this area goes back to the 2nd century B.C. as attested to by a winepress found in the Celtiberian site of Segeda. The first written testimony to the superb quality of wine in this region was contributed by 1st-century-writer and historian Marco Valerio Marcial, born in the nearby Roman city of Bilbilis. In the late 12th century, Cistercian monks promoted vine growing in this zone and founded the Monasterio de Piedra. Numerous wineries in the monastery surroundings attest to the significance attached to vineyards. In the 1960’s vine-growers came together and created co-operatives. Aware of the high-quality of the wine produced, winery owners applied for the creation of the protected designation of origin (D.O.), which was granted in 1989. Over one-hundred- year-old vines, the high altitude of most vineyards and extreme weather conditions with exceedingly hot and dry summers plus severe frost in winters shape the motto of D.O. Calatayud: Extreme Vineyards, High End Wines. 8 RECURSOS La Ruta del Vino Calatayud dispone de unos atractivos turísticos difícilmente repetibles. Hablar de Calatayud es hablar de paisaje, hoces, sierras, barrancos, ríos, el mudéjar, balnearios, deportes como la pesca, la caza y el golf, gastronomía, plazas hoteleras y en cada estación un atractivo. Todo esto unido al vino conforman un atractivo enoturístico que nos ha hecho crear la Ruta del Vino de Calatayud. En la actualidad la Ruta del Vino Calatayud cuenta con mas de 30 establecimientos adheridos, entre los que se encuentran bodegas, hoteles, con una capacidad hotelera de más de 800 plazas, balnearios, con tratamientos termales y tratamientos de vinoterapia, restaurantes de reconocido prestigio, museos, parques naturales, campo de golf y varias tiendas especializadas. 6 RESOURCES Calatayud Wine tours: a unique tourist experience. Calatayud offers stunning landscapes, mountains, valleys, cliffs, rivers, Mudejar art, thermal spas, outdoor activities including fishing, hunting or golf, top cuisine and hotels to be enjoyed in any season. Such attractive tourist facilities combined with a superb winery network prompted the creation of Calatayud Wine Tours. Over forty local facilities are involved in Calatayud Wine Tours including wineries, hotels with accommodation for up to 800 guests, thermal and wine-therapy spas, prestigious restaurants, museums, natural parks, one of Spain’s top 18-hole golf courses, transport companies and gourmet shops. 8 GASTRONOMÍA La Borraja, el congrio, el ternasco y los dulces. A la hora de sentarse en la mesa, la Comunidad de Calatayud le ofrece verdaderos tesoros gastronómicos. Las fértiles vegas de los ríos aportan desde hace siglos excelentes productos: maravillosas verduras, entre las que destaca la borraja y apreciadas frutas. El pasto de las sierras confiere a nuestros ganados autóctonos un vigor que se traduce en una carne inmejorable, el prestigioso ternasco. Los dulces en Calatayud constituyen un capítulo propio. El chocolate tiene en nuestra tierra el honor de ser el lugar de toda Europa donde se elaboró por primera vez, y la repostería de todo tipo, destacando los bizcochos y las frutas confitadas, ha alcanzado merecida fama fuera de sus fronteras. Mención aparte cabe señalar el congrio, un producto del intercambio comercial que desde hace y durante muchos siglos se mantuvo con el pueblo gallego, por nuestras afamadas cuerdas y maromas. GASTRONOMY The Borraja, conger, ternasco and sweets. When it comes to sitting at the table, the Community of Calatayud offers you true gastronomic treasures. The fertile areas of the rivers have provided excellent products for centuries: marvelous vegetables, among which the borage stands out. The grass of the mountains gives our native cattle a vigor that translates into an unbeatable meat, the prestigious ternasco. The sweets in Calatayud constitute a chapter of their own. Chocolate has the honor of being the place in all of Europe where it was made for the first time, and confectionery of all kinds, highlighting biscuits and candied fruits, has achieved deserved fame outside its borders. The long, cold, dry winters, along with its moody winds and humid conditions, mean that less salt is required for the curing process. This enables their flavours, aromas and uniqueness to be expressed in a much more natural way. And although Guijuelo is the heart of the pork product manufacturing in Salamanca, the actual production area includes other municipalities, some as well known as La Alberca, Béjar, Candelario or San Martín del Castañar.

Resumen: Gracias a la comprobación y mejora del modelo del índice de satisfacción Europeo, ECSI (European Customer Satisfaction Index), se ha podido determinar la satisfacción del cliente de los vinos de Denominación de Origen Protegida (DOP) del Somontano a partir de las otras variables pertenecientes al modelo (calidad, imagen, expectativas, valor y lealtad), con el objetivo de difundir estos conocimientos en revistas de gran impacto. La gestión de la calidad del producto y el cálculo de la satisfacción del cliente presenta una de las posibles estrategias que las empresas emplean para mejorar el marketing, y por lo tanto la venta de sus productos.
