The Grechetto has great potential. As a local grape with an ancient history it has adapted to the surrounding areas well. In the , it adds a unique texture rarely seen in white that has a grippy minerality with natural tannins. Being able to produce a Grechetto without the addition of sulfur while showcasing the pure mineral expression of the soil and tex- ture of the grape was a fun challenge and resulted in this delicious wine.

Varietals - 80% Grechetto, 20% Elevage - 12 months in stainless steel in contact with the lees. Alcohol - 13.5%

Wine Making This wine was made with special organic processes to maintain absolute purity in the winemaking and eliminate the need for added sulfites. By using activated oxygen machinery to maintain the highest levels of cleanliness and hygiene in the winery, we were able to make this wine without any sulfites other than the ones present from the natural yeast fermentation. This wine spends twelve months on the lees to give it a body and depth full of natural antioxidants that make it gener- ous, long-lasting, and a pleasure to drink.

Tasting Notes This blend of Grechetto and Trebbiano Procanico is a pale golden color. On the nose it has notes of cream, raw nuts, wildflower honey and distinct minerality. On the palate It is very dry, with a tannic character coming both from the minerality and the Grechetto Grape and has flavors of white stone fruit, yellow plums, herbs and bitter almond.

Highlight on Umbria Umbria is the only region that is completely land-locked within itself; every other region borders another country or body of water. Because of this, Umbrian wine is uniquely Italian. This wine is made near the town of Orvieto, home of the Etruscans – an ancient people who pre-dated the Romans and were incredibly advanced in their production of wine – even trading the fruits of their labor as far as mod- ern-day France. Given its ancient viticultural history, delicious cuisine and revival of local , Umbria is one of my favorite little-known areas in Italy. Joe Campanale – August 2015
