Proof Wine Club Allocations W I N E C L U B S E L E C T I O N S F E B R U A R Y 2 O 2 1 F R O M T H E E D I T O R S Greetings Wine Club Members! We're mixing it up this month. Excited? You should be. ALL tiers for their white selection this month will be receiving Riesling! From either Austria or Germany, all of these bottles can be held on to for a bit in your cellar (or for a lot if you're Tier 3). And now, on to the reds! Tier 1: We've got a lovely Côtes-du-Rhône for you that just can't stop reminding us of Grandma's homemade red berry jam. Yuum. Tier 2, you're getting Zweigelt! From an ex European BMX champion gone natural wine guru. We can't make this stuff up. Tier 3 members, aside from your age-worthy Riesling, you're receiving a lovely Blaufränkisch from Willamette Valley, Oregon that we promise will stimulate your taste buds as it just keeps getting better and better with every sip. As always, thank you for being a part of the Proof family! Cheers, Jess and Megan 2 / 2 0 2 1 W I N E C L U B A L L O C A T I O N S - T I E R 1 - Salomon Undhof Von den Terrassen Kremstal Riesling 2018 (White) Producer: Salomon Undhof Region: Niederösterreich, Austria Appellation: Kremstal Grape: Riesling Vintage: 2018 Farming: Sustainable Aging: Stainless steel with native yeasts Tasting Notes: Pale straw yellow in color, the nose is a lovely arrangement of rose petals, violet, green apples, orange peel, pear and peach. The palate mimics the nose but also demonstrates flavors of apricot, stone and honey. This is so refreshing, dry and very drinkable, but yet elegant, with great acidity, balance and harmony throughout. Terroir & a Biodynamic Way of Life: Fraternal twins Bert and Fay Salomon are the ninth generation to take over their family’s historic winery, a pillar of quality in the Wachau Valley since 1792. They are one of the oldest family-owned wineries in Austria. They literally have almost 230 years of wine-making history! Like their father, Fay and Bert believe that great wines are made from living soils and don’t "wear makeup". Their belief: the path to a beautiful bottle is through meticulous, environmentally conscious care in the vineyard and thoughtful work in the cellar. Cover crops are grown between rows to maintain vital soils and encourage biodiversity, and under-vine management is done manually, without the use of sprays (there has been no use of herbicides in more than a decade). Sheep’s wool is hung to repel hungry deer from the nearby forrest and natural pheromones are used to prevent destruction by a local butterfly. Situated in the picturesque town of Stein on the Danube River, all the grapes are harvested traditionally by hand only. The Von den Terrassen Riesling comes from the younger Riesling vines, up to 25-years-old, planted on primary rock (gneiss) terraces. Seasonal pairing: In general, pair lighter, crisper Rieslings with delicate (or raw) fish. Try some sushi with this one. Recommended drink window: Drink now through 2023. 2 / 2 0 2 1 W I N E C L U B A L L O C A T I O N S - T I E R 1 - Mas de Libian Côtes-du-Rhône Bout d'Zan 2019 (Red) Producer: Mas de Libian Region: Rhone Valley, France Appellation: Côtes-du-Rhône AOC Grapes: 75% Grenache, 25% Syrah Vintage: 2019 Farming: Biodynamic & organic Aging: Nine months in large oak barrels Tasting Notes: The "Bout d'Zan" translates to "bit of Zan" which playfully uses Jean-Pierre's childhood nickname referring to his small frame and tanned skin. A great rustic red, this is full of bright, juicy, concentrated red and black fruit flavors of cherry, blackberry and red berry jam, grounded in contrasting earthy tones. There's a peppery spice to it, along with licorice and leather notes on both the nose and the palate. A swish of the wine reveals an appealing texture and a great mouthfeel. It's fresh and inviting and the perfect introduction to this awesome Rhône producer. Terroir: A mosaic of different terroirs including clay-limestone, river rocks and sand. Harvest is done entirely by hand with very careful sorting, cluster by cluster. The Thibon family acquired the Libian property in 1670, and in 1970 Jean-Pierre Thibon decided to wholly focus on wine production. Since then the estate has grown to 25 hectares of vineyards and eight hectares of nourishing land planted to olive trees, vegetable and flower gardens, and grains to support the organic and biodynamic viticulture. The Mediterranean climate there enjoys hot, dry summers, little rainfall and mild winters, which helps contribute to the richer and brighter Côtes-du-Rhônes. Seasonal pairing: Spiced Marinated Lamb Chops with grilled vegetables. Or a simple slice of pizza. Recommended drink window: This will age nicely through 2027 but can (very easily) be drunken now. 2 / 2 0 2 1 W I N E C L U B A L L O C A T I O N S - T I E R 2 - Eva Fricke Riesling Lorch Trocken 2018 (White) Producer: Eva Fricke Country: Germany Appellation: Rheingau Grape: Riesling Vintage: 2018 Farming: Organic Aging: Seven months on the lees Tasting Notes: This cuvée is quite impressive for a dry Riesling (7.5 g/l residual sugar, also "trocken" means dry in German) with a light petrol note in the nose up front that gives way to peach, citrus and minerals. The palate is light and silky, but also juicy, with moderate acidity, a dense structure and a flavor profile that matches the nose. It incorporates wet slate, pear, grapefruit and a mineral-salty finish, which is harmonious, insanely long and so inviting. So much so that you might just feel the corners of your mouth rise before taking another sip. Only 25 cases of this were imported into the U.S. (!) Terroir: Lorch is the westernmost wine-growing town in the Rheingau region of Germany, near where the Rhein river joins the Nahe river. Eva Fricke organically farms 10 hectares of vineyards in the village of Lorch, about one hour west of Frankfurt and 30 minutes east of the heart of the Mosel Valley. Lorch’s slate- and quartzite-rich slopes offer the perfect climate, aspect, and mineral composition for producing world-class Riesling. Eva is a known Burgundy enthusiast and she vinifies her wines with a noticeably ‘Burgundian’ approach, which can definitely be felt in this cuvée. Seasonal pairing: Swordfish on the grill, panko-crusted mahi with mango salsa, or a Thai glazed chicken breast. Recommended drink window: Drink now through 2028. 2 / 2 0 2 1 W I N E C L U B A L L O C A T I O N S - T I E R 2 - Weingut Beurer Zweigelt 2017 (Red) Producer: Weingut Beurer Region: Wurttemberg, Germany Appellation: Remstal Grape: Zweigelt Vintage: 2017 Farming: Biodynamic Aging: 11 months in oak Tasting Notes: An absolute gem from this particularly natural German producer. This wine is clean, lean and crisp with hints of blackberry, plum and other dark fruit on the nose. It actually drinks like a white in terms of crispness. The palate is smooth, a little spicy with a slight sparkle. It's medium-bodied with mild tannins; savory dried herbs round out the finish. It's picture book Zweigelt: pure, elegant, viral and with such great finesse. Terroir: An ex European BMX (cycling) champion gone natural wine guru, Jochen Beurer is making some killer wines in Swabia, Germany. Jochen is one of the deepest thinkers about the environment beyond the vineyards, integrating bees, vegetation and animals into his vineyards as part of his biodynamic way of life. He is a man who does things very much his own way, and that way yields some of the most remarkable, terroir expressive wines we know. His Zweigelt is planted on the Remstal hills, from vines on the ‘other’ side of valley, on Bunte Mergel (marl, a lime rich clay) soils. Zweigelt?? It's a crossing of Saint-Laurent (a highly aromatic dark-skinned varietal) with Blaufränkisch (inky magenta in color with aromas of violets, herbs and spices), created in 1922, and is the most widely planted red-wine grape in Austria. Seasonal pairing: Zweigelt is one of those rare reds that pair well with fish, particularly shellfish. Try pairing it with fish cooked in wine or a tomato-based sauce to really bring out the flavors. Also a great BBQ wine. Recommended drink window: Drink now through 2024. 2 / 2 0 2 1 W I N E C L U B A L L O C A T I O N S - T I E R 3 - Stein Riesling Palmberg Spätlese Trocken 2018 (White) Producer: Stein Region: Mosel-Saar-Ruwer Appellation: Mosel Grape: Riesling Vintage: 2018 Farming: Organic Aging: At least 12 months on the lees Tasting Notes: You're going to sink your teeth into this one. A bone dry (trocken) yet incredibly rich spätlese from one of the steepest vineyards in the world. You really feel the late harvest (spätlese) in this one: honey, sweet apples, pineapple, peach, apricot, dried herbs and lemon peel. On the palate your tongue is coated in another creamy bath of honey, completely integrating ripeness with great acidity with a ruthless cut of minerality.

So with the help of friends and family we procured and carried this collection over. German Wine - fun facts • 90% of German reds are consumed in Germany. • Very few wine retailers in America have any German red wines. • Most of the largest red producers are still too small to export to USA. • You can pay $$$ for a fine French red or drink German reds for the entire year. • As vineyard owners die they split the vineyards between siblings. Some vineyards get down to 3 rows. Siblings take turns picking the center row year to year. • High quality German Riesling does not come in a blue bottle! Vineyards: 90+ hectares (222+ acres) www.kwselection.com/wineries/leohillinger.pdf Varieties: Grüner Veltliner, Welschriesling, Chardonnay, Pinot Gris, Sauvignon Blanc, Gelber Muskateller, Zweigelt, Blaufränkisch, St. Laurent, Merlot, Syrah, Cabernet Sauvignon and Pinot Noir Wine Region Burgenland: It is a unique wine-producing region in an Austrian context as the most recognizable wines produced here are based on white and red varieties almost at same level. On top, sweet wines are produced based on the naturally occuring Botrytis Cinerea. This region produces by far the biggest amount of red wine in Austria. This is the reason why it is also unofficially called the red wine quarter of the country. The winery Hillinger is in the north of Burgenland, between the Leithaberg and the lake Neusiedl. This subregion is known for it’s unique whites and sweets. This can be attributed to the plentiful sunshine and the cooler nights the region experiences which averages of more than 2000 hours per year Soil and Climate: The primary rock is slate and lime. The perfect vineyards for our Pinot’s are limestone and brown soil and for Blaufränkisch on lime. Hot, dry summers and cold winters express fruitiness and retain acidity in the wines combined with the temperature-regulating influence of the lake Neusiedl, guarantees long vegetation periods for full ripeness of grapes. High humidity and autumn fog and drying sun during the day helps to develop botrytis cinerea, which forms the basis for our top quality sweet wines, such as TBA Small Hill Sweet and TBA Hill 3. The success story of the Leo Hillinger wine-growing estate...With a 90+-hectare area under cultivation in Austria, the Hillinger wine-growing estate is one of the largest high-quality wine producers in Austria.

  • Heinrich, `Red` Burgenland Zweigelt/Blaufränkisch/St. Laurent 2013 Neusiedlersee, Burgenland, Austria
Heinrich, `Red` Burgenland Zweigelt/Blaufränkisch/St. Laurent 2013 Neusiedlersee, Burgenland, Austria PRODUCER Gernot Heinrich has 100 hectares of vines in Gols, Burgenland, which is Austria's easternmost province, lying only a few kilometres from the Hungarian border. After graduating in viticulture from Klosterneuberg, Gernot's vinous travels in Bordeaux, Spain, California and Italy convinced him that his best approach in this continental climate was to use indigenous grapes such as Blaufränkisch, St Laurent and Zweigelt to make the highest quality, most characteristic wines he could. VINEYARDS The fruit for this wine is sourced from both sides of Lake Neusiedl in Burgenland. On the west side of the lake, the vines are found on the limestone and slate slopes of the Leithagebirge. On the east side of the lake, grapes come from the gravelly Parndorf Plateau and the humus-rich Heideboden. St Laurent is grown on the higher slopes and Blaufränkisch and Zweigelt on the heavier soils lower down. The oldest vines are 30 years old. Gernot has been farming his vineyards according to biodynamic principles since 2006 and achieved certification in 2009. VINTAGE Burgenland had beautiful weather throughout 2013, with heat waves and periods of rainfall. The grapes took their time to ripen and those winemakers who were brave enough to wait patiently were rewarded with beautifully ripe ones. Blaufränkisch was the only grape variety in Burgenland to be affected by coulure. After the two highly ripe vintages of 2011 and 2012, which delivered monumental red and white wines, the 2013 vintage almost perfectly represents the "Austrian ideal" of freshness, raciness and animated drinkability.

Artisanal Cellars artisanalcellars.com [email protected] Weingut Steininger Zweigelt Sekt Winery: Weingut Steininger Category: Wine – Sparkling - Red Grape Variety: Zweigelt Region: Langenlois/ Kamptal/ Austria Vineyard: Dechant Feature: Certified Sustainable Austria Winery established: 1989 Product Information Soil: Deep loess Elevation: 220 meters (722 feet) Age of vines: 15–25 years Vinification: The grapes are hand-harvested in the middle of October with best physiological ripeness. The base wine was aged in large used barrels. After the second fermentation, the sparkling wine ages for 24 months on the yeast. The goal is the underline the varietal character. Tasting Notes: Dark red color, fruity taste of cherries, plums and herbs. Red sparkling wine – unconventional and rare. Very pleasant and seductive in its dry finish. A niche product. Zweigelt is the most important red grape in the area, Professor Zweigelt lived in Langenlois! Sekt: In 1989 Karl Steininger started with the traditional bottle fermentation for his Sekt. He created an Austrian sparkling wine philosophy by using only typical Kamptal varieties. In the classic line the secret of success is based on two factors: on the one hand the high quality of the base wines, which present themselves clear, fruity and aromatic and on the other hand the gentle second fermentation in the bottle. Both factors together match the character of each variety and the flavor profile of the base wine. Category ”Reserve“: The grapes for the sparkling wines of the category ”Reserve“ must be harvested and pressed in a single Austrian federal state. They also have to be harvested by hand. Further the sparkling wine must be produced according to the traditional method of bottle fermentation.

During flowering, the weather was very hot. At the end of August the weather changed completely; temperatures dropped and there was a lot of rainfall during harvest. At Heinrich a lot of time was spent in the vineyard to accurately select the grapes, and thus 2014 has given wines with much finesse and freshness. VINIFICATION The grapes were hand harvested and sorted in the vineyard at the beginning of September. All movement of the juice was carried out by gravity.

  • DW Blauer Zweigelt Terrassen E
BLAUER ZWEIGELT TERRASSEN 2017 Origin and Terroir Grapes for Blauer Zweigelt Terrassen were carefully hand-picked from various small vineyards throughout the Wachau valley. The majority of the grapes come from the villages of Weissenkirchen, Wösendorf, Joching, Rossatz-Arnsdorf and Mautern. The Zweigelt vines grow mainly on steep walled terraced vineyards with primary rock and partly on loess terraces with heavier sandy soils. Grape Variety Blauer Zweigelt, also known as Rotburger, is a typical Austrian grape variety and a crossing of Blaufränkisch and St. Laurent. In Austria, Zweigelt is mostly vinified to fresh, fruity and appealing red wines. Only 6% of Domäne Wachau’s total production is red wine (mainly Zweigelt and some Pinot Noir and St. Laurent). Classification Blauer Zweigelt Terrassen is not represented as a part of the three quality categories Steinfeder, Federspiel and Smaragd since these categories only apply to white wines and rosé wines. According to Austrian wine law, this red wine is categorized as a “quality wine from Wachau“. Vinification Zweigelt grows easily and most typically produces uncomplicated, easy drinking wines. In order to cultivate high quality grapes, ridged crop management in the vineyards is essential in order to keep yields down and flavor concentration high. The unique growing conditions on the terraces also help restrict the yields without much human intervention. The grapes for this Zweigelt were harvested at the beginning of October with an average yield of 5.000 kg/ha. They were then destemmed, crushed and fermented by applying classical mash fermentation with 15% juice extraction for several days. Malolactic fermentation and maturation followed in big wooden casks in order to achieve balance and round-off tannin.
