Soekartooo) l-avlinesiaoo") dan Iiah Mulianah") A"ESTRAK Penelitian kerupuk dengan menggunakan 3 ienis ikan yaitu ikan remang(Congresox talabon), ikan kekap (Lates calcarifer) dan ikan belida (Nonpterus cbiktus) dengan formulasi 0;25;40 dan 50o/o telah dilakukan dengan tujuan untuk mengehhui pengaruh- nya delam pengembangan volumetrik, kerenyahan dan rasa krupuk. Hasil penelitian memperlihatkan bahwa ienis dan persentase ikan berpengaruh nyata terhadap volume pengembangan, kerenyahan dan rasa kerupuk, Ikan remang dengan persentese 25o/o memberikan volume pengembangan dan nilai kerenyahan tertinggi dibandingkan dengan ikan kakap dan ikan belida pada persentese ikan yang sama dan tidak iauh ber- beda dengan kontrol. Peningkatan persentase ikan meniadi 4Oo/o dan 5Oo/o m€nurunkan volume pengembtngan dan kerenyahan tetapi meningkatkan rasa kerupuk. An experiment on effect of species and concentration of fish meat on the volumetric expansion, crispiness and taste of the fish crackers has been carried out. Meat of thrce fish species i.e. yellow pike conger (Congresox ulabon), red snapper (Lates calcarifer) and featherback (Notopterus chilatus) et level of 0; 25;40 and 50% were used. The result showed.that fish meat concentration significantly influence the volumetric expansion , crispiness and teste of fish creckers. Yellow pike conger meat showed the highest volumetric expension compared to red snapper and featherback meats at the same concentration of 25o/o. -
