Research indicates that food could be viewed as a peak touristic experience and a major tourist attraction. The main purpose of this paper is to identify and evaluate the significance of food tour- ism for Turkey and to create a number of innovative regional food related itineraries that would be replicable. Four main results emerged from the analysis of the interviews. The major recommendations from the study include developing an action list for the Turkish Ministry of Tourism, developing new food tourism itineraries and creating an official food guide. The findings of the study could be used as a base for further exploring the application of new technologies in food destination sectors. To date, research has focussed on perceptions of authenticity in consumers’ patronage of businesses, brands, places and experiences. However, this research takes a “producer” perspective by examining the meaning and construction of authenticity by commercial enterprises, through a qualitative, interpretive examination of restaurants serving mainly Greek food in both the UK and Greece. Restaurateurs (n=11 in the UK and 8 in Greece) were theoretically sampled. Data from in- depth interviews was analysed according to constructivist grounded theory conventions. The results indicated that the core concept linking the restaurateurs was “hospitality”. This was variously achieved by hiring staff of the same ethnicity with the restaurant’s theme, developing a menu, sourcing ingredients and creating an ambiance that reflected the authenticity bias of the restaurateur, which was either indexically or existentially oriented. The strategic implications are discussed.     © Republic of Turkey – Ministry of Trade, 2019 0 SUGAR AND CHOCOLATE CONFECTIONERY PRODUCTION The sugar and chocolate confectionery sector in Turkey is historically based on the production of traditional Turkish confectionery products such as Turkish delight and halva. The Turkish confectionery sector has always been dynamic thanks to Turkey's young and growing population, and traditional habits of consumption. Sugar confectionery plays a great role in Turkish tradition, being widely served as gifts during religious festivals, wedding ceremonies and celebrations. It is also a common choice of present when visiting family or friends. This traditional popularity means sugar confectionery performs much better in Turkey than in many other countries. However, despite their popularity, traditional confectionery products are strongly challenged by other confectionery products, particularly chocolate confectionery. Chocolate confectionery is one of the most dynamic product in Turkey thanks to several factors, such as the young and rapidly growing population and their growing demand for chocolate with toys, developing distribution channels, manufacturers' heavy advertisements, new product developments and increasing multinational investments. The most popular types of chocolate confectionery are countlines, tablets and boxed assortments. Manufacturers have successfully diversified the number and type of products available. The gum sector is another dynamic area within confectionery. The Turkish gum market is very competitive thanks to presence of powerful local and multinational companies, which have been operating for a long time in the market. Production of sweet gum, sugar-free gum, functional gum and bubble gum has steadily increased since 2000. Turkey has the advantage of being self-sufficient in sugar which is one of the main confectionery ingredients.

It is influenced by the mainly Arabic and Asian heritage of the Turkish tribes, but also from the Western culture. The Ottoman Empire played a major role in the great diversity of it‘s culture. A depiction of the Ottoman Empire and its dependencies in 1683, with indication of territory held prior to that date [1]. 19.03 At the beginning, the tribal Turks from Central Asia lived as nomads via animal husbandry, so naturally their food consisted of a variety of milk products, wheat flour baked goods and Kebab (grilled meat). A Yörük shepherd in Ala Dağlar, Taurus Mountains, Turkey [2]. 19.04 As time progressed and the tribes grew and interacted more with each other, they settled more and more of Anatolia and big trad lines coming from the West and East were formed, e.g. the famous Silk Road spanning up to East Asia. From there, the influence of other cultures grew, settlements were created and they began practicing agriculture in a broader way.
