With its enormous geographic and cultural diversity across the archipelagos, it is evident that Indonesian cuisine is rich in variety and taste. As such, food can be utilised as a strategic means to boost the tourism industry of the country. In the past 5 years, the Indonesian government has given a great support for the development of culinary tourism as one special interest tourism sector that is promoted extensively to the international market. Promoting Indonesian culinary tourism should not be merely exposing the ample varieties of the traditional food that Indonesia has, but more importantly, telling the market about the socio-cultural values behind the food itself. This study aimed to portray how Indonesian food culture has been shaped, developed, and held as the value embedded in the society and has been passed from one generation to the next. All Sarkawi followers are Islam; however their neighborhood community called them Sarkawi followers, why? It is because they have different faith, which is faith in forbidden to eat goat meat and penance for those being death. Forbidden of eating goat meat caused by belief that come up from the story told by Sarkawi and penance is performed by ritual at the center (house of Sarkawi leader). Melimpahnya berbagai jenis ikan air tawar penghuni sungai dan telaga membuat pola makan orang Sunda terbentuk lebih mengutamakan sayuran dan protein yang berasal dari ikan air tawar. Seiring berjalannya waktu, banyak perkembangan yang terjadi pada kuliner khas Sunda terutama di kota besar seperti Kota Bandung. Perkembangan kuliner khas Sunda yang beraneka ragam mulai dari makanan pokok, selingan, hingga makanan sepinggan menjadi salah satu aset kebudayaan yang dimiliki oleh masyarakat suku Sunda yang patut untuk dilestarikan. Salah satu cara untuk melestarikan kuliner khas sunda adalah dengan mewariskannya secara turun temurun kepada generasi selanjutnya. Pelestarian kuliner merupakan salah satu cara untuk menjaga kebudayaan nasional . Budaya nasional adalah budaya yang sudah ada dan mengakar pada suatu bangsa. Kebudayaan ini telah ada sejak dahulu kala dan terus diwariskan kepada anak cucu agar tetap lestari tidak termakan perubahan jaman. Apabila melaksanakan pelestarian budaya, artinya sudah menjaga harta dan aset yang dimiliki oleh bangsa. Masakan Sunda juga menjadi salah satu daya tarik bagi para pengusaha untuk menjadikannya salah satu peluang usaha karena kekhasan cita rasanya, namun banyak pengusaha yang meninggalkan kesan tradisional dalam masakan tersebut sehingga banyak terdapat perubahan-perubahan yang menjadikan masakan tersebut tidak lagi memiliki ciri khas budaya sunda, kemudian makanan tersebut dikenalkan pada masyarakat, target yang paling mudah terkena dampaknya adalah masyarakat usia remaja. Usia remaja yaitu usia antara rentang 15-24 tahun merupakan usia yang sangat aktif, dimana pada usia ini orang lebih banyak mengeksplor hal-hal baru atau sesuatu yang instan.

Pangan tradisional adalah pangan yang sudah turun temurun dihasilkan atau dikonsumsi, menggunakan bahan lokal dan diolah secara khas di suatu daerah. Penelitian ini bertujuan untuk mengidentifikasi jenis produk pangan lokal dan menganalisis sifat makronutrien yang terdapat dalam makanan tradisional di Kabupaten Kepahiang, Analisis penelitian ini menggunakan analisis deskriptif. Hasil analisis menunjukkan bahwa pangan tradisional di Kabupaten Kepahiang terdiri dari 18 jenis makanan yaitu 8 jenis jajanan, 4 jenis lauk pauk dan 6 jenis minuman. Analisis makronutrien pada lemang mengandung 3,98 % protein, 4,93% lemak dan 23,45 % karbohidrat. Serawo mengandung 3,87 % protein, 5,12% lemak dan 22,89 % karbohidrat, sedangkan bajik mengandung 3,67 % protein, 5,45% lemak dan 22,54% karbohidrat. It is a kind of traditional celebratory dish that is usually served during special events or celebrations in Indonesia. Nowadays, the philosophy of tumpeng has been forgotten by the millennial generation in the 21st century. Thus, the researcher wants to find out and describe the symbolic meaning behind the tumpeng and classifies the kinds of tumpeng. This study used the theory of semiotic from Charles Sanders Peirce (2007) focusing on three-dimensional or triadic and trichotomy system. This research used qualitative approach with the methods of observation, interview, and document analysis. The result of the study showed that tumpeng has abbreviation as tumindak lempeng that means we should be through this life on the straight path, the path of those upon whom God has bestowed favor. The peak of cone-shaped rice represents the only one God, while the side dishes surrounding the base of the cone represents the creations of God like human being, animals, plants, etc. Therefore, we should worship to the Almighty so that we can be protected from all sorts of calamity and misfortune that can happen on this earth by serving tumpeng as form of supplication to God. Then, the researcher reveals 56 names of tumpeng that spread on Java Island in Indonesia country and the function of tumpeng can be different depend on shape, color, and side-dishes surround it.
