Finally, my thanks go to all the people who have supported me to complete the research work directly or indirectly. viii Abstract Bruising of potato tubers leads to losses of 20% of the UK annual crop. The relationship between bruising, tuber physical and mechanical properties, and composition of phenolic acids, tyrosine and cell wall monosaccharides was explored in this thesis. Three field trials were undertaken and the varieties Lady Rosetta (LR), Maris Piper (MP) and Russet Burbank (RB) were grown in replicate field plots. Field trial 1 was designed to investigate the effect of harvest time and defoliation; field trial 2 was designed to investigate the effect of harvest and storage time and a third field trial was undertaken to investigate the effect of nitrogen application to soil (in variety LR only). Bruising was induced using a falling bolt for severe bruising and bruising index assessment. Weight, specific gravity and oxidative potential were also measured. Cortex and skin mechanical properties were measured using a TA.XT2i Texture Analyser. Phenolic acids, tyrosine and cell wall monosaccharides were analysed chemically using HPLC. The results from the field trials showed that tubers harvested ~ 150 days after planting varied in susceptibility to bruising for MP (11-60%), LR (14- 52%) and RB (50-92%). Earlier harvest (98-139 days) showed lower incidence of bruising for MP (0-16.7%) and LR (17-23%) but not always for RB (0-66.7%). Late harvest (180 days) presented high incidence of bruising for all varieties varying from 81-88%. Short storage periods (until January) did not increase bruising significantly. Long storage periods (March) increased incidence of bruising for all ix varieties, and is associated with higher specific gravity, higher tissue deformability and higher phenolic acid and tyrosine levels. Potato plants defoliated 49 days before harvest showed lower bruising incidence than undefoliated samples, but had significantly (p<0.05) lower weight. Application of nitrogen increased weight of tubers and was associated with higher bruising incidence of LR when tubers were harvested later than 92 days after planting. Tyrosine levels or specific gravity were not always associated with highest bruising incidence. Hot dry conditions during tuber development (observed in field trial 2) was associated with early plant senescence and high tuber bruising incidence. In conclusion, bruising is affected by agricultural and post-harvest practices, and is determined by a number of physical and biochemical factors that vary between variety. The factors determining bruising seem to be dependent upon variety and the maturity of the tubers at harvest. Tucker Introduction This glossary has been prepared as a companion to A Potato Chronology. In that work, a self-imposed requirement to limit each entry to a single line forced the use of technical phrases, scientific words, jargon and terminology that may be unfamiliar to many, even to those in the potato business. It is hoped that this glossary will aid those using that chronology, and it is hoped that it may become a useful reference for anyone interested in learning more about potatoes, farming and gardening. There was a time, a century or more ago, when nearly everyone was familiar with farming life, the raising of potatoes in particular and the lingo of farming in general. They were farmers themselves, they had relatives who farmed, they knew someone who was a farmer, or they worked on a nearby farm during their youth. Then, nearly everyone grew potatoes in their gardens and sold the extra. But that was a long ago time. Now the general population is now separated from the farm by several generations. Only about 2 % of the US population lives on a farm and only a tiny few more even know anyone who lives on a farm. Words and phrases used by farmers in general and potato growers in particular are now unfamiliar to most Americans. Additionally, farming has become an increasingly complex and technical endeavor. Research on the cutting edge of science is leading to new production techniques, new handling practices, new varieties, new understanding of plant physiology, soil and pest ecology, and other advances too numerous to mention.

    Midwest Vegetable Trial Report for 2014 Evaluation of 18 Specialty Potatoes in Southwest Michigan Dr. Ron Goldy and Virginia Wendzel Southwest Michigan Research and Extension Center Benton Harbor, Michigan Objective The purpose of this trial is to evaluate the performance of 18 specialty potato selections for their adaptability to southwest Michigan growing conditions. This is the third year for evaluating specialty potatoes in an attempt to encourage farmer’s market vendors to make them part of their offerings. Summary Nineteen potato cultivars were evaluated for their production potential in southwest Michigan. A range in yield and tuber quality was found in the entries. Entries included russets, fingerlings, and other tuber types; therefore, the trial as a whole was not subjected to statistical analysis. The three russet tuber types (Rio Grande Russet, Canela Russet, and Russet Burbank) were subjected to analysis. Rio Grande Russet had a statistically higher total yield compared to Russet Burbank. The three entries were similar in other traits evaluated. Methods Fertilizer Prior to planting, polymer-coated urea (44-0-0), 0-0-60, 95% sulfur, and Granubor were broadcast and incorporated at 70, 200, 28, and 15 pounds/acre, respectively. After planting, nutrients were applied through a drip system using Nitro Plus (18N-5Ca-1.5Mg and a proprietary growth regulator) and 28% nitrogen (28-0-0). Nitro Plus was applied at 15 gallons per acre on June 16, 23, 30, and July 7. The 28% was applied July 14, 21, 28, August 3, 11, and 18 for a total nitrogen rate of 164 pounds per acre.

The growing number of these publications imply the importance of sensory based findings in achieving desired phenotype markers, consumer product acceptance, advertising claims, etc. It has been established that sensory tests are required and are of prime importance for future direction of research programs. Keeping this view in mind, a study was planned to investigate a number of potato cultivars for sensory language development, sensory profile, consumer liking and attitudinal responses. Potatoes have been a commodity of interest for some time due to nutritional and sensory reasons. Tuber quality traits from aroma, flavor and texture point of view are gaining importance in breeding and processing programs, thus, making it a need to develop a standard lexicon to provide common terminology for use in communicating between breeders, producers, marketers, and researchers. A highly trained panel developed, defined, and referenced a lexicon with 66 attributes using a consensus based descriptive analysis method with 55 cultivars of tubers. Samples were served mashed and air fried. Full lexicon includes five appearance attributes, eighteen aroma attributes, nineteen flavor attributes, twelve texture attributes, four mouthfeel and three aftertaste attributes.

Potato CultivarTrial Disciplines Agricultural Science | Agriculture Comments The trial was designed to compare and evaluate thirteen potato cultivars for their production capabilities and fresh market potential. This trial emphasized cultivars that would appeal to specialty markets with half of them having yellow flesh. Regional potato trials can be important since potatoes are very sensitive to their growing environment and not all cultivars are adapted to Iowa. A prominent example is Russet Burbank, which when grown in our warm sandy soils produces mostly knobby deformed tubers, even when irrigated. On the other hand,Russet Norkotah will produce a large yield of attractive tubers right next to it growing under the same conditions. Thus, cultivar selection is very important for growers trying to market quality product. This report identifies several cultivars having distinctive characteristics making them suitable for fresh marketing and it also reveals a few not adapted to this region.
