Bladnoch Adela 15 Year Old 46.7% Lowland “Adela”, meaning ‘noble’, signifies the richness and depth of flavour for our 15 Year Old malt matured in oloroso casks. Tobermory 21 Year Old 1994 Doug las Laing Bottling 51.5% Isle Of Mull A Douglas Laing bottling of 21 year old whisky from the on the Isle of Mull, aged in a refill hogshead from July 1994 to December 2015. It was bottled for the Old particular range with an outturn of 306 bottles. Tomatin 2004 Single Cas k (Moscatel) 56.8% Highland Distilled in 2004 and bottled in 2017 at , just 314 bottles were released. This has had a period in a barrique that previously contained Moscatel, a naturally sweet wine produced in a similar way to Pedro Ximénez sherry. Ardbeg perpetuum 2015 47.4% Islay Released during Feis Ile 2015 to celebrate Ardbeg’s 200th anniversary, this is a blend of old and young whisky, matured in both bourbon and sherry casks, delivering the classic Ardbeg note of cured meats, smoke and sea spray.

Glendronach 21 Year Old Parliament Highland Best Scotch Highlands Single Malt 2018 (World Whiskies Awards) This rich expression has been named ‘Parliament’ after the colony, or ‘parliament’, of rooks that have been nesting in the trees that overlook the for almost 200 years. Resolute flavours of rich Oloroso sherry, full bodied with smooth tannins. Balvenie Malt 25 Year Old Triple Cask Sepyside This incredible expression contains whiskies aged in traditional refill casks, first-fill ex-bourbon barrels and first-fill Oloroso Sherry butts, which have been matured for at least 25 years and allowed to marry for around six months in a marrying tun before being bottled. This emphasises the honeyed, fruit-forward style of the Speyside malt, with a touch of spice from the Sherry oak. 21 Year Old Awarded Irish Whiskey of the Year in Jim Murray’s Whisky Bible 2017 and 2018. It was awarded 2nd finest whisky in the world also by Murray. The oldest expression from Redbreast so far, this is a combination of malted and unmalted matured in a mixture of bourbon barrels and first-fill oloroso casks, resulting in a rich and complex whiskey. Scotland HIGHLAND If you roughly drew a line between Edinburgh and Glasgow, everything above that would be the Highlands. The Highlands is Scotland’s largest whisky producing area, covering to the north of Glasgow all the way to Wick in the north, not to mention the east and west regions excluding Speyside. Due to the large area, whisky in the Highlands is very diverse and offer a vast amount of different flavours so it’s hard to put a certain style on Whisky from this region. Typical notes from this region would be of peat, honey, and heather in a much more robust, dry body.

SPEYSIDE The region of Speyside is located in the north east of Scotland surrounding the , it’s seen to be more of a sub-region to the neighbouring Highlands because of the high density of distilleries in the area. It’s home to highest number of distilleries in Scotland with well over 60 at present. Due to the sheer volume of distilleries, there’s a huge amount of difference in the character of Speyside Scotch, from lighter grassy numbers, to the sweeter, richer, sherried type. The single malts from the area are notable for their refined smokiness and complexity.

Ireland Deriving from the term – meaning ‘water of life’ – even the word whiskey has Gaelic roots. One of Europe’s earliest distilled beverages, the first record of Irish whiskey dates back to 1405, around 90 years before it was first recorded in Scotland. Producing Irish whiskey evolved from a local pastime into an industry in 1608, when Northern Ireland’s Old Bushmills Distillery became the world’s first licensed whiskey distillery. Much of current production is distilled using a mixture of grains and unmalted barley, oats, wheat and rye. Triple distillation is also very common which results in a lighter, fragrant dram and a more approachable way to start drinking whiskey.

Sullivans Cove Australia Australia has had a long history of spirits and distilling dating as far back as the First Fleet when convicts and settlers landed in 1788, there was also 65,000 litres of rum to accompany them. Hard was so valued it even became the currency at the time, Australia’s first! But this burgeoning market wasn’t to survive. In 1839 the Distillation Prohibition Act banned colonial distillation altogether and it was to be another 153 years before anyone was granted a distilling licence Fast forward to 1992, Lark Distillery founder Bill Lark who not only resurrected Tasmanian distilling, but distilling all across Australia. At end of 2017, there were more than 120 listed distilleries in Australia with 31 of these in Tasmania. These New World Whiskies have been highly praised internationally, even so in 2014 Sullivan’s Cove French Oak Cask winning best World’s Single Malt, the first time a distillery outside Scotland or Japan had won the award.

Japan Japanese whisky owes its origins to Scotland. Masataka Taketsuru, whose family owned a brewery is known as the ‘Father of Japanese Whisky’. After studying chemistry in Glasgow and working closely at the , he then returned home and founded the Suntory with Shinjiro Torii. 10 years later Taketsuru went on to open his own distillery - Nikka Yoichi. Developments in whisky production including the use of a Coffeey Still, utilising Japanese oak to finish whisky and reduction of lipids in wort have resulted in a delicate and floral dram that encapsulates pure harmony and balance.
