Deze half harde Raclettekaas heeft een uitzonderlijke smaak en kwaliteit. Oorspronkelijk werd Raclette de Valais werd gesmolten door/voor de open haard. Deze bereidingswijze is sinds de jaren 50 vervangen door de racletteoven. Wal- liser Raclette AOP kan ook worden bereid in gourmetpannetjes.
