APPLE / CRANBERRY PIMM’S CUP Smirnoff Russian Vodka • Pimm’s #1 • Lemon Juice • AppleCran Syrup • Thyme Classic cocktail typically served as a fruit cup & English . There are several different types of Pimm’s & for the fall we are going with the spiced more festive apple/cranberry tea syrup. Perfectly balanced with fresh lemon juice & Smirnoff Russian Vodka to give her a kick & of , Pimm’s #1. Topped with to add a bubbly effervescence. Bubbly, fresh & super British (most popular in England). - Circa 1823, James Pimm (In collaboration with the Brickyard 2016) - (PERUVIAN) PISCO SOUR* Pisco La Caravedo • Lemon Juice • Simple Syrup Egg White • Angostura Bitters • Lemon Zest Claimed as the national of both Chile & Peru as it comes from Chilean & Peruvian . This drink is named after both the base spirit “pisco,” & the fresh juice & sweeteners associated with the cocktail, the “Sour.” The cocktail was created by an American who moved to Peru to work on the railroads & ended up opening Morris’ in Lima in the early 1900s. The recipe became extremely popular & underwent several changes until its perfection with the addition of egg white & angostura bitters. - Circa 1920’s, Victor Vaughen Morris, Lima Peru - GIN FIZZ* Citadelle Gin • Lemon Juice • Simple Syrup Rose Flower Water • Egg White • Soda Water “Fizz” is a variation on the older sours, with the addition of fresh & carbonated water. The Fizz became widely popular in the world between 1900- 1940. So popular that bars would actually hire a team of to take turns shaking the cocktail. With all the different variations, the “Gin Fizz” is the best known, containing a modest gin, lemon, , & carbonated water. We added an egg white & flower water. Brother of the Tom Collins, this cocktail is airy, light & refreshing! - Circa 1887, Jerry Thomas’ ’s Guide, hometown specialty of New Orleans – TEQUILA DAISY Arette Tequila • Lemon Juice • Raspberry Syrup • Soda • Sparkling Grandial In 1876, a Daisy cocktail was a specialized sour with a hint of orange cordial. It evolved before the 1900s to a raspberry or grenadine replacement. It’s essential DNA became spirit, soda & sour. We decided to spice it up using Arette Tequila, a house made raspberry syrup balanced with fresh lemon juice and topped with not just soda, but a dry sparkling wine as well. $ 1 0 NEGRONI (OR BOULEVARDIER) Bonded Bourbon / Citadelle Gin • Sweet Vermouth • Campari • Orange Twist The Negroni is a simple cocktail with great complexity containing equal parts of gin, Campari & sweet vermouth. This cocktail dates back to the Early 1900s in Florence, Italy. Count Camillo Negroni is credited with the creation of this beautiful cocktail by strengthening his favorite cocktail (the Americano) with the substitution of gin for soda water. When he described the drink he was quoted “bitters are excellent for your liver, the gin is bad for you. They balance each other.” Dry, Sweet & Bitter.

The Boulevardier: hardly a simple substitution of bourbon for gin. While keeping the bittersweet play between Campari & vermouth, the subtle difference completely changes the character from a "crisp & " Negroni, to deep & rich Boulevardier. - Circa 1919, Camillo Negroni, Florence Italy -

THE COFFEE COCKTAIL* Maison Rouge Cognac • Ruby Port • Chai Tea Syrup • Whole Egg • Nutmeg Sorry, no coffee in this cocktail. This classic first appearing in Jerry Thomas’ 1887 Guide is a fantastic drink. Named after the look of the cocktail, it makes an outstanding replacement for coffee as an aperitif or digestif. A very unique style of a Flip, and brother of the “Nog”, this classic utilizes the beautiful flavor of cognac paired with a healthy portion of ruby port. We take it a step further by balancing in our house made spiced chai tea syrup & tame it with a full egg. - Circa 1887, Jerry Thomas’ Bartender’s Guide - DARK ‘AND’ STORMY Light Rum • Ginger Syrup • Lime Juice • Soda Ginger Beer • Topped With Gosling’s Dark Rum It has been noted that the “Brits” have been making ginger beer since the 1700s. Legend has it that the drink was named when a royal sailor drinking this concoction raised his glass & claimed that this was a cocktail with “the color of a cloud that only a fool or a dead man would sail under.” It is a very simple, highball cocktail utilizing dark rum (the “dark”) and ginger beer (the “stormy”). We step it up a notch utilizing 2 types of rum (light & Gosling’s Dark-as in “Dark ‘N Stormy”) house made ginger syrup, fresh lime juice and of course Fever Tree Ginger Beer. Spicy, light and bubbly. A Mojito drinker’s Mule!!! - Circa 1700-1800s, Royal Navy -

L I G H T | C I T R U S Y | E A S Y CORPSE BRIDE $11 Fords Gin • Becherovka • Cranberry Liqueur • Lemon Juice • Absinthe For a fall spin on the classic Corpse Reviver #2 we use Fords Gin as a base, add in Becherovka to give it a winter spice, tame it with Leopold Cranberry Liqueur, balanced via fresh lemon juice & add in absinthe for a rich, complex flavor. Dry, spiced and acidic, this cocktail really defines Arizona’s fall season. PEAR DOWN $10 Copper City Bourbon • Spiced Pear Brown Butter Syrup • Lime • Nola Coffee To represent our local friends at AZ Distillery & Caskwerks: this is an easy drinking cocktail. We use the unlikely friends of lime juice & Copper City Bourbon, balance it with house made honey syrup & apple pie liqueur. We add in a touch of Nola Coffee to take the cocktail to another level. This cocktail is dry acidic & spiced, just like one of my favorite classics: The Lion’s Tail.

RYE’D THE BISON $13 Zubrowka Vodka • AppleCran Syrup • R&W Apricot Liqueur Lemon Juice • Punt e Mes Sweet Vermouth • Cinnamon Sugar Rim As a play off of the Polish Kiss Libation, this is for my Appletini drinkers, but with a fresh, fall twist. We use Zubrowka Polish Vodka & pair it with a house made spiced cranberry apple syrup & apricot liqueur. Balanced by fresh lemon juice, Punt e Mes Sweet Vermouth. It's finished with a cinnamon sugar, crusta style rim. SGT. PEPPER’S COCKTAIL* $12 Commerce Gin • Campari • Ancho Reyes Chile Chai Tea Syrup • Lemon Juice • Black Peppercorns • Egg White An easy drinking cocktail: local Commerce Gin meets the bittering agent of Campari. We enhance the botanicals in the gin with black peppercorns, ancho chili liqueur & house made spiced chai syrup balanced with fresh lemon juice and tamed with egg white. To finish, we add a smoky, bitter & citrus aroma.

F A L L F A V O R I T E S | S P I C E S | W I N T E R BUTTER RUM FOR IT* $13 Skipper Dark Rum • 151 Hamilton • Brown Butter Syrup • Ancho Chili Reyes • Mas Moles Bitters • Egg White • Pumpkin Porter • Nutmeg The idea here was to take one of my personal favorite winter cocktails (hot buttered rum), mesh it with my nerdy love of magic (butterbeer) & finally my ‘basic’ self (pumpkin spice)... Out came one of the coolest fall cocktails I’ve seen. We take 2 different types of demerara rum, over proof rum (Hamilton 151) & Skipper Dark Rum. We carefully blend it with Ancho Reyes (the spice) & a house made buttered brown sugar syrup (butter) with local mole bitters, pumpkin porter & egg white with nutmeg aromatics. CHAI TEA‐KI $11 Wray and Nephew Rum • Zaya Rum • Velvet Falernum • Chai Tea Syrup • Coconut Milk • Lime Juice • Figgy Pudding Bitters Tiki cocktails have been making a well deserved comeback in the valley. What better than a tropical getaway in the Desert? But when the temperature drops, how do we make the tiki fall friendly? The idea was to take fall spice notes of chai tea & local figgy pudding bitters. We add in a bright Caribbean twist with coconut milk, fresh lime juice balanced with Falernum & two types of rum (Zaya Aged Rum- for vanilla notes/ Wray and Nephew- to give a dry kick). The result is a fall spiced Caribbean paradise in a mason jar. ALEXANDER'S DOWNFALL $12 Maison Rouge VSOP • Tempus Fugit Cacao Sandeman Ruby Port • Mas Mole Bitters • Vanilla Ice Cream This isn’t meant to be a direct reference to Vice President Burr, but a reference to the Alexander cocktail. A modern classic created right here in #Chanhattan. We take the classic ingredients, amp them up by using Cognac (Brandy) paired with Tempus Fugit Crème de Cacao & Vanilla Gelato in place of cream. Take it to another level by bringing the delightful fruit notes of ruby port & dry spice of local mole bitters. DELICIOUS! E A S Y D R I N K I N ' SPICED APPLE‐JOE $10 Caskwerks Apple Pie • Montenegro • Demerara Sugar • Vanilla Tincture • Coffee • House Made Apple Pie Whipped Cream Sláinte! An Irish cheers to life & to health. Something proudly displayed on my wrist. Based on one of my personal favorite cocktails: The Irish Coffee, we use Caskwerks Apple Pie Liqueur paired with Amaro Montenegro & figgy pudding bitters to add complexity, Demerara sugar balances the piping hot coffee & house made cinnamon sugar/apple pie whipped cream tops her to perfection.

MONKEY SEEL, MONKEY DO $10 Monkey Shoulder • Chai Tea Syrup • Black Walnut • Grandial Blanc de Blancs If you know me, you know I love to show the versatility of scotch. So I took a unique twist on the cool classic Seelbach Cocktail. A sweet, complex bubbly cocktail, we utilize the easy malt smoke of Monkey Shoulder blended single malt scotch, pair it with a spiced chai tea syrup, black walnut bitters & top her with the wonderful dry bubbles (Grandial Blanc de Blancs). Slight smoke, dry, sweet, spice bubbles.

PORT OF THE SOLUTION $11 Sandeman Ruby Port • Punt e Mes Sweet Vermouth • Ancho Reyes R&W Apricot Liqueur • Lemon & Orange Juice • Celery Bitters The solution you’re looking for is our fall Cobbler. A Cobbler is a cool 19th century cocktail consisting of fortified wine, fruit & sugar sipped through a straw. We take Punt E Mes Sweet Vermouth & thoughtfully blend it with Sandeman Ruby Port and then pair them with Ancho Reyes for a needed spice character. Finally we add R&W Apricot Liqueur, fresh lemon & orange juice to round her out & serve her over crushed ice with a dehydrated apple slice & powdered sugar ...as smooth as the baby Jesus in velvet pants (a french idiom expressing potential pleasure).

JALISGRONI FLIP* $12 Pelotón Mezcal • Nola Coffee • Campari Agave • Egg White • Cocoa Chili Powder Hard to pronounce, I know. Jalisco meets a Negroni meets a Flip. This is one of my favorite cocktails & actually got me into World Class SW Regionals 2016. We take the deep, rich complexity and smokiness of Pelotón Mezcal & pair her with the bitterness of Campari & dry sweetness of Nola Coffee Liqueur & house made agave syrup. We use an egg white to smooth over the bitterness & finally top her with house made mole powder to add a sweet & spicy note.

MENTA‐BE $11 Maison Rouge VS Congac • Bulleit Bourbon • Fernet Menta Tempus Fugit Cacao • Black Walnut Bitters • Absinthe Rinse Andes mint: one of my favorite candies as a kid. Fernet, one of my favorite digestifs as a kid... of legal drinking age of course. Using the outline of the amazing Vieux Carré cocktail, we utilize the spice of Bulleit Rye carefully paired with Maison Rouge VS Cognac, add a spearmint (bitter & clean) flavor with Fernet Menta (get it??) & Tempus Fugit adds in our much needed cacao flavor. We finish it with black walnut bitters & absinthe to round her out.

GENEVER CONVENTION $15 Bols Genever • Meletti Amaro • Banana liqueur 4 Peaks Oatmeal Stout • Peychaud's Bitters Our much awaited smoked cocktail. We use the unique malt and botanical characteristic brought by Bols Genever. We bring out the malt by using a local stout (yes beer as an ingredient). We complement the botanicals with Meletti Amaro and finally add in Giffard Banane liqueur to accompany the citrus notes. If that wasn’t enough, we smoke the cocktail over a whiskey rock with a lovely mash of vanilla & apple wood.
