Spring: the season of renewal, growth and change. Spring is here, which means some of us may be embarking on a seasonal spring cleanse and detoxification program. A gentle yet thorough spring cleanse is an important part of integrative medicine, and by extension, Traditional Chinese Medicine (TCM). 12 PAPER MAGAZINE cover story

ccording to the principles of Traditional Chinese Medicine (TCM), the Spring and Fall seasons provide the best opportunities for deeply detoxifying and cleansing the body of harmful impurities that have collected in our organs and tissues over the past years. Fundamental TCM philosophy states that the energies which manifest as seasonal changes Ain our external environment are also reflected in the body. Spring offers a unique transitional period of time when internal energies rise and expand, providing movement and growth to carry us away from the conservation and stagnancy characterizing the energies of prior cold winter months. Since spring is characterized by the strong energy of growth and change, it is important to align ourselves with this new energy and let it flow smoothly within and around us. Engaging in exercise and movement, being in nature, and practicing relaxation techniques such as meditation, are all excellent ways to allow the new energy of spring to flow unobstructed. These profound balancing techniques can allow us to experience relief from congestive emotions and support the health of the liver (and consequently, the entire body) at the same time.

This expansive energy helps to move things to the surface and expel some of the body's burden of toxins in preparation for the high activity of summer, and this energy of upward growth toward the sun means emotions and issues stored deep within the past also have an opportunity to be released. With a little preparation and mindfulness, the forces of renewal and rebirth that are so pervasive during the spring season can be harnessed and used to greatly benefit the body, mind and spirit In TCM, spring is related to the wood element and to the liver and gall bladder, which govern the emotions of unresolved anger, frustration, and irritability. As such, the liver is a vital focus of the spring cleanse. The goal of a spring cleanse is to clear away any stagnation left over from winter, lighten up our systems, and make ourselves more vibrant and focused in preparation for the high activity of summer. Seasonal cleansing and detox offers us the important chance to decide what we want to let go of in pursuit of greater health and wellbeing.

Many foods have an essence that resonates with the liver. Among them are bamboo shoots, broccoli rabe, dandelions greens, eggplant, fennel, and scallions. Also, garlic, ginger and lemon have a warm essence that is very beneficial for liver function and health. Ginger tea can be added as a daily beverage to address any bodily cold conditions. Because sourness is the taste associated with the liver, according to TCM's Five Elements theory, sour foods can really help this organ. Including vinegar and sweet and sour recipes (like sweet and sour chicken) in the diet are also very good. As we detoxify the liver, however, we also need to make sure that other parts of the body - especially those involved in secretion and detoxification - are well supported. Otherwise, we may experience toxic backups with symptoms such as constipation, digestive disturbances, respiratory congestion, headaches, and others. With both of these goals in mind, the process of detoxification necessarily includes drainage and elimination. Drainage is the discharge of toxins and waste products from the organs into the system - while elimination is the actual removal of these waste products through the urine, feces, sweat, skin, and respiratory tract. According to Dr. Isaac Eliaz, a TCM practitioner and detox specialist, a spring cleanse can be as short as three days, or as long as 21 days, but 10 to14 days is optimal for most individuals. You might choose to start with a preparation phase, followed by a middle segment that is more intense, and wind down your cleanse by repeating the preparation phase. But however you plan your detox, a fresh healthy diet with a focus on organic, seasonal vegetables, should always serve as the foundation. Aim to increase your intake of organic green vegetables - whether steamed or raw - while limiting high sugar fruits during this time. And of course, boost your liquid consumption. This can be in the form of water, herbal teas, or vegetable soups or broth. Another excellent detoxification tool is a simple lemon and olive oil drink. This is a particularly good option for your spring cleanse, as the acidity helps to contract the liver, while the olive oil works on the gall bladder. It's easy to prepare: Simply cut one organic lemon into pieces (seeds removed) and mix with 1.25 cups spring water, along with a tablespoon of olive oil, in a blender. Then strain the contents, but not too much, as you still want some of the pulp to remain - and drink before bed on an empty stomach. Not only will this support the gentle discharge of toxins from the liver, but many people report that it improves their sleep as well. (For those with liver issues or a high toxic burden, however, Dr. Eliaz recommends to start the lemon and olive oil drink at a reduced dosage of only 1/4 the general mix.) Beyond diet, one of the best things that you can do to optimize your cleanse is to exercise. The beautiful spring weather provide us all with ample opportunity of outdoor activity - and a simple 30 minute walk each day can go a long way toward boosting your health, whatever time of year.

Chinese Medicine wisdom says the power is not in the practitioner but rather in the patient’s hands. A great deal of TCM treatment focuses on educating the person to understand how to take better care of himself or herself, how to really heal and create a life based on wellness - not just in the spring but all throughout the year. 14 PAPER MAGAZINE fortune

Getting a Chinese Driver’s By Stephen O’Regan, Dezan Shira & Associates License

o drive a car in China, you need a Chinese driver’s license. China does not recognize the International Driving Permit or other foreign driver’s licenses. Only foreigners with a valid residence permitT can apply for a Chinese driver’s license. Tourists therefore are not allowed to drive in China.

In 2012, the Ministry of Public Security published Rules of Motor Vehicle Driving License Application. This rulebook details the process that a foreigner needs to undertake in order to obtain a Chinese Driving License. Such foreigners generally fall under two categories: foreigners applying for a Chinese Driving License who already have a license in their home countries, and foreigners applying for a Chinese Driving License who do not have a foreign driving license. Foreign nationals who have a driver’s license from their home country can apply directly to their city’s Vehicle Administration Office to convert their license. Applicants need to bring the following documents: 1. Application form 2. Identification Certificate, Work Permit, Passport 3. Medical Report issued by designated hospital 4. Foreign driving license with Chinese translation 5. 1-inch full face photograph on a plain background

With these documents, the applicant must sit a theory test in order to qualify for the license. The theory test consists of 100 random questions out of 900. In order to pass, the applicant must correctly answer over 90 percent. In the larger Chinese cities, this test is offered in several different languages but for the smaller tier cities, applicants may have no choice but to sit the test in Chinese. However, it is permitted to bring a friend/translator to help.

After the applicant passes the theory test, the Vehicle Administration Office will issue a Chinese driver’s license within five working days. This license only applies to cars. To obtain a license for buses or trucks, the applicant will need to take a practical exam for that vehicle.

Those who do not have a current driving license from their home country have to go through essentially the same process as Chinese nationals. You apply to the Vehicle Administration Office, bring the documents listed above and take the theory test just like foreigners holding a driver’s license from another country. In addition, you will need to take classes and pass several driving examinations. This process, depending on what city and the number of applicants, could take anywhere from three months to one year.

Why visit Machu Picchu, all the way in Peru? Simple: Machu Picchu is one of the most important archaeological sites in the world.

Nestled on a small hilltop 7,000 feet above sea level between the Andean Mountain Range, the majestic city ruins soars above the glorious Urabamba Valley below. The Incan-built structure has been hailed as a “Lost City”, unknown until its relatively recent "discovery" in 1911.

Tangible evidence of the ancient Inca Empire at the peak of its power and achievement, Machu Picchu is a citadel of cut stone fit together without mortar so tightly that its cracks still cannot be penetrated by a knife blade. The complex of palaces and plazas, temples and homes may have been built as a ceremonial site, a military stronghold, or a retreat for ruling elites. The Inca had no written language, so they left no record of why they built the site or how they used it before it was abandoned in the early 16th century.

The 700-plus terraces preserved soil, promoted agriculture, and served as part of an extensive water-distribution system that conserved water and limited erosion on the steep slopes. When Machu Picchu was built some 500 years ago, incredibly, the Inca had no iron, no steel, and no wheels.

In 1911, a Peruvian guide led Yale University professor Hiram Bingham up a steep mountainside and into the history books as the first Western scholar to lay eyes on the “Lost City” of Machu Picchu. While indigenous peoples knew of the site, Peru’s Spanish conquerors never did - a fact which aided Machu Picchu’s isolation - and preservation - over the centuries.

How to Get There - Hiking The Inca Trail On his first trip to the site, Hiram Bingham walked for six days. Today, many choose to follow in his footsteps by hiking to the ruins on the legendary Inca Trail. The Inca Trail winds through the mountains and along the path of the ancient royal highway. More than 75,000 people make the trip each year. Visitors must sign up with an organized group to tackle either the classic four-day route or a recently added two- day option.

How To Get There - Riding The Iron Llama Hiking the Inca Trail is an experience like no other, but one no longer necessary. Train journeys from Cusco take only a few hours so day trips are now possible. Everybody knows about the health risks associated with living in China. Pollution, food safety concerns, city noise, and general sanitation are frequent worries among the local and expat community. Many of us are too busy complaining and worrying, however, that we fail to appreciate local advantages that actually promote health. At The Apollo Program, our nutritionist, Lily Phillips, teaches our clients how to leverage the health advantages that south China has to offer while attempting to minimize the disadvantages of living here. The following is a list of “superfoods”, cheaply and easily available in most grocery stores and wet markets. Take advantage by eating these local foods which would be expensive and difficult to find if you were living back home: Goji Berries are vastly rich in vitamin A, vitamin C, and iron. In preliminary studies by nutritional scientists at Tuft University, they found the berry to have possible benefits in increasing immunity and illness resistance. Other studies have noted possible improvements in mental well-being and calmness, athletic performance, happiness, quality of sleep, and feelings of good health for Goji eaters. Goji Berries tend to be dried and look like extremely red raisins. You can find them in supermarkets in the dried foods section, and in wet markets at nut and herb vendors. Jujube Fruit has been used for thousands of years in Traditional Chinese Medicine, and now, science in the west is starting to understand why, and corroborate many of the ancient truths. Jujube supports digestive, circulatory, and lung health, along with improving dry skin, liver function, and anemia! Jujube fruit is rich in antioxidants and is a good source of vitamin C, Potassium, and many other micro-nutrients. Chinese Yam in markets in the W est will be nearly impossible to find, possibly not fresh, and likely very expensive. However, here in China, you can find them at any wet market selling roots and potatoes. Even some supermarkets will have it. This hairy-skinned friend to your health is pronounced “shan yao” and is a great hormone balancer. The chemicals inside can help aging women increase their estrogen levels, and help aging men keep their testosterone high. It’s good for digestion, as it’s high in dietary fiber. Better late than never, right? The two biggest boxers of their era have managed to dance around each other for the better part of five years, amid lots of posturing and media-bait sound bites. It seemed that 2010 would be the year an undefeated Floyd Mayweather would take on who most considered the best pound-for-pound fighter in the world in Manny Pacquiao. That fight never happened.

Now, we get a still-undefeated but 37-year-old Mayweather against a 36-year-old Pacquiao who is 8-2 since that proposed 2010 fight fell apart. Faced with the goal of enhancing the hotel’s Western dining experience and introducing authentic Italian flavours to local diners through traditional dishes with a personal, innovative twist, Chef Andrea takes challenges in stride. After all, during his time in Australia, he has faced cooking for the Master of Australian Food and Wine event at the Parliament House in Melbourne. In 2008, he opened his own restaurant in Italy and only two years later, his restaurant was selected as “Restaurant of the Year” by the Accademia Italiana della Cucina. He has also been invited to the Italian Culinary Summit of Hong Kong in 2010 and 2012 and was the group executive Italian chef at Armani/Aqua and Armani/Privé in Hong Kong prior to his arrival in Guangzhou.

Chef Andrea believes that being “open minded” is the key element to being a chef when preparing world-class gourmet dishes. “ ‘Crazy' is the word that my family, friends and colleagues describe me. I think that is the best word to describe my attitude towards cooking,” Chef Andrea said.

Close it and let it cook on that side for around 45 min. taking into consideration • Open it and put the ribs on a flat tray, cover the ribs with the BBQ sauce made the size of the ribs. To keep this shape, you can use string around to attach it or cling film if you steam it. Two options for cooking: - First, the oven: in a pan, place the cabbage in tomato sauce, cover and bake for about one hour at 140'C. - Second, place the cabbage wrapped in cling film in a steamer over boiling water. Cover with a lid and steam for 30 minutes. Chef’s Tip: I used Napolitana tomato sauce and serve the dish with pan-fried mushrooms. Bon appetit!

TENUTE DETTORI Romangia, where Tenute Dettori is located, is a geographical area within Logudoro, which in the Sard language means “luogo dorato,” or golden place, since it is considered Sardinia’s most fertile area. Romangia lies between Porto Torres, Sassari, and Castelsardo, facing the Gulf of Asinara. It constitutes the Zona Storica del Cannonau, the classic growing area of the cannonau grape variety. Today, with its 1,500 hectares of mostly small independent grape-growers and wine producers, Romangia holds 18% of Sardinia’s total vineyards.

Pure Artisanal Wines All wines produced by Tenute Dettori are true “cru wines”. Each vineyard yields its own particular wine, they are are monovarietals: 100% cannonau, 100% monica, 100% pascale, 100% vermentino, 100% moscato. From each individual vineyard, a specific wine is produced: Dettori Bianco from vermentino; three separate cannonaus, Tuderi, Tenores, and Dettori; Chimbanta from monica; Ottomarzo from pascale; and Moscadeddu from moscato.

Due to strict quality controls, annual production is fairly limited, ranging from 20,000 to 45,000 bottles.

Tenute Dettori does not use any synthetic chemicals apart from sulphur: no added yeasts, no enzymes, or any other adjuvant either in fermentation or in maturation. Tucked away in between a Starbucks and a HSBC bank branch in a little plaza emerging out of the office blocks along JinSui Road in Zhujiang New Town is the latest burger and bar joint from Senses, the entreprenuerial guys who were behind 63 Steak & Burger at Canton Place a while back. Their new venture is called 63 Burger & Booze.

A fairly expansive outdoor patio, perfect for people-watching during Guangzhou’s balmy spring and summer afternoons and evenings, leads to a neon-bedecked psuedo-Americana-themed interior, with tasteful-rustic wooden furnishings, scads of flat-screen LED TV screens showing the latest Canto-pop music video, a handful of arcade gallery machines in a corner and whimsical trumpet light fixtures. The overall effect is bright, approachable and cheerful, encouraging guests to linger and drink - much like the youthful wait staff.

Nearby office rats will welcome the lunch food selection while the dinner one is so extensive, the menu resembles the Sunday edition of the New York Times. What’s equally extensive is the beverage selection, with everything from beers to cocktails to spirits, as well as non-alcoholic creamy shakes. What was a bit jarring in the menu though was that, among the main food categories listed, for instance, such as “Salads”, “Pasta”, was a section labeled “Dog”. Not to be taken literally, of course - these are hot dogs (duh) - but some diners may find this misleading label, missing just one helpful word “Hot”, offputting.

A unique cocktail to try is the Mate, a playful concoction made up of Jia Duo Bao herbal tea, of which 63 Burger & Booze says they are the first and only bar in the city to offer this drink.
