In the mouth, the mousse is soft on the palette with creamy fruit flavours and an elegant finish. 105. Legras et Haas, Cuvee Exigence NV Made from old vines Grand Cru Chardonnay and Pinot Noir, this champagne has an alluring nose of honeyed ripe fruits. The mousse is luxurious and on the palate is complex and sophisticated. A great balance between lightness and body, structure and finesse. ROSE CHAMPAGNE 1002. Legras & Haas, Rose NV This light orange beauty boasts red berries and candied spices. Vibrant and luxurious fruit with a hint of minerals and citrus zest. Lovely by itself and also excellent with food. 031. Larmandier-Bernier, Rose de Saignee NV Notes of red berries and a hint of sweet brioche; intense with bite, depth and precision! 107. Paul Bara, Special Club Rose 2005 Great perfume of raspberries, cherries and a hint of orange peel. Remarkably fruity and flavourful with a spice-tinged long finish. This is an extraordinary Rose! Paul Bara, Special Club 2002 The nose straw-gold blend of Pinot Noir and Chardonnay is dominated by baked apricot tarts. In the mouth it is full of opulent candied fruits with a hint of cardamom. Undeniably superb complexity and structure! 113. Paul Bara, Comtesse Marie de France 2000 An expansive floral-dominated bouquet of pear nectar and marzipan. This 100% Pinot Noir stunner is full of sweet orchard fruits and deeper notes of redcurrants. A very long gently-smoky, herb-laced finish. 114. Larmandier-Bernier, Vieille Vigne de Cramant |Vieille Vigne du Levant 2004 Made from their own extremely old Grand Cru Chardonnay vines in Cramant. An especially haunting bouquet with a creamy flavour revealing an extra-dimension beyond floweriness. SHERRY 045. Manzanilla, Barbadillo, Solear Fresh seaside aromas, with hints of raw almonds. Quite full, dry, well-rounded with hints of camomile and yellow chinese noodles. Long and flavourful. 046. Oloroso, Barbadillo, Cuco Harmonious and full-bodied. Slight hint of sweetness, with integrated chocolate and caramel. Very long and dry finish. 047. Pedro Ximenez, Barbadillo, La Cilla Lovely deep gold. Rich and luscious with stewed raisins and nuts. Divine when poured over our vanilla ice cream! WHITE WINE 033. Soave Classico DOC, Pieropan 2017 Veneto, Italy Trebbiano, Garganega A juicy white bursting with peaches and acacia honey. Smoke ash and earthiness add complexity to the yellow stone fruits on the finish. 1902. Crozes-Hermitage Blanc, Alain Graillot 2011 Rhone Valley, France Marsanne, Roussane Honeysuckle, roasted almonds and a hint of vanilla. Fresh and expressive with a lemony tang to the finish. Delicious! 1905. Chardonnay, Broadside, Wild Ferment 2016 Arroyo Grande (Central Coast), California Delicate honey, pear and green apple notes pervade this naturally fermented wine. The finish is crisp, bright and intense with a charming minerality that makes this a good pairing for rich food. 202. Pouilly-Fume, Domaine Cailbourdin, Cuvee de Boisfleury 2016 Loire Valley, France Sauvignon Blanc Expressive aromas of grapefruit, passion fruit, as well as rose petals. The soils here are brown with large quantities of small volcanic stone and the vines have an excellent southern aspect. Harvest is methodical and very selective. Soil: volcanic stony surface on clay and limestone soil. Surface area: several ha Vine density per hectare: 3,500 Training: Pergola WINEMAKING & AGEING: Made from 100% dried grapes, dried in wooden boxes for a few months. The grapes are then de-stemmed and fermented for 20 days in 25 hl stainless steel tanks before they are placed in their barrels for maturation. When they are pressed only a small quantity of must is obtained. This must is so dense and concentrated that it seems to have difficulty to come out of the grapes. After a few days of natural decantation this precious nectar is put into 228 liter barrels. The alcoholic fermentation is very slow and it takes many months. After this period the wine is racked several times so as to enable fermentation at the right point of balance between alcohol and residual sugar.     SAN ZENO RECIOTO DI SOAVE DOCG SOIL TYPE: Chalky, limestone and pebbly located on the valley floor. PRUNING SYSTEM: Short Veronese Pergola, Guyot GRAPE VARIETIES: Garganega 100% YIELD: 4 tonnes / hectare HARVEST: Grapes are harvested by hand in the first two weeks of September. WINE-MAKING TECHNIQUE: After careful selection, the grapes are hung up on vertical wires to dry in the fruit drying loft for 5-6 months. Toward the end of February, the grapes are pressed softly. Fermentation is carried out in barriques for 15 – 20 days. The wine is matured in barrique for a further 24 - 30 months. TASTING NOTES: Intense amber in colour, San Zeno is full-bodied with an aftertaste of bitter almonds which balances the soft, sweet, vanilla and sometimes spicy notes on the palate. The bouquet has aromas of bitter almond and dried fruit. Das Gut Valle Spinzo liegt im Roero, dem Gebiet nördlich des Tanaro-Flusses, der Langhe und Roero trennt. Die Weine des Roero sind auf Grund der sandigeren Böden im Allgemeinen leichter und feinfruchtiger als die der Langhe. Die älteste urkundliche Erwähnung dieses Weingutes reicht über neun Jahrhunderte zurück. Die Weinberge liegen größtenteils amphitheaterartig um das Gutshaus. Angebaut werden die traditionellen Traubensorten des Roero, Nebbiolo und Barbera für die Rotweine, Arneis, Favorita und Moscato für die Weißweine. Vor über 25 Jahren lernte ich die Familie Rabino kennen und war sofort von ihren Weinen und ihrer Gastfreund- lichkeit begeistert. Daran hat sich bis heute nichts geändert, und ich freue mich, dass die Rabino ihrem Stil, terroir- typische Weine entgegen aller Moden zu erzeugen, bis heute treu geblieben sind. Valpolicella “Superiore” show a rounder character, with a higher minimum alcohol and a minimum of one year of aging. Valpolicella Classico region is at the western end of the appellation, near the shores of Lake Garda, and consists of four “valleys, surrounding the communes of Fumane, Marano, Negrar, Sant'Ambrogio, and San Pietro in Cariano. Sub appellations also from the valleys of Valpantena and Illasi, Single vineyard (vigna) bottlings also exist. Amarone della Valpolicella DOCG Recioto della Valpolicella DOCG Recioto della Valpolicella and Amarone della Valpolicella were finally approved for DOCG status in late 2009, and may labelled “Classico” or “Valpantena” if they originate in the respective areas. Made by the appassimento process; the grapes are dried for approximately 120 days (4months) in special chambers (fruttai), under controlled conditions thus concentrating sugars. & flavours ,. (Approx 30% of original weight) The appassimento process adds complex dried fruit flavours, & additional alcoholic potential to the resulting must. Following drying, (end of January/beginning of February,) the grapes are pressed and go through a dry low temperature fermentation which can last between 30/50 days. The reduced water content can slow down the fermentation process, increasing the risk of spoilage and potential wine faults such as high volatile acidity If fermentation is stopped early, the resulting wine will contain residual sugar (more than 4 grams of sugar per litre) and produce a sweeter wine known as Recioto della Valpolicella.
