Bastaría observar la enorme cantidad de moles que tenemos, y los que hemos tenido a través de los siglos, para constatar su condición: son el resultado decantado de la inspiración de los pueblos. Pero esta afirmación es una gene- ralidad vaga, en realidad ha habido y hay tantos moles como guisanderas que los cocinan. Y debe considerarse: es casi imposible copiar un mole (incluso con la receta), pues son numerosos los detalles que cada cocinera resuelve a su modo y al momento. Es decir, el mole es una síntesis individual y particu- lar de la propia inspiración. Hacia finales del siglo XVII, por ahí del año 1680, sor Juana Inés de la Cruz confesaba en uno de sus romances epistolares: no he de moler chocolate, ni me ha de moler a mí quien viniere a visitarme. Ciertamente, sabemos que la apasionada monja era más afecta a la poesía y al amor que a la cocina.
