Best of Southeast Asia 9 June STARTER - spicy laksa broth with prawns, seared salmon, crispy rice noodles and confit egg yolk GADO-GADO - Indonesian salad of roast baby potatoes, and fresh vegetables with sauce and a peanut cracker AYAM MENTEGA - crispy fried chicken in a sweet spicy sauce with and peppers MAIN - braised lamb shoulder in a , charred baby spring , spring roll, and wild rice MANIS - Tempeh in a sweet with aubergine chilli sauce, crispy spiced flakes, pickled vegetables and spiced yellow rice IKAN DABU-DABU - pan fried sea bass fillet with dabu-dabu salsa, peanut and soy tenderstem broccoli, soy and roast potatoes

DESSERT - pandan pancake stack with shredded coconut filling, with mango gel, coconut and lime ice cream and sesame brittle - caramelised with chocolate ganache, doughnut and ginger ice cream BUBUR KETAN HITAM - set black with condensed foam, passionfruit coulis, pandan crumb and mushrooms
