Daily Itinerary : DAY 1 : BRINDISI – ARRIVAL Arrival at the Airport/Train or Bus Station and private transfer to the farmhouse .Check in and show around the property. After a small break we make a tour of the farmhouse and an explanation of how do the oil (at that time may not see as is hara because the season is from October to January) visit to the mill where Emilio explain all the procedure (we use the traditional procedure) and oil tasting. Visit to a winery (before returning to the farmhouse) with a tasting of local wines of this area. Dinner at the farmhouse with typical food from Salento ,such as biological vegetables directly collected from the farmhouse garde. (also with the help of customers) DAY 2 : GALLIPOLI – LECCE Breakfast. Excursion along the Ionian coast and visit of Gallipoli. Gallipoli is a coastal town in Apulia, southern Italy. The historic center, on an island off the mainland, shelters churches like St. Agatha’s Cathedral, with its ornate facade. Nearby, the Church of St. Mary of Purity has a maiolica tiled floor. Gallipoli Castle includes the Rivellino tower, standing apart from the main building. Across the bridge, on the mainland, is the Greek Fountain, dating from the Renaissance. Free time and return to the farm to rest. In the afternoon visit of Lecce, the pearl of the Baroque, with a professional guide and dinner in a typical Neapolitan pizzeria to try the real Italian pizza. The quarantine bacterium Xylella fastidiosa subsp. pauca was introduced in the area from abroad and has been widely threatening olive groves in the area. The successful eradication of quarantine phytopathogens requires a prompt identification of the causative agent at the new site, a restricted infected area, a highly effective local organization for crop uprooting and biological features of the micro-organism that would guarantee its complete elimination. However, at the time of the first record, these criteria were not met. Interdisciplinary studies showed that a zinc-copper-citric acid biocomplex allowed a consistent reduction of field symptoms and pathogen cell concentration within infected olive trees. In this perspective article, it is briefly described the implementation of control strategies in some olive farms of Salento. The protocol includes spray treatment with the biocomplex during spring and summer, regular pruning of the trees and mowing of soil between February and April to reduce the juvenile of the insect vector(s). Thus far, more than 500 ha have begun to follow this eco-friendly strategy within the “infected” and “containment” areas of Salento.
