CARAMEL MILLEFEUILLE WITH LOCAL FRESH BERRIES Serving Size: 160 g YIELD: 50 INGREDIENTS: AMOUNT: Puff Pastry 3000 g Icing Sugar 100 g Fresh Strawberries 900 g Fresh Cherries 900 g Fresh Blueberries 900 g Whole Milk 1500 ml Sugar 1200 g Egg Yolks 900 g Whipping Cream 36% 450 ml Whipped Cream (Whip the Cream and Fold It In) 1650 ml Caramel Sauce 700 ml

PREPARATION STEPS: 1. Bake the puff pastry sheet at 180ºC for 15 mins, then sprinkle with icing sugar and bake at 250ºC for 5 mins until the top is caramelized. 2. Prepare a creme anglaise - bring milk to boiling point, set aside. Beat yolks with half the sugar until the compost is lighter in colour, add the hot milk and cook the compost au bagne marie until temperature reaches 84ºC. 3. Bring the whipping cream to boiling point. Melt dry the other half of the sugar until it reaches caramel status, deglaze it with the hot whipping cream. 4. Fold the caramel into the creme anglaise and cool it down. Once cold, fold the whipped cream into the caramel base. 5. Pour the compost in a stainless steel tray, 0.60 inches thick, freeze rapidly! 6. Wash and dry the fruit, cutting the greens out of the strawberries, and cut in half. Remove the pit from the cherries and cut in half. Cut the puff pastry into rectangular shapes, about 5x10 cm. 7. Cut a piece of , about 4x8 cm and gently put it on top CHEF of the puff pastry rectangulars and cover it with another DANIELE MEREU rectangular of puff pastry. CULINARY CONSULTANT | 8. SWEET POTATO LATKE & SMOKED SALMON BITES

Serving Size: 1 latke ea YIELD: 50 INGREDIENTS: AMOUNT: Sweet Potatoes (peeled and grated) 2 lb Chives (finely chopped) 2 tbsp Flour (sifted) 2/3 cup Large Eggs (beaten) 4 ea Vegetable Oil 1/3 cup Cold Smoked Salmon 50 slices Sour Cream 1 cup Hard Boiled Eggs (grated) 3

PREPARATION STEPS: 1. Stir together potatoes, chives, flour, eggs, salt and pepper. 2. Heat oil in a deep 12" skillet over medium high heat until hot but not smoking. 3. Working in batches of 5, spoon a tbsp size of batter, no more than 10 times per batch, and flatten with a slotted spatula or fork. 4. Reduce heat if needed and cook until golden, about 1½ minutes per side. 5. Transfer latkes with a spatula to a paper towel lined tray to drain. 6. Garnish with a curled slice of salmon, and a sprinkle of grated egg. 7. (Optional) Serve with sour cream. CHEF CHRIS CHABOT CULINARY CONSULTANT | SYSCO ALBERTA SOUTH

Chef Christopher Chabot was born and raised in Elmvale, Ontario. His love of cooking came from cooking alongside his mother and grandmother for family gatherings. When he was 15 he started work at a local ski resort where he got his first taste of working in a commercial kitchen. After discovering his passion for cooking and food, Chris attended the Culinary Institute of America in Hyde Park New York in 2004, where he graduated with honours. He then moved to Vancouver BC and gained experience in small fine dining, hotels, high volume pubs and even a floating fishing lodge. Prior to joining the Business Resource team, Chris worked as a Marketing Associate at Sysco Calgary. Working closely with customers to understand their needs and goals has become a very important focus for Chris. Staying current on food and dining trends is Chris’s biggest hobby. He firmly believes that we never stop learning, and enjoys working with other chefs to learn new techniques and ideas as well as share the knowledge he has gained over the years.

FLEXITARIAN TURKEY DINNER LASAGNA

Serving Size: 24 per pan YIELD: 50 INGREDIENTS: AMOUNT: Ground Turkey 5 kg Tomato Sauce 7 litres Pretzel Bread 20 Frozen Diced Mirepoix 1.8 kg Frozen 7 Bean Mix 3.5 kg Vegetable Stock 2 liters Poultry Seasoning 15 g Kosher Salt 20 g Black Pepper 5 g Brown Gravy 6 liters Lasagna Sheets 16 pc 18% Cream 500 ml Canola Oil 100 ml

PREPARATION STEPS: 1. Make meat sauce: add oil to sauté pan, turn burner on med high heat and add the ground turkey, cook completely 175ºF. 2. Add 7 liters of the tomato sauce, cook for 30 min. Set aside and cool to 4ºF. 3. Cut bread into thumb size dice, add all seasoning, vegetable stock, Mirepoix and beans, mix well, set side. 4. Layer Lasagna, cream in bottom of 2" full size hotel pan 2x pans. 5. Place in pasta sheet, then meat sauce, pasta sheet, stuffing, pasta sheet, (then a meat sauce and stuffing together layer) and one more pasta sheet on top. 6. Cover with parchment paper and tin foil. 7. Bake at 300ºF for 2 hours. CHEF 8. Make 6 liters of Sysco classic brown gravy and add the last PETER ECKER 1 liter of tomato sauce. Chef Peter Ecker began his culinary journey in 1977 at the Turf N Surf restaurant in Niagara Falls and then began his apprenticeship with CP Hotels Skylon Tower, Niagara Falls. He moved on to become the Sous Chef at the Pillar and Post Inn in Niagara on the Lake. With a wide range of Executive Chef experience in places such as the Rim Rock Hotel in Banff, Delta Hotels in Sherbrook and Regina, Red Deer Hotel & Conference Centre, Sheraton Winnipeg and Casino’s of Winnipeg, he found his home as the Corporate Chef at Sysco Winnipeg in 2004.

Chef Peter is a Free Mason of Canada and a member of the Canadian Chef Association. He has been involved in the community as a culinary instructor, promotion manager for the Manitoba Culinary Team, a speaker for the Agriculture Producers and Chef for the Canadian Bison Association.

SMOKED ORANGE ROASTED TURKEY

PREPARATION STEPS: 1. Pat turkey dry and season with salt and cracked pepper and rub with 3 tbsp of butter and 20 ml of smoke seasoning. 2. Chop or slice oranges and fill turkey cavity with orange. 3. Place turkey in roasting pan and place in 325ºF oven and allow to roast. 4. Chop remaining ingredients for stuffing and place in a mixing bowl. 5. Combine ingredients ensuring butter/smoke seasoning & egg are well combined. 6. Place stuffing mixture in a hotel or roasting pan and bake in 325ºF oven for 40 minutes or until the temp of 165ºF is achieved. 7. As turkey is cooking, baste with pan drippings every CHEF 20-30 minutes to achieve a golden and moist skin. DAVID PYPER 8. Remove turkey when 170ºF is achieved at the thigh. Allow the turkey to rest over the “Carry Over Cooking” for 20-30 minutes prior to slicing and carving. JAPANESE SMOKED DUCK (APPETIZER)

Serving Size: 90 g YIELD: 50 INGREDIENTS: AMOUNT: Smoked Duck, King Cole 1250 g Spear 250 g Red Onion 250 g Kale Coloured Crunch 1250 g Sambal Oelek 5 tbsp Smoked Peach Vinaigrette 10 tbsp Cranberry Salsa 500 ml Extra Heavy Duty Mayonnaise 1000 ml Steam Cakes 50 ea Butter or Cooking Oil as needed

PREPARATION STEPS: 1. Bring water to a boil and blanch steam cakes for 15 to 30 seconds a side. 2. Remove cakes from water, let cool and then cover if not serving immediately. 3. In a mixing bowl take the kale crunch, sambal oelek and peach vinaigrette; mix together and refrigerate. 4. In a mixing bowl mix the salsa and mayonnaise and refrigerate. 5. At time of service, season frying pan or flattop with desired fat and sear steam cakes. 6. Assemble with duck, kale crunch mixture and cranberry aioli CHEF and serve. In the 17th year of his Culinary Career, Miguel Hernandez lives to cook! Over most of his working career he trained in kitchens throughout Ottawa. He managed kitchens and operations throughout the Kawarthas. He also operated his own private catering and business. Miguel brings a wealth of experience to the Stir team. From fine dining to Sunday breakfast, he prides himself in not only understanding cooking techniques, but studying the science and the physical makeup of ingredients and products.

With a Mexican background Miguel loves to bring bold and colourful flavours to the plate. In 2003 he registered as a cook’s apprentice and attended culinary school at Sir Sanford Fleming College. In 2011, he created a ‘hands-on’ training curriculum that helped the vulnerable sector of Peterborough gain meaningful restaurant and retail skills that could help them get back on their feet and into the work force with meaningful employment that helped them contribute to their community. He is looking forward to continuing to help people succeed in the food industry with the Stir team out of Sysco Central Ontario and is excited for what is to come next.

TURKEY ROLL WITH LAC BROME DUCK STUFFING Serving Size: 80 g turkey, 35 g stuffing, 75 g gratin YIELD: 50 INGREDIENTS: AMOUNT: Turkey, Breast And Thigh Rolls 4 kg (2x2kg) Lac Brome Ground Duck Meat 1.5 kg Apple Slices 350 g Butternut Squash, Diced 350 g 100 ml Rosemary 25 g Peeled Garlic 25 g Cumin 15 ml Province Herb Mix 25 g Kosher Salt 15 ml Salt 40 ml Gratin Potatoes 3.75 kg Demi-glace Sauce Mix 250 g

PREPARATION STEPS: 1. Cook turkey rolls from frozen until internal temperature reaches 160ºF, approximately 2.5-3 hours. 2. When turkey is one hour away from being done start to cook side starch, such as the suggested potato gratin. 3. Brown ground duck in frying pan with chopped garlic and all spices. 4. When duck is almost cooked, add apple slices, butternut squash and half of maple syrup. 5. Rest duck stuffing in strainer to eliminate excess cooking juices. 6. Take simmering demi-glace sauce and add 50 ml of maple syrup and about 250 ml of turkey cooking juices. 7. Strain sauce and reserve aside. 8. Rest cooked turkey 30 minutes before slicing. 9. HOLIDAY EGGNOG Serving Size: 250 ml YIELD: 50 INGREDIENTS: AMOUNT: Frozen Egg Yolk 2 kg Granulated Sugar 1 kg Homogenized Milk 5 L 35% Whipping Cream 5 L Vanilla Extract 4 tsp Ground Cinnamon 1 tsp Ground Nutmeg 1 tsp OPTIONAL: Spiced Rum 1 L Candy Canes (for rimming glass) 20 ea Chocolate Dipped Candy Canes (stir stick) 50

PREPARATION STEPS: 1. In a large mixer beat egg yolks on medium speed, gradually add sugar. 2. Beat until mixture thickens. 3. Stir in milk, vanilla and rum. 4. Pour mixture into large punch bowl and chill for 3-4 hours in refrigerator. 5. Fold in whipped cream before serving. 6. Sprinkle nutmeg and cinnamon on top. 7. Wet the rim of serving cup and dip into crushed candy canes. 8. Place chocolate dipped candy cane across the top of cup, if using.

Chef Mullett started his culinary apprenticeship in 1998 at the Delta Beausejour in Moncton. The following year he moved to the Fairmont Algonquin in St. Andrews New Brunswick. From there, Chef Mullett embarked on a culinary journey that led him across the country. He left for Alberta in 2000 to start at the Delta Lodge Kananaskis. In November 2003, Chef Mullett accepted a position back on the East Coast at the Delta Halifax; in 2009 Chef Mullett accepted the position of Executive Chef of the Delta Barrington in Halifax where he stayed until 2012. Chef Mullett moved on to be the personal Chef to the Lieutenant Governor of Nova Scotia for one year and is now happy to be part of the Sysco team.
