The wines of Burgundy have always been the cornerstone of our portfolio, and continue to be the primary identifying feature of our business. It was in Burgundy where we completely succumbed to the charms of these seductive wines, and forged within us the desire to share them with the world. It has been a great dream of ours to host a select group and share with them the sights, sounds, tastes and people that made us fall in love with this very special place. The first few acres, of the current family domaine were purchased over two hundred years ago. These vineyards include some of the most highly regarded terroirs in Champagne. Today Legras & Haas is lucky enough to own vineyards in both the Côte des Blancs and in the Aube. The Côte des Blancs vineyards are regarded as among the very best Chardonnay producing vineyards in Champagne. In addition, the Aube is reputed to be among the very best Pinot Noir producing vineyards in Champagne. This diversity of terroir not only helps them to remain independent, but it also helps to insure the quality of their wines from year to year. In addition, this exceptional palette of terroir allows them to make very complex and expressive wines. At the age of 13 François Legas began working with his father Lucien in the vines. Now, François and Brigitte’s sons Remi and Olivier have joined them at the winery. The family has a great deal of respect for Champagne & Champagne Grand Cru. Only hand selected grapes are used for first juices only. A natural settling of juices is required for 12 to 24 hours. Low temperature fermentation is also required between 17 and 18C to preserve the finest aromas. Each wine is sorted by variety and plot and then tasted and blended by family members ONLY from December until bottling in April. Yeast is also left in the bottle to help in the aging process before it is disgorged. Minimum 3 years aging. Wednesday, March 22nd • Breakfast & Depart to Chablis • Lunch with Beatrice, Olivier & Benoit • Back to Domaine du Château de Fleys for Wine Tasting • Drive to Burgundy • Dinner at Domaine Lucien Jacob with Jean Michel and Christine Jacob in Echevronne Domaine du Château de Fleys is the Domaine of the Philippon family that first came to the village of Fleys in 1868 and gradually began buying small parcels of what are today some of the most sought after vineyards in the area. They now own some of the finest sites of Chablis village wine and the renowned 1er Crus Mont de Milieu and Les Fourneaux. Hand-harvested and cultivated with utmost respect for the soil, these are incredibly good value, well- crafted wines. Domaine Lucien Jocob - the small picturesque village of Echevronne, tucked away up a half-forgotten valley, is only a few kilometres northwest of Beaune. This is a ravishing spot; a bit of Jura-like country where the vineyards are interspersed by wildflower meadows beneath the gentle crags. Fully a third of the 250 villagers earn their living from the vine. Arguably, the most famous man around here is Lucien Jacob; one time Member of Parliament for the Cote d’Or at the National Assembly in Paris. A dynamic man, Lucien managed to combine his national duties with a passionate crusade to improve the quality and reputation of these wines of the Hautes Cotes de Beaune Retiring in 1989 Lucien handed over the reins of his domaine to his daughter Chantal and his son Jean Michel. On his way home to Beaune in 1987 he stopped off in Hong Kong where he met Christine, a young English lawyer, now his wife. All three work full time at the domaine. Upon taking the reins of the domaine, Jean Michel Jacob modified the vinification process to produce wines of considerably more structure then those crafted by his father, Lucien. Prior to Jean Michel’s arrival, the wines were charming with an appealing fruitiness. Jean Michel has worked to reduce yields in the vineyards and has extended the cuvaison to bring more backbone to the wines while maintaining the lovely aromatics and elegance that are the hallmark of wines from this part of the Cote de Beaune. Respect for terroir is a fundamental value at this domaine and the purity of these wines has never been sacrificed in the search for artificial power and depth of colour. Thursday, March 23rd • Breakfast • Domaine Drouhin Laroze Lunch • Domaine Machard de Gramont Barrel Tasting Nuits St. Geroge • Dinner • Free Time Domaine Drouhin Laroze - Five generations have been running the Domaine for 163 years, Caroline and Nicolas, Christine and Philippe's children represent the sixth. In 1850, Jean-Baptiste LAROZE started a vineyard operation in Gevrey Chambertin.He was later succeeded by Félix LAROZE. In 1919, Suzanne, the daughter of Félix, married Alexandre DROUHIN, who owned vines in Chambolle Musigny and the estate was henceforth called Drouhin- Laroze. It is now run by Philippe and Christine Drouhin. The Estate is currently run by Philippe and Christine Drouhin, assisted by their children Caroline and Nicolas. Each successive generation continued to develop the Estate with the sole objective of investing in hillside vineyards, which was a visionary and risky choice. The bet paid off and today, thanks to the sacrifices and risk-taking of the previous generations: The 11.50 hectare Estate is one of the most prestigious in terms of diversity, quality and the surface area of its Appellations. Domaine Machard de Gramont Domaine Bertrand Machard de Gramont is now run by Axelle Machard de Gramont, whose grandmother was a Dufouleur. The domaine was created by Axelle’s father, Bertrand in 1983, before that he had worked the family vines with his brothers, and still further back, he worked for a number of years with Comte Georges de Vogüé in Chambolle-Musigny. One of Axelle’s uncles, Xavier, was married to Chantal Lescure and in 1975 they had a large, 32 hectare domaine together, the vines spread up and down the Côte d’Or. Friday, March 24th • Breakfast Visit with the Barrel Cooper • Tasting with Fernand and Laurent Pilot Chassage Montrachet • Free Time • Rose Tasting at La Terre D’Or • Dinner at Chef Chabrol La Terre D’Or Fernand and Laurent Pilot Chassage Montrachet The origins Pillot go back to the XVIIth Century in Chassagne, our ancestors used to work in the vineyard, to make wine and especially to produce barrels. In the XIXth century the Pillot family have abandoned the barrel making and have shifted to vines while enlarging the property on the hillside of Chassagne-Montrachet. Fernand and his son Laurent, the 4th generation, again spread the domain in 1992, then in 2001 with the resumption of vineyards Pothier- Rieusset in Pommard. Today, we run 14,8 ha for a total of 22 appellations. Our vineyards are concentrated on Chassagne-Montrachet and Pommard terroirs mainly, but also on the soils of Santeany, Saint-Aubin, Puligny- Montrachet, Meursault, Volnay and Beaune. Hand selected bunches of fruit are vinified and matured in a simple yet carefully built modern winery keeping where appropriate with traditional burgundy practices. Our vineyards are worked "agrobiologie" with big care and soils are cultivated without uses of chemical weed-killers there. We are members of the research group Dephy- ECO-phyto since 2012. Beaune Market The Saturday market is the social event of the week, as much as a place to meet and greet friends as it is to buy the freshest meats and produce. The market has existed in some form in Beaune since the early 13th century. The covered market called Les Halles is open during the week, but it is much too small for the Saturday market, which overflows into the pedestrian streets surrounding the famous Hospice de Beaune. From the freshest vegetables and fruits, to local and regional cheeses like Epoisses and Florentin, to organic meat, eggs and chicken, there is nothing you won't find at the Saturday market in Beaune.
