Our resort has become a phenomenon in the world of fine wine and dining. Our wine list is characterized by grape variety. On our wine list, you'll find bottles from all of the world's major grape growing regions. Within each region, we feature the most famous, boutique, rising stars producers, and hard to get cult . My goal is to make the wine program of Conrad Maldives Rangali Island the best in the region, if not in the world. A place where we create unique and meaningful wine experiences every time. We purposely keep our wine lists extensive, exclusive, exciting and unique. I invite you to savor the extraordinary pairing of fine wine and cuisine for yourself. A wine experience should be an interesting or remarkable event. I think wine is fun. It is my intention to create a place where wine lovers and enthusiasts can discover new levels of wine experience in a pleasing, adventurous, educational but non intimidating environment. We boast an elaborate selection of the best wines available in the world today.

I share an unwavering dedication to the art of wine appreciation with my guests. In order to achieve this passion I share my experience and knowledge with my team. Continuing wine education with our Wine Team Members is paramount to inspire them to stay at the top of their game. Using a balance of wine seminars, tastings and travel to selected , the team is given the opportunity to experience the feel the , see the slopes of the vine- yards and observe the angle of the sun and the valleys. In addition 12 of our team members are now holding a WSET level 2 certificate.

ORGANIC & BIODYNAMIC WINES

O Organic wines are made with grapes grown without chemical fertilizers, herbicides or insecticides that can hurt soil, plants, wildlife, ultimately show up in the wine. Instead, biologically active soil is maintained in vineyards through alternatives such as cultivating the soil and planting cover crops, using natural fertilizers, promoting a biodiversity of plants and encouraging natural predators of insect pests. Also, processing such as filtration and clarifying are kept to a minimum, with no use of chemical additives. These wines are produced with no additional sulfites (often used as a preservative). Sulfites are a natural bi-product of fermentation. This ensures great taste, freshness, and prevents oxidation.

B Biodynamic farming techniques utilize the 's natural resources to cultivate the highest quality grapes possible without the use of pesticides, fungicides, herbicides, synthetic fertilizers, growth stimulants. It's been said that Biodynamic look at the vineyard or farm as a "living, breathing organism" itself from the soil to the sun, all striving for a well-balanced ecosystem that is self-sustaining. Using homeopathic sprays, herbal preparations and lunar cycles, soil fertility is increased and vines are protected from pests and diseases.

RIESLING LIGHT BODY

The one true classic non-French grape, Riesling is the most versatile, scented white variety in the range of white wines available. It produces wines from completely dry to lusciously sweet. Fine, dry Riesling is not only increasingly fashionable in Germany, but in , Austria and Australia too, where some of the world‟s greatest dry are produced. SAUVIGNON BLANC LIGHT TO MEDIUM BODY

Sauvignon Blanc‟s greatest attributes lie in its fabulous array of aromatic qualities, which vary according to growing location and its treatment in the cellar. It divides into two clear styles characterized by the fragrant, zingy, fresh style reminiscent of cut- grass, gooseberry, flint and nettles. New World Sauvignon Blancs are more citrus, vegetal and herbaceous, food friendly dry whites. SEMILLON & BLENDS MEDIUM BODY

Semillon varies in character considerably according to its region of origin. Generally, in Bordeaux it is blended with the aromatic Sauvignon Blanc to produce the fine dry whites of Pessac-Leognan in . It is at its most illustrious in the region of and Barsac, where it can produce the most luscious, sweet wines in the world. On its own, it is responsible for some of Australia‟s most individual dry white wines. PINOT BLANC LIGHT TO MEDIUM BODY

Pinot Blanc is a genetic mutation or clone of Pinot Gris, which in turn is a clone of Pinot Noir. The leaf structure, clusters and berries so resemble Chardonnay that there are many vineyards in Europe where plantings of the two grapes are intermingled. ALBARIÑO MEDIUM TO FULL BODY

Albariño is the primary grape used to make dry in the Rias Baixas (Lower Inlets) section of the Galicia region of Northwestern Spain. Considered by many to be Spain‟s premier quality white wine, Albariño is also known in Portugal as Alvarinho and often used as a component of Vinho Verde. CORTESE LIGHT TO MEDIUM BODY

Cortese is a white grape variety predominantly grown in the South-Eastern regions of Piedmont in the provinces of Allesandria and Asti. It is the primary grape of the Denominazione di origine controllata (DOC) wines of Cortese dell‟Alto Monferrato and Colli Tortonesi as well as the Denominazione di Origine Controllata e Garantita (DOCG) wine of Cortese di Gavi. Significant plantings of Cortese can also be found in the Lombardy region of Ottrepò Pavese and in the DOC white blends of the Veneto wine region of Bianco di Custoza. The grape‟s moderate acidity and light flavours have made it a favourite for the restaurants in nearby Genoa as a wine pairing with the local seafood caught off the Ligurian coast. PINOT GRIGIO & PINOT GRIS LIGHT TO MEDIUM BODY

Pinot Gris is a mutation of Pinot Noir and has a pinkish, light purple skin. In the classic region of Alsace, where Pinot Gris is classified as a noble grape variety, it tends to produce wines with a deep colour, full bodied in structure, yet soft and gently aromatic. In Italy, where it is grown more extensively, it tends to produce wines which are lighter bodied with more subtle nuances of flavours. Grenache is one of the great Mediterranean grape varieties which does best as a low yielding bush vine. In 1924, Baron Phillippe de Rothschild changed the face of the by commissioning the celebrated poster designer Jean Carlu to create a new label for that year‟s vintage. Twenty one years later, at the liberation, a „V‟ for Victory design by Phillippe Julian was placed on the labels and an annual tradition was born. SWEET TEMPTATIONS There is no simple definition of a . Dessert wines are sweet wines typically served with dessert, such as Sauternes, Constantia, Vin Santo, Tokaji Aszú, Eiswein or , Trockenbeerenauslese, Beerenaulese or Ricioto della Valpolicella. Despite the name they are often best appreciated alone or with fruit or bakery sweets. A dessert wine is considered to be any sweet wine drunk with a meal as opposed to the white fortified wines (fino and amontillado ) drunk before the meal, and the red fortified wines (port and madeira) drunk after it. Thus most fortified wines are regarded as distinct from dessert wines, but some of the less strong fortified white wines such as Pedro Ximénez sherry and Muscat de Beaumes-de-Venise are regarded as honorary desert wines.
