Hello everyone, I hope you are keeping well even though the weather is not quite as bright as it was. On the plus side, the fields really did need some rain! Lockdown continues to ease with some going back to work, schools partially opening and more businesses opening. We’ll have to wait and see if the social distancing measures are enough to keep the virus at bay and what progress is made with vaccines and tests.

As you know this is only a temporary newsletter, hence the name! We but pray and hope this continues and that eventually some sort of normality returns. It is possible worship may resume in our Churches in July depending on the situation at the time. Meanwhile, in our homes, in our gardens and on our walks, we can still worship and pray, giving thanks for our own blessings, the kindness of so many, the beauty of the natural world, the sunshine, the singing of the birds, and the love of God in Christ as an ever present reality. People who are not from Cornwall or haven’t lived here for long, asked if I could publish some traditional Cornish recipes. These are what I have received in so far………………….

Recipes passed to me that were from the late Mary Hawke

Sweet Pickle 3 lbs Pear ½ pt Vinegar 2 level tsp Whole All Spice 1 level tsp Crushed Cinnamon Sticks 1lb White Sugar 2 level tsp Whole Cloves Piece of Root Ginger

The pears should be peeled and cut into a convenient size. Sugar is dissolved in the vinegar. The spices tied in Muslin. Fruit cooked gently until tender, then drained and packed into jars. Vinegar is cooked until it is syrupy and then is poured over fruit. Cover with suitable vinegar-resistant covers. Launceston Cake Ingredients It can also be made with fruits such as 7oz unsalted butter damsons, cherries, apricots or blackberries. 7oz caster sugar 1 tablespoon treacle Jellied Beetroot 1 tablespoon golden syrup 2 lbs Cooked Beetroot, diced or sliced 3 large eggs 1 ½ oz Gelatine 10oz self raising flour 1 Pt Red Wine Vinegar 1lb currants 1 lb Caster Sugar 2oz mixed peel or grated lemon peel 2oz ground almonds Use ¼ pint vinegar to dissolve gelatine. Dissolve 1/2 teaspoon salt sugar in remaining vinegar. Bring to the boil then add beetroot, continue to boil for 10 Method minutes. Stand gelatine over gentle heat to Heat oven to 180°C/350°F/Gas 4. melt fully. Remove beetroot from heat and add Sift flour into bowl to add air. gelatine, stir well. Place into jars and cover. Cream the butter and sugar together. Add syrup and treacle, then beat in each egg separately, interspersed with a tablespoon of flour. Heavy (Hevva) Cake When the mixture is smooth and lump free, add the remaining flour, followed by the ground almonds, currents 8 oz Plain Flour 2 oz hard margarine and your chosen peel. 2 oz lard 3 oz sugar Mix well together. 3 oz currants 1 oz mixed peel Bake the cake on the middle shelf of the pre heated oven Pinch salt for about 1 hr 50 mins or until a sharp knife/ skewer comes out of the centre clean. Mix with enough milk and water to make into a firm dough. Roll out 2.5 cm thick. Shape into a round. Brush with milk before baking. Bake 190’C for about 20-25 mins. When golden brown lightly dust with caster sugar.

Cornish Splits Russian Cream

750gm Strong Plain Flour A traditional Cornish dessert, very easy to make the 1 teasp Salt day before and enhanced with clotted cream 1 pkt Easy Blend Yeast 3 tablsp. Sunflower oil (or similar) 11/2 pint milk, ¾ pt warm milk/water 2 tablsp sugar vanilla essence Place all in a mixing bowl and mix together 3 large eggs separated thoroughly. Cover bowl with a plate and leave to 1 packet gelatine. rise in a warm place. When double its size, place on a floured surface and knead. Divide evenly into 24 Place sugar, milk, egg yolks, and gelatine into a pieces. Place on a baking tray so that as they rise saucepan stir well and then bring to boil until the they will join together. Leave to rise again for 10 mixture curdles. Meanwhile whisk egg whites until mins and bake in a very hot oven 220’C Reg 8 for 10 stiff, add vanilla essence and then add the boiled egg mins. mixture. Leave in a cool place overnight to set. Stargazey Pasties

3 eggs 6 rashers smoked streaky bacon, chopped large handful curly parsley, roughly chopped Flour for dusting 500g pack all-butter puff pastry 6 whole large sardines or pilchards, scaled and gutted but heads and tails still attached (you can get your fishmonger to do this) 1 tbsp wholegrain mustard

Method Heat oven to 180 c / 160 fan/gas 4. Cook 2 of the eggs in boiling water for 8 mins. Drain and cool under cold water, then peel and roughly chop. Heat a frying pan until hot and sizzle the bacon until crisp. Mix the eggs and bacon together in a bowl with the parsley and seasoning. Dust work surface with flour. Divide pastry into 6 and roll out circles just a little shorter than each sardine fillet. Brush the sardines with a little mustard, and stuff with some of the egg and bacon mix. Lay each fillet on a circle of pastry. Beat the remaining egg and brush a little over the edges of the pastry. Bring the 2 sides together firmly to encase the sardines, leaving the heads and tails poking out – tilt the head a little so that its pointing upwards. Pinch the edges to look like a Cornish pasty and place on a baking tray. Brush all over with beaten egg and bake for 25 -30 mins until golden. Cool slightly before serving.

What were your unexpected lockdown projects?

Who ended up doing a little project that they weren’t expecting to do? Share them with the rest of us so we can steal the ideas! Here are two sent to me to start with!

"Following the delivery of my new fencing, I was left with a large heavy pallet - a pile of sand, and a few bits of leftover wood. - what to do with it all.? - I have never been able to grow carrots as soil is too full of clay- so here was my solution"

Lockdown boredom relief - growing plants from seed - turning lounge and kitchen into a greenhouse; an unsuccessful purchase of a basic “multigrow” which didn’t stand up to the rigours of the NP gales; runner beans not liking the gales The Parish WI ladies have been unable to meet in either, but somehow producing flowers; chilli person but have conducted their committee plants flowering like mad; not sure if tomatoes will meetings, regular coffee mornings and a monthly ever flower; never had such an insubordinate lot quiz evening on Zoom. They even had a coffee of cucumbers, but, if they survive, everyone in the morning on VE day with some union jacks and village should be able to spot a sunflower or bunting in the background! It’s not quite the two! Watch this space .....! same but lovely to see some faces as well as hear voices! Many of them have been involved with sewing scrubs for the NHS, keeping their gardens looking good or baking for family that are working.
