They're a matter of personal taste and cultural traditions, a fitting piece de resistance on the wedding day that should be as pretty as the bride and taste as good as it looks. Since melting pot is the Garden State's middle name, New Jersey, with its numerous and vibrant ethnic communities, has many distinctive ways to celebrate with cake. The fruits of these culinary legacies can be seen in some of the nuptial traditions of five New Jersey ethnic communities. Wedding sweets and rituals - in Newark's Portuguese community, Hoboken's Italian neighborhood, Jersey City's Philippine enclave, Kearny's Scottish highlands and Edison's Indian area - offer a sociological and archaeological glimpse into the gastronomic life and traditions of these communities. Many a culture also prefers to celebrate its festive moments with sweets, those sometimes delectable - sometimes unctuous - goodies such as marzipan, rice cakes or teeny-tiny pastries. Portuguese wedding cakes, for example, tend to be fairly simple. Ingredients Step 2: Mix in the wholemeal flour Step 3: Add enough milk to make a soft dough. 350g wholemeal flour Step 4: Turn onto a lightly floured board. 125g cream plain flour Step 5: Knead until the mixture comes together smoothly. 275 - 425ml buttermilk or Step 6: Place dough on a floured baking sheet. sour cream Step 7: Cut a cross X over the top with a knife 1 tsp bread soda Step 8: Place in a central oven position and bake in a preheated ½ tsp salt oven 200 degree for approx. 40 mins. Step 9: When baked the bread will have a hollow sound if tapped on the base. Step 10: Cool on a wire tray. A dry tea towel wrapped around the bread at this stage helps to give a softer crust. Tips! - Start out by mixing your bread dough in a large bowl so you have space to mix your dough, which will reduce the chances of you over-mixing and toughening your bread. - Always level your teaspoon of baking soda before adding it to your ingredients. There are two very good reasons for this that can make or break your bread: Too much baking soda will tint your bread green and it can give your bread a very acidic taste which can be quite unpleasant, so remember less is more with the baking soda.

There are two very good reasons for this that can make or break your bread: Too much baking soda will tint your bread green and it can give your bread a very acidic taste which can be quite unpleasant, so remember less is more with the baking soda.
