University of Massachusetts Amherst Journalism Department Sicily Program Food Policy Agreement One of the reasons that so many travelers put Italy on the top of their list of great destinations is the food. Italian cuisine is world famous and some consider Sicilian cuisine the best of the best. Most of the food on your trip to Sicily is included, and on three occasions, we will be served special Sicilian gourmet class menus. Like all Mediterranean regions, typical Sicilian cuisine features fresh seasonal vegetables, bread, pasta, and a wide variety of cheeses, red meats, occasionally poultry, and, particularly in Sicily, seafood of all kinds. Italian meals traditionally have multiple courses and always include a selection of the food groups listed above from which a diner may pick and choose. We are proud of our ability to provide interesting, nutritious, and sometimes gourmet class meals at very reasonable cost, but we are unable to accommodate dietary alternatives that require special purchase or preparation. It is not acceptable to ask for different food items or special food preparation during group meals. The individual student, at his or her own expense, must address individual food preferences or restrictions. One of the major rewards of traveling is participating in the culture of the place you are visiting. If you choose to not take advantage of this opportunity to taste one of the world's great cuisines, it is your prerogative, but understand that others in the group are enjoying the island's culinary diversity. However, if you go straight out to dinner, you’ll be missing out on a quintessential tradition of la bella vita, because, when they have time, self-respecting Italians, especially in the north and in big cities, start their evening with an aperitivo or pre-diner drink. An aperitivo is not “Happy Hour” or an excuse to drink to oblivion. Italians blame many ailments on their livers so the aperitivo has digestive purposes. It allows Italians to relax, unwind and socialize after work. It also starts their digestive metabolism and gets the juices flowing with a light, dry or bitter tonic with a “bite” to work up their appetite before dinner. This so-called “bitter bite” is beloved to Italians who prefer it and the overly sweet to sour. It took me several years to get used to bitter, much less like it. The oldest aperitivo is vermouth, an aromatic fortified wine created in Turin, where the aperitivo tradition is still strongest today. As www.selectitaly.com tells us: “ One of the oldest vermouths dates back to 1757 when two herbalist brothers, Giovanni Giacomo and Carlo Stefano Cinzano created vermouth rosso, initially marketed as a medicinal tonic.” This explains the bitter quality of many Italian drinks even non-alcoholic ones like chinotto or crodino. It runs every 10 minutes, weekdays, 7 a.m. to 7 p.m. and every 15 minutes weekdays, 7 p.m. to midnight and 9 a. m. to midnight on weekends.
