BAB I RINGKASAN EKSEKUTIF 1.1 Deskripsi Konsep Bisnis Sebuah penelitian data dari Parama Indonesia, lembaga yang membantu perusahaan start-up berkembang, menunjukkan bisnis kuliner di Indonesia semakin berkembang dalam beberapa tahun terakhir. Hal ini salah satunya disebabkan oleh kebutuhan dan gaya hidup penduduk yang semakin tinggi. Menurut Direktur Parama Indonesia (Agni Pratama, 2017), menyatakan sektor kuliner Indonesia tumbuh rata-rata 7 hingga 14 persen per tahun dalam lima tahun terakhir. Meningkatnya bisnis kuliner dipicu karena kebutuhan masyarakat di kota- kota besar. Selain itu, pola hidup masyarakat yang bekerja hingga malam hari membuat pekerja lebih sering memesan makanan di luar rumah daripada makan di rumah. Gaya hidup masyarakat tersebut membuat bisnis kuliner kian menjanjikan pada saat ini. Membeli makanan ringan “jajan” atau makan di luar rumah sudah menjadi kebiasaan masyarakat Indonesia. Tidak hanya di Indonesia, ternyata di negara lain pun jajan telah berubah menjadi sebuah gaya hidup. Berdasarkan hasil riset yang dilakukan (Nielsen, 2017) Indonesia menduduki posisi kelima di mana masyarakatnya sering bersantap atau jajan di luar rumah setidaknya satu kali dalam sehari. Posisi pertama ditempati Malaysia (23%), posisi kedua ditempati Thailand (22%), Singapura (19%) berada di urutan ketiga dan Vietnam (16%) di urutan keempat. Indonesia menduduki posisi kelima dengan persentase sebesar (11%) yang mana masyarakatnya bersantap atau jajan di luar rumah paling tidak satu kali 1 Universitas Kristen Maranatha BAB I RINGKASAN EKSEKUTIF 2 dalam satu hari. Dibandingkan dengan negara lain, kebiasaan membeli makanan ringan masyarakat Indonesia memiliki potensi untuk terus meningkat. Banyaknya promo makanan yang saat ini sedang marak digencarkan oleh beberapa gerai makanan membuat tingkat konsumerisme masyarakat semakin melonjak. -

Indonesian people are very fond of consuming satay, grilled/ fried chicken/ duck/ fish because these are very delicious but consumers still do not understand that there are carcinogenic consequences of heterocyclic aromatic mines (HAA) and polycyclic aromatic hydrocarbons (PAH) which are harmful to health. This paper aims to explore HAA, PAH and various ways that have succeeded in minimizing these levels so that consumers can still enjoy these foods safely and comfortably. This paper was compiled based on a systematic literature review; the authors conducted a content analysis on 41 peer-reviewed journal articles. Thermal meat processing is an important process to ensure microbiological safety, eliminate antinutrical factors, improving digestibility and bioavailability of nutrients and develop the profile of the color, aroma and flavor attributes that we want. However, this process also turns out to bring about carcinogens (cancer triggers), HAA and PAH that are potentially harmful to our health in the long run. Their formation is highly dependent on various factors such as cooking method, cooking time, cooking temperature, type of meat, fat contents, moisture contents, pH and creatinine contents of meat. -

This research used survey method and laboratory approach. The snacks sampled in this research were obtained directly from the sellers in School. Sampling was done randomly. Each sample was analyzed by using simple borax test kit. Furthermore, the data is reinforced by LABKESDA Laboratory Tangerang. The data were also obtained from interviews with sellers and schools. The results showed that from 19 schools, 16 of them contained borax positively, only three schools were contained borax negatifely. From the results of Laboratory analysis on 98 food samples, 58 (59.79%) positively contained borax and 39 (40.21) did not contain borax. The interviews concluded that sellers are free to sell at school without any prohibition or supervision from the school and related offices. This is because traders sell outside the school fence.
