SPEND IT BY SUPPORTING OUR FILIPINO FOOD ENTREPRENEURS IN NEW YORK CITY! WE ALREADY KNOW WE SERVE THE BEST CUISINE AND ARE THE MOST HOSPITABLE IN THE WORLD. WHEN WE DINE TOGETHER, WE WIN, YOU WIN, WE ALL WIN! MAHARLIKA FILIPINO MODERNO Maharlika started out with a big dream and bigger heart: introduce Filipino food and bold flavors to a wider audience beyond the coveted Filipino kitchens of our lolas (grandmothers) and yayas (caretakers). And just like our immigrant parents taught us: we can do anything with hard work, perseverance and determination. The vision is Nicole Ponseca and the food is Miguel Trinidad, and since 2011, our whole team has shared their love of Filipino food and spirit to anyone who cared. The menu focuses on classic and treasured flavors and can run from truly authentic to inspired. Service is family-like, without pretense, much like dining at someone's home. It’s named after the "Jeepney", the WWII jeeps left behind by US occupation. Filipinos took the left-over jeeps chopped them up and tricked them out, creating a vibe, a mode of transport and a symbol that is uniquely Filipino. That is the essence of being of Jeepney and being Filipino – it’s a vibe, a mode, and a symbol of uniqueness. Jeepney was on the fore-front of popularizing Filipino Food and its first-mover status, awards, and press cemented its cred as pioneers and has inspired chefs and restaurants around the world with its take on Filipino food, the Original Kamayan Night, an award-winning burger and Tiki cocktails. Maria opened Mama Fina’s in Elmwood Park over 13 years ago, specializing in sisig, a traditional Filipino chopped fried pork dish. The original Mama Fina’s offers not only pork sisig but also chicken, tofu, tuna, milkfish and squid variations on the classic to appeal to people who don’t eat pork. The NYC location offers a very similar menu with all the same sisig variations and sizzling dishes that are the restaurant’s specialty. Breakfast plates with garlic fried rice and eggs are available all day as well Filipino-style spaghetti, crispy pork belly, and crispy short ribs. Dishes unique to the NYC location are the pork sisig sliders, which come with fries, and the “pulled pork with crunch,” a shredded pork sandwich served on a brioche bun topped with crunchy pork skins. Discover Culinary: Explore the Agricultural Riches & Fresh Atlantic Coast Seafood of The Palm Beaches, Florida Gourmands can savor “the best of everything” with a diverse range of menus at various farm-fresh eateries during a stay in The Palm Beaches. Local chefs and food artisans have revitalized The Palm Beaches’ culinary scene, thanks to straight-from-the-garden produce, and fresh- from-the-sea seafood in an ever-growing assortment of sophisticated farm-to-table and dock-to-dine, dining options. A winter breadbasket of the United States, The Palm Beaches top all counties east of the Mississippi River in total agricultural sales, with a total annual economic impact of $2 billion. The destination leads the nation in the production of sugarcane and fresh sweet corn, also leading Florida in the production of rice, bell peppers, lettuce, radishes, Chinese vegetables, specialty leaf, cucumbers, eggplants and herbs. This bounty of agricultural riches allows The Palm Beaches to take advantage of the culinary landscape, and foodie travel phenomenon, which has advanced from a national travel trend to travel pattern. The 2013 “American Culinary Traveler Report,” published by Mandala Research, showed that the percentage of U.S. leisure travelers who travel to learn about and enjoy unique dining experiences grew from 40% to 51% between 2006 and 2013. In 2012, it was estimated that tourism expenditures on food services in the U.S. topped $201 billion, nearly a quarter of all travel income. That makes food service the highest category of travel spend, according to the University of Florida report: “A Flash of Culinary Tourism.” This study also estimates that 39 million U.S.

Roll and tie firmly with butcher's twine or crocheting thread. 2. Marinate pork in DEL MONTE 100% Pineapple Juice with ACE and reserved pineapple syrup overnight in the refrigerator. Drain and reserve marinade. 3. Heat oil. Fry the pork rolls and brown all sides. 4. Combine meat with marinade in pan. Cover and simmer meat for 30 minutes or until meat is tender. Turn meat occasionally. Remove rolls. For sauce, add cornstarch and simmer broth with continuous stirring until desired thickness. 5. Remove thread from meat then slice. Set aside. Pour sauce over meat. Chef's Tip Rubbing the pork with salt and sugar helps to cure the meat like ham. With the overnight marination with pineapple juice and syrup, the pork sits in a brine which helps add flavor and at the same time preserves the meat. Lusog Notes This dish is rich in vitamin A that helps maintain healthy vision and skin.
