Os nomes das receitas: um património linguístico regional, nacional ou internacional? Uma análise lexical The Names of the Recipes: Regional, National or International Linguistic Heritage? A Lexical Analysis Helena Rebelo Universidade da Madeira (UMa) Faculdade de Artes e Humanidades CIERL da UMa CLLC da Universidade de Aveiro [email protected] Resumo: Num mundo globalizado, com valorização crescente do património regional (cf. dieta mediterrânica), as receitas culinárias tendem a generalizar-se. As comidas regionais podem assumir contornos mundiais, reconhecidas pelo seu nome. As revistas de culinária assumem esse papel de transmissão, que, no passado, era operado oralmente, de geração em geração, no seio da família ou da comunidade. Os nomes atribuídos aos pratos não serão, portanto, completamente arbitrários. Há receitas de comidas e bebidas cujos intitulados ignoram os nomes dos ingre- dientes (jardineira, canja, tim-tam-tum, brisa). Outras dão conta deles e do modo de preparação, (espada com banana, frango assado). Umas quantas revelam a sua proveniência geográfica (carne de porco à alentejana, vinho do Porto). Muitas cor- respondem a estrangeirismos (“crepes”, “vodka”). Considerando estes e outros tipos de intitulados, as designações das receitas merecem ser estudadas porque constituem um considerável património linguístico. Pretende-se analisar, num plano linguístico, os intitulados das receitas de alguns números da revista Continente Magazine, “a revista de culinária mais vendida em Portugal”, tendo também em conta dois livros
