The Wine Cellar ` THE WINE CELLAR This cellar full of wine is the personification of the sommelier team past and present. It has a personality, influenced by each sommelier, but unique from all. With both classics and interesting newcomers, this collection spans the last forty years of global wine production and has been diligently sourced and lovingly stored in anticipation of this historic hotel’s future. We are delighted to also bring plenty of choice in wines by the glass, half bottles and magnums to offer as many options as possible. Mâcon Verzé, Nicolas Maillet, Burgundy, France, 2015 £55.00 A brilliant example of great value white Burgundy. Good citrus and melon fruit, great minerality and long zesty finish. ‘Düfte Punkt’, Chaffey Brothers, Eden Valley, Australia, 2017 £45.00 A great name and a great wine from a beld of Riesling, Gewürztraminer and Kerner. Wonderfully aromatic and balanced with a racy acidity to finish. Ideal summer drinking! Malagouzia ‘Kalogeri’, Papagiannakos, Attika, Greece, 2017 £38.50 A beautifully perfumed wine. Apricot, flowers and apple all comes through. A delicious wine with shellfish. Semillon ‘Watervale’, Mount Horrocks, Clare Valley, Australia, 2017 £58.00 100% barrel fermented in used French oak. Baked apples and pears, lemon peel and a little nutty. Creamy texture and long, dry finish. Red Fitou ‘Domaine des Rebouls’, Familie Astruc, Languedoc, France £44.00 A bold and juicy red from the classic Rhône blend of Carignan, Grenache and Syrah. Spicy and savoury, big fruit and a long finish. Morgenster Estate Red, Stellenbosch, South Africa 2003 £99.00 A belter of a wine from one of the best in South Africa. Classic Bordeaux blend with a good bit of bottle age after time in barrel when newly made. Sangiovese ‘Cilento’, Geoff Merrill, McLaren Vale, Australia, 2012 £52.00 An Aussie wine with a huge Italian influence. Cilento is the surname of Geoff’s Great Grandfather who emigrated from Italy to Australia. A warm climate, jammier Chianti of sorts. Morgon ‘Vielles Vignes’, Domaine Arnaud Aucoeur, Beaujolais, France, 2017 £48.00 Spring time calls out for lighter styles of red, we think, and who doesn’t secretly love a ‘Cheeky Beaujolais’? Berries and cherries with a little grip to balance. Very delicious! Chambolle-Musigny, Domaine Arlaud, Burgundy, France, 2014 £115.00 Classic Pinot Noir from Côte d’Or in Burgundy. Cherry fruit, good grip of fine tannins and long, refined finish. One of my favourite wine styles with game. Nerello Mascalese ‘Cirneco’, Terrazze dell’Etna, Sicily, Italy, 2011 £69.00 Nerello grown on the slopes of Mount Etna’s volcanic soils. Sweet spices, ripe and juicy berries. Wonderful balance of dusty tannin and bright acidity. Possibly a new favourite for Pinot Noir fans…. ‘Dos Dedos de Frente’, El Escocés Volanté, Calatayud, Spain, 2016 £63.00 A very impressive wine from Scottish winemaker Norrell Robertson MW. Dominant in juicy and spicy Syrah with a little Viognier added for perfume, just as with the wines from Côte Rôtie. Racy acidity, citrus, oily texture and just plain delicious! Gewürztraminer ‘Seigneurs de Ribeaupierre’, Trimbach, Alsace, France, 2011 15.00 23.50 82.00 A truly stunning wine! Off dry, ripe, aromatic, spicy and perfumed. Trimbach is one of our most favourite producers. A beautiful glass with some cheeses. Crozes-Hermitage, Alain Graillot, Rhône Valley, France, 2017 13.50 26.00 75.00 Yes, its a white wine from Crozes-Hermitage from Marsanne and Roussane grapes. And its a brilliant food wine. Good texture, nicely weighted and a delicate herbal finish. Chardonnay ‘Ladies Who Shoot Their Lunch’, Fowles, Strathbogie, Australia 2017 12.50 24.50 64.00 One of our favourite Chardonnays in the cellar. This has been fermented in barrel using only wild, natural yeasts. A rich and full wine with tropical notes, buttered toast and vegetal/leafy tones. If you like rich whites, this is a dream ! Puligny-Montrachet, Domaine Pierre Bourée, Burgundy, France, 2013 19.50 38.00 110.00 A Chardonnay lovers’ dream. Classic white Burgundy with lemon, tropical notes and buttered popcorn flavours. Red 125ml 250ml Bottle Pinot Noir, Tolpuddle, Coal River Valley, Tasmania, Australia, 2016 21.00 41.00 115.00 One of our very favourite Pinot Noirs from the Southern hemisphere. Juicy berries, good weight and a beautiful finish. A brilliant glass with duck and light game. Nuits-Saint Georges, Domaine Marchand Tawse, Burgundy, France, 2013 21.00 40.00 115.00 A delicious and classic Pinot Noir from one of its most renowned places. The nose is not shy and full of cherry and some vanilla. This fruit appears more concentrated on the palette with crunchy tannins and good acidity giving a lovely long finish. Château Haut-Marbuzet, Saint-Estèphe, Bordeaux, France, 2012 22.00 43.00 115.00 Rich and elegant Cabernet led Bordeaux. Ripe in fruit followed by cedar, leather and earthy tones. Spätburgunder ‘Crescentia’, Kloster Eberbach, Rheingau, Germany 14.75 28.50 78.00 A wonderful wine from Pinot Noir. Wild red berries, soft and dusty tannin and great length of finish. ‘The Gypsy’, Ken Forrester, Stellenbosch, South Africa, 2014 14.00 27.00 79.00 A belter of a wine from one of the best in South Africa. Classic Rhône blend showing round, deep fruit and long, spicy finish. Also, Ken is one of the nicest people in the wine game! Barbaresco, Bruno Rocca, Piedmonte, Italy, 2015 21.50 42.00 120.00 A classic, well made Nebbilolo. Soft fruit, silky and dusty tannins. Meaty and savoury nose with cherry jam & plum fruit and a great finish. ‘Gran Reserva’, Sierra Cantabria, Rioja, Spain, 2008 14.50 27.50 77.00 Classic, smokey and spicy Rioja with good ripe fruit showing.
