FEATURED American Wagyu Steakburgers with Blue Cheese & Red Onion (American Wagyu Beef) $8.50 per pack of 2 patties (1/3 lb. patties) Trim from Prime and beyond Prime American Wagyu Ribeye, NY Strip, and Sirloin. Ground 50/50 coarse & fine and blended with Wisconsin Blue Cheese and roasted Red Onion. 1/3 lb. patties. Pulled Pork (Berkshire - Mangalitsa) $9.50 per 1 lb. pack Local Berkshire – Mangalitsa pork seasoned with nothing but salt and pepper. Cold-smoked over a real wood fire of plum and apple for 8 hours. Then oven-roasted very low & very slow overnight. Ready in minutes and perfect for sandwiches, tacos, nachos, pork cheese steaks and more. Braunschweiger (aka “Billschweiger”) (Local Acorn & Walnut-finished Idaho Pasture Pig) $12 per lb. (pieces about .5 - .75 lb. each) A rich traditional braunschweiger made with local acorn-finished Idaho Pasture Pig liver & heart, our dry-cured bacon, and a little American Wagyu beef. Seasoned with sage, black pepper, fresh onions, Kros Strain Lager beer & warming spices. All the livers and hearts from Farmer Bill up the road, hence the nickname “Billschweiger”. Beef Belly (aka Short Plate or Navel) (Piedmontese – Angus cross) $5 per lb. (half bellies about 5 lbs. each) This rich cut is perfect for curing as your own beef bacon or fatty pastrami. Wonderful smoked as a fattier brisket flat as well (it is actually the extension of the “flat” muscle). Can be slowly braised, roasted or “sous vided” before hard searing for beef belly burnt ends. BACONS Limit 3 lbs. sliced bacon per customer. If pre-ordering Wed. night, only 1 lb. can be reserved, but you may add up to 2 more lbs. when you pick up if available. Garlic Bacon (Duroc) LIMITED $10 per 1 lb. pack (sliced) Same as our traditional dry-cured bacon but smothered in garlic powder. Smoked over real wood fire of oak, pecan and cherry. Excellent for BLTs, pasta, salads etc. Country Bacon (Duroc) LIMITED $9.50 per lb. (sliced) Thick sliced dry-cured bacon smoked over maple. Only 10 grams of sugar per lb. English Bacon (Berkshire and Berkshire - Mangalitsa) $11 per 1 lb. pack (sliced) Traditional UK-style of back bacon dry-cured and smoked over real wood fire of maple and pecan. Pork is cut from the loin and top of the ribs instead of the belly. Smoked over plum and apple. Sirloin Bacon (Berkshire and Berkshire - Mangalitsa) $11 per 1 lb. pack (sliced) Dry-cured sirloin smoked over plum and apple. Perfect ratio of fat and meat. Personal favorite. Irish-style Gammon Bacon LIMITED $11 per lb. A lean traditional bacon that used to be common around Dublin. It is a dry-cured bacon made from the back leg and smoked over real wood fire of plum and apple Bacon Ends (Duroc Pork) $7 per lb. (unsliced) Ends from bacon slabs after slicing. Perfect for cooking with pasta, chili, pizza, eggs, etc. Ground Bacon $7 per lb. Fry up as bacon bits for salad. Mix into meatballs, meatloaf or burgers. Make bacon onion jam. Hams Dry-Cured Hams (Berkshire & Berkshire - Mangalitsa) $9 per lb (about 2-3 lbs. each) Local Berkshire & Berkshire – Mangalitsa pork dry-cured for weeks then cold-smoked over plum and apple. Ready to eat. Ham Salad $5 per đ lb. container and $9 per 1 lb. Classic ham salad but made with really good ham. Namely, our dry-cured Berkshire and Berkshire Mangalitsa pork smoked over a real wood fire. Mixed with fresh ground pickle onion relish, mayo and our house-made 5-spice. Deviled Ham Salad $5 per đ lb. container or $9 per 1 lb. container Kicked up version of our regular ham salad (above) seasoned with horseradish, roasted red bell peppers, garlic chili sauce and Dijon. Spicy, but not too spicy. Ham Hocks & Shanks (skinless) $5 per lb. Heritage breed hocks and shanks dry-cured and smoked over real wood fire. Sausages Palermo-Style Italian Sausage (Berkshire-Mangalitsa Pork & American Wagyu Beef) $10.95 per lb. (coils about 1.25 - 1.5 lb. each) A traditional course-ground Sicilian sausage from Palermo. Features fennel like most Sicilian sausage, but has much more depth & flavor from sundried tomatoes, pecorino Romano cheese and fresh greens (arugula in this batch). Garlic Grillers (Berkshire - Mangalitsa) $10 per lb. (4 links per pack, about 1 lbs.) A brat-style sausage loaded with white-wine-roasted garlic. Seasoned with marjoram, white pepper and white wine. German Coburg Brat (Berkshire pork & American Wagyu beef) $10 per lb. (4 links per pack, about 1 lb.) There are more than 40 traditional bratwurst styles in Germany. This distinct one is 500 years old and hails from Coburg in Northern Bavaria. Features 15% Wagyu beef along with the Berkshire pork. Seasonings include lemon zest, nutmeg, mace, and white pepper. To be truly authentic, you can even grill them over pine cones (not a joke). “Grauewurst’’ (Berkshire Pork) $10 per lb. (4 links per pack, about 1 lb.) We love the lemon & warming spices in traditional Coburg bratwurst and weisswurst, so we mashed up those 2 styles and added some smoke. All-pork fine-ground sausage with cream, eggs, seasoned with lemon zest, ginger, spices. Poached and then cold-smoked over plum and maple. Fully cooked and grills up quick like a hot dog. Mexican Chorizo (Duroc & Berkshire – Mangalitsa pork) $7.50 per lb. (bulk 1 lb. packs) Flavorful and savory sausage with nice heat from toasted chilies. Perfect for tacos, eggs and more. Breakfast Sausage with sage & bacon (Duroc & Berkshire - Mangalitsa) $7 per lb. (bulk 1 lb. packs) Great pork with salt, sage, pepper, a few herbs and a little smokiness from our dry-cured bacon ends. Good and simple and NO SUGAR. Also makes a great burger. Sicilian-style Italian Sausage (Links for Grill) (Duroc Pork, Berkshire – Mangalitsa & American Wagyu Beef) $9 per lb. (4 links per pack, about 1.25 lb.) Classic Sicilian- style sausage made with local heritage breed pork, local American Wagyu beef, roasted garlic, fennel and red wine. Very close to our bulk Italian sausage, but a touch of sugar, a little more beef, red wine instead of white, and a few more pepper flakes but not enough to make it spicy. Sicilian-style Italian Sausage (Duroc Pork, Berkshire – Mangalitsa & American Wagyu Beef) $7 per lb. (bulk 1 lb. packs) Classic Sicilian-style sausage made with local heritage breed pork, roasted garlic, fennel and white wine. Pork Roll (Duroc Pork) $10 per lb. comes in 5-in diameter pieces about 1 lb. each Unique American sausage from New Jersey is a cross between summer sausage and Spam. Fully cooked and smoked, but intended to be sliced and fried as a breakfast meat or grilled for a fantastic sandwich with cheese and mayo on a roll. Search internet for “pork roll” or “Taylor pork roll” for history and recipe ideas. Rectangular Alternative Breakfast Meats Scrapple (Berkshire - Mangalitsa & Duroc) $8 per lb. Traditional Pennsylvania Dutch-style scrapple. A savory thick pate of heritage breed pork head, corn meal, pork broth, black pepper and sage. Slice it, fry it up and enjoy with maple syrup, honey or eggs. Goetta (American Wagyu beef & Berkshire – Mangalitsa pork) $8 per lb. A traditional scrapple-style “sausage” still popular in Cincinatti, OH and northern KY. Meat and broth cooked with steel cut oats. Ours uses American Wagyu beef, Berkshire – Mangalitsa pork and organic oats. Seasoned with sage, allspice and more. Slice and fry for breakfast or dinner. Very similar to Knipp that is found in southeastern NE & parts of northern KS. Fresh Heritage Pork Think of heritage breed pork as heirloom vegetables with hooves.
